SHRIMP MOLD (NEW ORLEANS STYLE)

My Grandmother's recipe - the best I have had. This is not spicy. ONE NOTE: I never have luck removing things from molds so I always use a decorative serving mold, never messy. Serve with gourmet crackers. You should use seasoned boiled shrimp to add to the flavor. Watch it dissapear! Yummy!

Number Of Ingredients 11

1 1/2 cups chopped cooked shrimp (seasoned boiled shrimp, save some liquid)
3/4 cup chopped green onion
3/4 cup chopped celery
1 can tomato soup
8 ounces softened cream cheese
2 tablespoons knox gelatin
1/3 cup shrimp, liquid
1 cup mayonnaise
4 dashes Tabasco sauce
2 dashes Worcestershire sauce
salt

Steps:

  • Bring soup to boil.
  • Dissolve gelatin in shrimp liquid.
  • Add soup to cream cheese and blend until smooth.
  • Add gelatin to soup- mix and add vegetables and mayonnaise.
  • Add seasonings and salt to taste.
  • Pour in greased mold.
  • Cover with Saran Wrap and chill at least 4 hours before serving.
  • (Preferably overnight).

1-3/4 cups boiling water
2 cups (6 oz. each) JELL-O Lime Flavor Gelatin
3/4 cup cold water
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 can (8 oz.) crushed pineapple in juice, drained
1/4 cup chopped pretzels

Steps:

  • Add boiling water to gelatin mixes in medium bowl; stir 3 min. until completely dissolved. Stir in cold water. Gradually whisk in cream cheese until well blended.
  • Refrigerate 30 min. or until slightly thickened. Stir in pineapple and pretzels. Pour into Brain Mold sprayed with cooking spray. Refrigerate 4 hours or until firm.
  • Unmold gelatin onto plate just before serving.

1 (10.75 ounce) can condensed tomato soup
2 (.25 ounce) envelopes unflavored gelatin
½ cup cold water
6 ounces cream cheese, softened
1 cup mayonnaise
1 pound cooked shrimp
1 cup minced celery
½ cup green onions, minced

Steps:

  • Heat soup in a small saucepan or in a microwave oven.
  • In a medium bowl, stir gelatin into cold water. Mix hot tomato soup into the gelatin liquid.
  • In a medium size mixing bowl, combine cream cheese and mayonnaise together. Mix soup mixture into the mayonnaise and cream cheese mixture. Mix well. Add shrimp, celery, and green onions.
  • Spoon the mixture into a 1 quart mold and refrigerate for at least 1 hour, but preferably overnight. Unmold onto a serving plate before serving.

Turn classic cocktail shrimp into a gruesome Halloween hors d'oeuvre that will terrify and delight party-goers. Arrange shrimp in a deep bowl, pour a gelatin-based cocktail sauce over the shrimp, and chill until set.

2 3/4 pounds large shrimp, peeled, deveined, and cooked
1 tablespoon powdered gelatin
1 teaspoon finely grated fresh horseradish
1 1/4 teaspoon coarse salt
1/2 cup freshly squeezed lemon juice
3/4 teaspoon Old Bay seasoning
1/4 teaspoon cayenne pepper
Prepared cocktail sauce, for serving

Steps:

  • Arrange shrimp in a 6 1/2- to 7-cup brain-shaped mold with tails facing upwards in vertical rows.
  • Fill a glass bowl with 1 2/3 cups cold water; sprinkle gelatin over water and let stand 5 minutes. In a small saucepan, cook gelatin mixture over medium-low heat, stirring constantly, until gelatin has dissolved. Whisk in lemon juice, horseradish, salt, Old Bay, and cayenne pepper until well combined.
  • Pour gelatin mixture over shrimp in mold. Cover with plastic wrap, pressing down on the surface. Fit a plate into mold and weight with cans. Refrigerate until set, about 5 hours. Invert mold onto a serving platter; serve with cocktail sauce.

CRAB /SHRIMP DIP OR MOLD

This is a recipe that my sister, Garnet has made for years. It is really good and tasty and can be easily changed from a spoonable dip to a molded salad. Cooking time is chilling time. I decided to add a note here to encourage others to try this wonderful recipe. I recently hosted a wedding shower for my future DIL. I added 2 envelopes of Knox gelatin dissolved in about 1/4 cup of water so that the consistency would be good on Crescent Rolls for sandwiches. It was the hit of the party. Everyone loved it.

