Creamy Parmesan and Spinach Shrimp image

Protein rich shrimp are pan seared then tossed with a creamy spinach sauce that's perfectly flavored with fresh garlic and rich parmesan. Then finish it off with a bed of pasta and steamed or roasted asparagus or broccoli to complete the meal.

1 1/4 lbs extra large shrimp (21/25), (peeled and deveined)
1 tsp dried basil
Salt and freshly ground black pepper
2 Tbsp butter, (divided)
1 Tbsp minced garlic ((3 cloves))
3/4 cup low-sodium chicken broth
1/2 cup heavy cream
2 tsp cornstarch mixed with 1 Tbsp chicken broth
3 oz baby spinach, (chopped (2 packed cups))
1/2 cup (1.5 oz) shredded parmesan cheese

Steps:

  • Sprinkle shrimp with basil, season lightly with salt and pepper and toss.
  • Melt 1 Tbsp butter in a 12-inch non-stick skillet over medium-high heat.
  • Add shrimp in a single layer and cook until bottom is pink, then flip and cook opposite side of shrimp until cooked through and pink, about 3 minutes total.
  • Transfer shrimp to a plate then melt remaining 1 Tbsp butter in same skillet over medium heat.
  • Add garlic and saute until just lightly golden brown, about 30 seconds then pour in chicken broth.
  • Add spinach and stir and cook until it starts to wilt, about 1 minute.
  • Stir in cream and cornstarch mixture and cook, stirring constantly, until mixture starts to simmer and thicken slightly, about 2 minutes.
  • Stir in parmesan cheese and cook until cheese has melted, season lightly with salt if needed.
  • Remove from heat and toss in shrimp. Serve over spaghetti or spaghetti squash if desired.

3 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
1 tablespoon fresh lemon juice

8 ounces dried radiatore
4 cups loosely packed baby spinach

Steps:

  • Heat 1/3 cup of the oil in a medium skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 3 minutes. Transfer to a large bowl and cool to room temperature. Stir in the lemon juice and season with 1/2 teaspoon salt and a few grinds of pepper.
  • Meanwhile, bring a large pot of salted water to a boil.

Add the shrimp, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until just cooked through, about 3 minutes. Transfer to a plate with a slotted spoon.   • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the garlic oil.

Steps:

  • Combine olive oil and garlic in a deep skillet or broad saucepan and turn heat to medium. Sprinkle cloves lightly with salt and pepper, and cook, turning occasionally, until they are tender and lightly browned all over, about 10 minutes; lower heat if they seem to be browning too quickly. Remove garlic with a slotted spoon.
  • Turn heat to low and add bread (in batches, if necessary); cook on each side until nicely browned, about 4 minutes total. Remove bread, add stock and raise heat to medium high.
  • When stock is nearly boiling, add shrimp and salt and pepper to taste. Cook until shrimp are pink, about 4 minutes. Place a piece of bread and some garlic cloves in each of 4 bowls; then ladle in a portion of soup and shrimp. Sprinkle with parsley and serve.

1 teaspoon garlic-infused olive oil
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon parsley
1/8 teaspoon chives
1/8 teaspoon tarragon
1 lb raw shrimp, peeled and deveined
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 teaspoon garlic-infused olive oil
1 large carrot, diced
1/2 teaspoon sage
1/2 teaspoon basil
1/2 teaspoon tarragon
1/4 cup sherry wine
3 cups chicken broth
1 (14 ounce) can coconut milk
1 tablespoon brown sugar
1 teaspoon salt
2 -3 cups Baby Spinach
4 green onion tops (chopped)

Steps:

  • Preheat oven to 400 degrees F. Peal, de-seed, and dice the butternut squash. In a large bowl (or the soup pot you intend to use later) toss the butternut cubes with the next 7 ingredients (through tarragon). Spread evenly on a baking sheet and bake for around 30 minutes or until cubes are tender but not toasted on the edges.
  • While the squash is baking, peal and devein your shrimp. Pat dry, and toss with salt, cayenne, and garlic-infused oil. (You can add a little Italian seasoning here if you like but it is not necessary.) Set aside.
  • When the squash is nearly done cooking, dice the carrots, and then begin to gently saute them in a large soup pot with some olive oil. Add the sage, basil, and tarragon. Do not burn the herbs. Add the now done squash and stir to combine. The squash should begin to break down.
  • Pour in the sherry to deglaze the bottom of the pan. Then add the broth and coconut milk. Stir to combine. Add the brown sugar and salt to taste, then simmer for about 10 minutes to meld the flavors.
  • While your soup is simmering, place your shrimp on the now empty sheet pan, and roast the shrimp for about 5 or 10 minutes, or until they turn pink. Do not over-cook the shrimp.
  • When the shrimp is done, Toss in the spinach and green onion at the last minute, and stir to wilt. (Don't add the shrimp to the pot. Add them to each person's bowl. That way leftovers can be heated up without overcooking the shrimp. You can heat the shrimp separately.).
  • NOTE: For AIP, leave off the pepper or substitute a little horseradish on the shrimp. For FODMAP, be aware that butternut is a warning food, and should be eaten sparingly. 1/4 cup of butternut is safe to eat, but as it is "thinned out" with broth and coconut milk in this recipe, you should be safe to eat a cup of soup without difficulty. I have not done the math, so you will have to judge for yourself.

1 pound Wild Caught Shrimp, shelled and deveined
1 Tablespoon Olive Oil
1/2 Cup Organic Onion, diced
6 Cloves Organic Garlic, minced
1 teaspoon dried Italian herbs
1 tablespoon fresh parsley, chopped
1/2 Cup Organic Chicken Broth (or white wine)
5 oz Jarred Sun Dried Tomatoes in oil, drained and roughly chopped
1 Roasted Red Pepper (from jar) cut in strips
1 3/4 cups Organic Heavy Cream
2/3 Cup Freshly Grated Parmesan Cheese
3 Cups Organic Baby Spinach, roughly chopped

Steps:

  • In a large skillet, over medium heat, melt the butter and add the shrimp. Let the shrimp cook for 2 minutes until they get a little golden color and then flip. Cook another 2 minutes. Transfer to a bowl and set aside.
  • Add the oil to the pan and add the onion. Let it cook for 2-3 minutes to soften. Season liberally with salt and pepper to help the onion sweat. Add the garlic and cook for 1 minute more. Add the Italian spices and parsley.
  • Turn up the heat and add the broth (or wine) scraping up any bits on the bottom of the pan. Allow the broth to reduce a little.
  • Add the sundried tomatoes and roasted red pepper. Cook for another minute or two while stirring. Reduce the heat.
  • Add the heavy cream and parmesan cheese. Stir to combine and let the cheese melt. Do not boil. Add the spinach, stir to combine and continue to simmer until the spinach wilts. Taste for seasoning and add salt and pepper if necessary.
  • Add the shrimp back into the pan
