Steps:

  • Combine yogurt, tomato paste, onion, garlic, curry powder, ginger, salt, and pepper in the slow cooker. Add chicken breasts and mix with yogurt sauce.

Because it's so lean, it is especially great combined with a jammy intense flavoured sauce that is sweet and sour. Add a kick of chili if you want! 1 lb / 500g chicken breast ((skinless, boneless pieces))
2 cloves of garlic (, minced)
1/2 onion (, finely diced)
1 tbsp oil ((vegetable, canola, olive oil or grapeseed oil))
1/3 cup soy sauce ((ordinary soy sauce))
1/3 cup white vinegar ((or substitute with other vinegar except balsamic))
3 tbsp jam ((Note 1))
1 tbsp black peppercorns or 1/2 tbsp ground black pepper ((Note 2))
3/4 cups water
2 tsp cornstarch / cornflour
3 tsp water

Steps:

  • Slow Cooker: Place all the Shredded Chicken ingredients in the slow cooker and cook on low for 5 hours (or 2 1/2 hours on high).
  • Pressure Cooker: Place all the Shredded Chicken ingredients in the pressure cooker. Cook for 35 minutes on high.
  • Stove: Place all the Shredded Chicken ingredients in a saucepan large enough for the chicken to fit snugly in one layer. Add 1/2 cup extra water so the chicken is mostly, but not completely submerged. Cover and simmer for about 50 to 60 minutes, turning once or twice.
  • The chicken is ready when it can be easily shredded with two forks. Remove the chicken from the liquid and shred it while it is warm. Set aside and cover to keep warm.
  • Transfer the liquid from the slow cooker / pressure cooker to a saucepan and bring to simmer. (Note 3) Reduce to around1 1/4 cups - it should only take a few minutes.
  • Mix together the Sauce Thickening ingredients and add to the saucepan. Simmer until it it thickens to a syrup consistency.
  • Toss the chicken in the sauce and serve over rice. (Note 4)

2 teaspoons light soy sauce
2 teaspoons Shaoxing Wine
1 teaspoon cornstarch
2 tablespoons all-purpose chili garlic sauce
2 tablespoons black vinegar
1 tablespoon light soy sauce
1 tablespoon sugar
2 teaspoons cornstarch
1/4 teaspoon salt
1 and 1/2 tablespoons vegetable oil
1/2 teaspoon ginger (, minced)
2 (100 grams / 1 cup) bell pepper (, shredded)
1/2 (100 grams / 1 cup) carrot (, shredded)
1/2 (100 grams / 1 cup) bamboo shoots (, shredded)
Steamed white rice to serve with

Steps:

  • Slice chicken breast into long, thin strips, parallel to the grain. Prepare and cut vegetables.
  • Combine chicken, light soy sauce, and Shaoxing wine in a small bowl. Add cornstarch and mix well by hand, until the thin starchy paste coats the chicken evenly.
  • Combine all sauce ingredients in a small bowl and mix well.
  • Heat a wok (or a nonstick skillet) over medium high heat until hot. Add 1 tablespoon oil and swirl to cover the bottom. Add chicken and quickly spread it with a spatula. Allow to cook for 20 to 30 seconds without stirring. Stir and cook until the surface of the chicken just turns white, about 1 minute. Turn to lowest heat and immediately transfer to a plate.
  • Add the remaining 1/2 teaspoon of oil and turn back to medium heat heat. Add ginger and give it a stir until fragrant. Add carrot. Stir and cook until half cooked, about 1 minute. Add bamboo shoots. Stir and cook for 1 minute. Add bell pepper and chicken. Stir the spicy sauce again and swirl it into the wok. Immediately mix everything well with a spatula, until all ingredients are covered with sauce. Remove from heat and transfer to a plate immediately.
  • Serve warm over steamed white rice.

3 pounds boneless skinless chicken breasts
1 1/2 cups low-sodium chicken broth
1 tablespoon extra-virgin olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 strips lemon peel, removed with a vegetable peeler, optional
1 bay leaf, optional
Kosher salt and freshly ground black pepper

Steps:

  • Lay the chicken breasts in an even layer in a 4- to 6-quart slow cooker. Add the broth, olive oil, garlic powder, onion powder, lemon peel and bay leaf if using. Season with 1 teaspoon salt and several grinds of pepper. Cook on high for 3 hours or low for 6 hours.
  • Transfer the cooked chicken to a large bowl. Use 2 forks to pull it into shreds. Strain the cooking broth and drizzle about 1/2 cup over the chicken. Season with salt and pepper and toss to combine. If not using the chicken immediately, refrigerate it in an airtight container. Refrigerate the remaining cooking broth separately and use it to moisten the chicken when serving. Or add it to soups and sauces.
  • Buffalo: Melt 2 tablespoons unsalted butter and whisk in 3 tablespoons Buffalo-style hot sauce. Drizzle over 2 cups shredded chicken and toss well.
  • Lemon Herb: Drizzle 2 cups shredded chicken with 1/4 cup of the cooking broth and 1 tablespoon lemon juice. Sprinkle with 1/4 cup chopped fresh parsley, 1 teaspoon lemon zest and 1 teaspoon dried dill. Season with salt and pepper and toss well.
  • Barbecue: Warm 1/4 cup of the cooking broth in a small saucepan and whisk in 1/4 cup barbecue sauce. Pour over 2 cups shredded chicken and toss well.