8 ounces cream cheese, softened
8 ounces mayonnaise (Hellman's or Best Foods preferred)
1 (10 1/2 ounce) can condensed cream of mushroom soup, undiluted
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon msg
1/4 teaspoon onion powder
3 dashes Worcestershire sauce
1 cup chopped celery
2 green onions, chopped (scallion style)
3 (4 ounce) cans crab (or both) or 3 (4 ounce) cans shrimp, drained but saving the liquid in a separate container (or both)
4 (1/4 ounce) envelopes unflavored gelatin, with (optional)
4 tablespoons cold water, until softened, then microwave until a few seconds to dissolve (optional)

Steps:

  • Combine the first eight ingredients in a mixing bowl and blend well.
  • IF MOLDING mix the gelatin as instructed above and add to the bowl after microwaving.
  • Add 1/2 cup of the crab/shrimp liquid to the bowl and mix.
  • Mix in the celery and onions.
  • Add the crab/shrimp.
  • Refrigerate until well chilled or molded if necessary.
  • NOTE*** You can also make this recipe with imitation crab or shrimp but the flavor will not be as strong since you will not be able to add the canning liquid.

3 lbs shrimp, peeled, cooked, deveined
2 small roasted red peppers, julienned
1 green onion, sliced into 2-inch pieces, then julienned
2 1/2 cups chicken broth
1.5 (1 1/2 tablespoon) envelopes unflavored gelatin
1 teaspoon lemon zest
1/4 cup fresh lemon juice
1/2 cup tomato paste
3 minced garlic cloves
1 tablespoon honey
1 -2 teaspoon cajun seasoning
1 pinch salt

Steps:

  • Into a purchased jello brain mold, layer your shrimp in, tails facing the middle of the brain. It's best if you layer them into the brain mold with the tails facing the middle, according to each "hemisphere" of the brain. This will give you the most realistic look. Tuck the shrimps in close together.
  • Drop bits of roasted pepper and green onion in around the shrimp. These should look like veins and nerves when you're finished.
  • Repeat, alternating between shrimp and vegetables, until you fill your Jello brain mold.
  • Now make the gelatin. In a small saucepan, bring the chicken broth to a boil. Remove from heat and stir in the unflavored gelatin.
  • Stir in the lemon zest, juice, tomato paste, garlic, honey, Cajun seasoning, and a pinch of salt (the amount will depend on how much salt is in your Cajun seasoning-- mine's salty so I don't use much).
  • Pour this mixture over the shrimp in your brain mold, filling to the top. Discard any extra. With a rubber spatula, smooth the top of your shrimp and gelatin to create a smooth surface.
  • Refrigerate until firm, at least several hours.
  • To unmold, set your Jello brain mold in a bowl of hot water for a few seconds. Place a serving tray underneath, then flip your mold over. The brain should pop right out. This is one of the easiest gross Halloween foods to make in advance!

I used to make this whenever I had Tupperware or Interior Design parties. It was requested by the invited guests. They said if I didn't make, it they wouldn't come. This is an easy recipe to make and is great for showers, birthday's and graduations. It will go quickly, as it is so tasty.

1 pkg knox gelatin
3 Tbsp cold water
1- 4.5 oz can(s) shrimp, drained
1 can(s) cream of mushroom soup
1 - 8 oz. cream cheese, room temperature
1 c mayonnaise
1 c celery, finely chopped
1 bunch green onions, finely chopped

Steps:

  • 1. Stir gelatin in the cold water and heat over low heat until melted.
  • 2. Add soup and cream cheese to the pot with the gelatin, stirring until smooth.
  • 3. Remove pan from heat and add all other ingredients.
  • 4. Pour into decorative mold and refrigerate at least 8 hours or more. It's best made the day before serving. Unmold on lettuce leaves or a decorative plate and serve with crackers.

KENNY'S BRAIN SPREAD

This is a GREAT appetizer for your next Halloween Party! If you don't have a brain mold, you can substitute by lining a med. size round bowl with saran wrap and making your mold. Once the mold is set, you can take the round end of a knife or a pencil eraser and create your crevices and creases to make your brain, as in the picture I have posted. Takes a little more time, but works well. When done designing your brain, peel off the saran wrap, and plate to serve along with your crackers, chips etc.
