Categories     dinner

Number Of Ingredients 15

2 Tablespoons butter
2 Tablespoons olive oil
8 oz shrimp (peels and tails removed (I used size medium which is 41-50 count/pound))
1 pound bay scallops
½ teaspoon Old Bay Seasoning ((or Cajun Seasoning))
1 pound angle hair pasta ((or favorite pasta))
2 cups milk
1 cup cream (40% fat (see note before making substitutions))
6 Tablespoons salted butter
½ teaspoon minced garlic
6 Tablespoons all-purpose flour
½ teaspoon sea salt
½ teaspoon black pepper (coarsely ground)
1 cup Parmesan cheese (grated (see note))
Mushrooms optional (see note)

Steps:

  • Put a large pot of water on to boil with two teaspoons of salt in it. When the water comes to a boil add the pasta and cook according to package directions.
  • Combine the milk and cream in a microwave safe container. Heat in the microwave for two minutes and 30 seconds
  • Meanwhile put 6 Tablespoons of butter and the ½ teaspoon of garlic into the large sauce pan over medium-high heat. Whisk occasionally until melted.
  • Turn the heat down to medium. Whisk in the flour, salt and pepper. Cook, whisking constantly for 30 seconds.
  • Pour in a few Tablespoons of the warm milk mixture and whisk until smooth. Continue to add a few Tablespoons of the warm milk at a time, whisking until smooth after each addition. After the sauce is thin add the rest of the milk mixture and whisk again to combine.
  • Add the cheese and whisk frequently until the cheese is melted and the sauce is slightly thickened. The sauce can be served at whatever thickness you like. The longer you cook it, the thicker it will be. Generally, I serve it when it is the consistency of slightly thin gravy.
  • Taste the sauce and add additional salt and pepper if desired.
  • Keep the sauce on low heat, whisking occasionally while you cook the seafood.
  • In a large skillet, heat 1 Tablespoon of olive oil and 1 Tablespoon of butter in a large skillet over medium- high heat. When it melts add the scallops and cook for 1-2 minutes until starting to color and then flip and do the same on the other side. If the scallops start to release a lot of water pour it off. Remove the scallops to a plate.
  • In the same skillet heat 1 Tablespoon of butter and 1 Tablespoon of the olive oil over medium-high heat. When it melts and sizzles add the shrimp. Cook shrimp for about 2 minutes on the first side.
  • Add the Old Bay or Cajun seasoning and flip the shrimp with a spatula to cook it about a minute on the 2nd side until cooked through. Remove shrimp to the plate with the scallops.
  • Drain the cooked pasta.
  • Plate the pasta in a large family style flat bowl or in individual pasta plates.
  • Pour the sauce over the pasta and scatter the cooked seafood on top.

SPICY SHRIMP AND SCALLOP ALFREDO

Spicy Shrimp and Scallop Alfredo image

This just came to me when trying to figure out what to do with 1 lb of large shrimp and about 10 large scallops! I used what I had in the fridge, and if I had some fresh mushrooms I would've added them also that is why they are optional in the ingredient list. The picture I took is actually from the day I created the dish

GARLIC SEAFOOD ALFREDO PASTA

Garlic Seafood Alfredo Pasta image

This pasta dish is WONDERFUL!.... Kind of a cross between a seafood scampi and a creamy Alfredo sauce, which are two of my favorites! Easy to make and your family and friends will love it!

Provided by AZ Food Critic

Categories     < 60 Mins

Time 35m

Yield 8 cups, 4 serving(s)

Number Of Ingredients 16

1/2 cup butter (1 stick)
4 garlic cloves, finely minced
3 tablespoons all-purpose flour
1 1/2 cups milk
4 ounces cream cheese, softened, cubed
1 cup parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon dried parsley
1 lb linguine (or use your favorite pasta)
2 tablespoons butter
1/2 lb shrimp, peeled, deveined and tails removed
1/2 lb sea scallops
1/2 teaspoon salt
1/2 cup broccoli floret
1/2 lb crabmeat, cooked

Steps:

  • In a medium size skillet, melt the butter over medium heat. Add the garlic and cook until aromatic, (about 2 minutes), stirring constantly, and taking care not to let the garlic burn.
  • Sprinkle in the flour and whisk for about 1 to 2 minutes, just to get the flour a little heat and mix with the butter and garlic. Slowly whisk in the milk and cream cheese, whisking until the mixture is smooth. It will look curdled at first, but continue whisking for 2-3 minutes, it will come together to form a smooth, creamy sauce. Stir in the Parmesan cheese, salt, pepper and parsley. Stir until the cheese is melted and the sauce is the desired consistency. (Cook for 2-3 minutes for a thicker sauce or remove right after the cheese is melted for a thinner sauce). Set aside and keep warm.
  • In a large size Dutch oven or large size sauce pan, over high heat, bring 6 to 8 cups of water to a boil, add a dash of salt and about a tablespoon of oil to the water. Once the water is a consistent rolling boil, add your pasta and reduce heat to medium. Boil pasta until al dente, (about 8 to 12 minutes), stirring occasionally to keep the pasta from sticking together.
  • In a medium size skillet, add 2 tablespoons butter over medium-high heat, add shrimp and scallops and salt, sauté until shrimp turn an orange color, now, quickly and gently fold in the broccoli and crabmeat.
  • Add the Alfredo sauce to the Al dente pasta, toss well to coat the pasta in sauce and then gently fold in the seafood mixture. Serve hot.
  • Makes 4 to 6 servings of pasta and sauce.