  • Put a large pot of water on to boil for cooking pasta.
  • Meanwhile, place chicken in a skillet or saucepan and add enough water to cover; bring to a boil. Cover, reduce heat to low and simmer gently until cooked through and no longer pink in the middle, 10 to 12 minutes. Transfer the chicken to a cutting board. When cool enough to handle, shred into bite-size strips.
  • Whisk peanut butter, soy sauce, garlic, chile-garlic sauce and ginger in a large bowl.
  • Cook pasta in the boiling water until not quite tender, about 1 minute less than specified in the package directions. Add vegetables and cook until the pasta and vegetables are just tender, 1 minute more. Drain, reserving 1 cup of the cooking liquid. Rinse the pasta and vegetables with cool water to refresh. 2 tablespoons shaoxing wine or 2 tablespoons dry sherry
2 teaspoons cornstarch
1 tablespoon fresh ground black pepper
2 tablespoons rice vinegar
2 tablespoons black vinegar
2 tablespoons dark soy sauce
1 tablespoon shaoxing wine
2 tablespoons sugar
2 teaspoons garlic and red chile paste
1/4 teaspoon sesame oil
1 head garlic, minced
2 tablespoons minced fresh ginger
1 bunch scallion, white and light green parts, minced
8 fresh water chestnuts, peeled and thinly sliced
1 piece black cloud ear mushrooms, soaked and drained (optional)
1 bunch scallion, dark green parts, thinly sliced
2 teaspoons cornstarch, dissolved into 2 tsp. water
3 tablespoons peanut oil (or canola oil)

Steps:

  • Marinate chicken with wine, cornstarch and black pepper while cutting vegetables. Mix together sauce ingredients: vinegars, soy sauce, wine, sugar, chili garlic paste and sesame oil. Set aside.
  • Slice water chestnuts into shreds, about three pieces per slice. Trim any woody parts from the fungus and discard. Roll up fungus into a cigar shape and thinly slice crosswise to make thin ribbon-like shreds.
  • Heat wok on high heat until it is about to start smoking, add oil and heat until it shimmers, then stir fry garlic, ginger and white part of scallion together for thirty seconds. Add drained chicken, and pat into a layer on the bottom of the wok. Allow chicken to brown lightly by sitting undisturbed on the wok for 45-60 seconds. Stir and fry until chicken is nearly done.
  • Add water chestnuts, fungus and sauce ingredients. Bring sauce to a boil. Add cornstarch and water, boil until thickened and glossy. Remove from heat and garnish with green scallion tops.

1/4 lb snow peas
2 tablespoons vegetable oil

1 tablespoon soy sauce
1 tablespoon rice vinegar or 1 tablespoon mild white wine vinegar

4 cups lettuce, shredded iceberg or 4 cups romaine lettuce

Steps:

  • Smoke the chicken (see related recipe) and cool to room temperature. When cool, shred the chicken coarsely into pieces about 1/4-inch wide and 2-inches long. If using thighs, discard the fat and cartilage as you go.
  • Meanwhile, heat a medium saucepan of salted water to a boil. Add the snow peas and cook until just bright green, about 15 seconds. Drain and rinse snow peas under cold water until completely cooled. Drain horoughly and cut them lengthwise into 1/4-inch strips.
  • To make the Peanut Sauce, heat the vegetable oil in a heavy medium skillet over medium heat.
  • Stir in the ginger, garlic, and red pepper flakes. Cook, shaking the pan gently, just until you can smell the garlic, but before it browns. (You'll smell the ginger first) Scrape the seasoned oil into the bowl of a food processor fitted with the metal blade. Add the peanut butter, 2 tablespoons water, soy sauce, vinegar, and sugar and process until you have a fairly smooth sauce. Check the seasoning and add more of any of the sauce ingredients you like. Scrape the sauce into a medium bowl.
  • Add the chicken and snow peas and toss together gently until all the ingredients are lightly covered with the sauce. The sauce should be thin and creamy enough to lightly coat the ingredients; if not add warm water one tablespoon at a time. Serve the salad on a bed of the shredded lettuce, either on individual plates or a large platter.
