4 ounces butter
4 ounces sugar
1 egg
1 tablespoon grated fresh lemon rind
8 ounces flour
1 teaspoon baking powder
raspberry jam

Steps:

  • Cream the butter and sugar, add the egg and rind and then beat well.
  • Add the sifted flour and baking powder.
  • Knead, roll out and cut into rounds.
  • Make a small hole[just under 1 cm diameter] in the centre of every second biscuit.
  • Bake 15-20 minutes at 350 deg F.
  • When cold, put the biscuits together with raspberry jam.

200g castor sugar

2 eggs

Steps:

  • rub the butter into the flour.
  • then mix in all other dry ingredients.
  • gradually beat in the egg.
  • roll out until 1/2 cm thick and then cut to your preferred shape.
  • put on a greased tray to bake in a pre heated oven at gas mark 5/180 degrees until golden brown.
  • place on a cooling rack to cool down.
  • if you want to decorate it.

115 g butter
140 g caster sugar
2 egg yolks
225 g plain flour
1 zest of a lemon

Steps:

  • Preheat the oven to 180 C/350 F/160 FAN/Gas 4 and Line 2 baking trays with baking parchment.
  • In a large bowl, cream together the butter and sugar until well combined, pale and soft.
  • Beat in the egg yolks thoroughly, one at a time.
  • Add the flour and lemon zest to the bowl and stir to combine the mixture.
  • Use your hands to bring the mixture together into a ball in the bowl.
  • Sprinkle a little flour on a work surface and knead the dough briefly.
  • Roll out the dough to half a centimetre or a quarter of an inch thick.
  • Use a cutter around 7.5 centimetres or 3 inch to cut 16 shapes
  • Bake the biscuits for 15 minutes until golden.
  • Leave the biscuits to cool on the trays for a couple of minutes then transfer to a rack to cool.
