1 ½ cups all-purpose flour
1 cup cornmeal
½ cup brown sugar
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
1 ¼ cups milk, or more as needed
1 cup canned pumpkin
2 eggs, beaten
2 tablespoons vegetable oil
1 teaspoon vanilla extract
2 tablespoons oil, divided, or as needed

Steps:

  • Whisk flour, cornmeal, brown sugar, baking powder, salt, cinnamon, and cloves together in a large bowl. Beat milk, pumpkin, eggs, 2 tablespoon vegetable oil, and vanilla extract together in another bowl. Add milk mixture to flour mixture and stir until batter is well-combined.
  • Heat about 1 tablespoon oil in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

1 cup all-purpose flour
1 cup yellow cornmeal
1 cup confectioners' sugar, plus extra sugar for topping
1/2 teaspoon dried ground ginger
1/2 teaspoon cinnamon
2 eggs, lightly beaten
1 cup mashed pumpkin (canned pumpkin may be used)
3 cups milk
Butter for frying

Steps:

  • Combine flour, cornmeal, 1 cup of the confectioners' sugar, ginger and cinnamon in a large mixing bowl.
  • Combine eggs and pumpkin, and beat into the flour mixture. Add milk slowly to make a smooth batter.
  • Heat butter in a frying pan or crepe pan about 8 inches in diameter. Pour about 1/2 cup of the batter in the pan, and swirl around to make a thick pancake. Cook on both sides until nicely browned. Serve hot, heavily dusted with confectioners' sugar.

2/3 cup cornmeal
2 tablespoons sugar
4 teaspoons baking powder

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In another bowl, whisk the eggs, milk and oil; stir into dry ingredients just until moistened.
  • Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown. Serve with syrup. Yield: 4 servings.

1 sugar pumpkin
Melted butter, for brushing
Brown sugar, for sprinkling
2 1/2 cups unbleached flour
1/2 cup oatmeal
1/4 cup brown sugar
2 tablespoons baking powder
1 1/2 teaspoons baking soda
Pinch salt
4 eggs, lightly beaten
2 1/2 cups buttermilk
1/2 cup roasted pumpkin puree (may use canned pumpkin)
2 tablespoons canola oil
1 tablespoon vanilla extract
Optional (1/2 teaspoon ground cinnamon, ginger or allspice- any or all)
Butter for griddle, plus more for serving
Warm maple syrup, for serving

Steps:

  • For the Roasted Pumpkin Oatmeal Pancakes:
  • Preheat oven to 400 degrees F.
  • Cut the sugar pumpkin in half and scoop out the seeds and membrane with a spoon. Brush with melted butter and sprinkle with brown sugar and put on a baking sheet, cut side up. Cover with foil to keep moist and put in the oven until the pumpkin is tender, about 45 minutes. After the pumpkin has cooled scoop the flesh into the bowl of a food processor and process until smooth.
  • In a medium mixing bowl, whisk together all of the dry ingredients. Add all of the wet ingredients and mix gently with a rubber spatula just until the mixture is incorporated. There may still be a few small lumps. Do not over mix or the pancakes will be tough. Cook on a lightly buttered griddle or electric skillet at 375 degrees F until the pancakes form bubbles and the edges look dry. Flip the pancakes and cook for 1 or 2 more minutes. Transfer to a serving platter and keep warm. Repeat with remaining batter. Serve with warm pure maple syrup and butter.

1/2 lb unsalted butter, at room temperature
1 cup granulated sugar
1 tablespoon finely grated orange zest
1 large egg
2 large eggs, separated
8 -12 ounces canned solid-pack pumpkin (or fresh pumpkin)
1 teaspoon vanilla
6 3/4 ounces all-purpose flour (1 1/2 cups)
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup fine-ground cornmeal (not coarse, 3 1/4 oz)
sifted powdered sugar, garnish
1/2 cup fresh orange juice
1/2 cup granulated sugar
yogurt or vanilla ice cream, for serving

Steps:

  • Position oven rack in middle of oven, preheat to 350 degrees.
  • Butter a 9-inch bundt pan.
  • With a mixer and paddle attachment, beat butter, zest and sugar until light and fluffy- about 3 minutes.
  • One at a time, add egg and egg yolks, beating well and scraping sides of bowl after each addition.
  • Beat in pumpkin and vanilla.
  • Sift together flour, baking powder and salt, stir in cornmeal.
  • Add dry mixture to pumpkin batter in 3 staqges, stirring gently but thoroughly with rubber spatula after each addition.
  • Do not overwork batter.
  • In a clean bowl, whip egg whites to soft peaks.
  • Gently fold whites into batter with spatula until there are no longer any white streaks.
  • Scrape batter into pan, smooth surface.
  • Bake until top is springy when lightly touched, the sides should be pulling away from the pan and a wooden skewer inserted in the center of the cake comes out clean- about 40-50 minutes.
  • Let cool for 20 minutes and then invert cake onto a rack to cool completely.
  • Dust with powdered sugar if you like.
  • For Orange Syrup: In a small saucepan over low heat, combine orange juice and sugar, stirring until sugar has dissolved.
  • Boil without stirring for 2 minutes.
  • Serve each slice with a drizzle of warm syrup accompanied by yougurt or vanilla ice cream.
