5 strips bacon
1 medium yellow onion, sliced
2 cups fresh spinach
5 chicken breasts
2 teaspoons salt
1 teaspoon pepper
10 slices ham
12 slices swiss cheese
3 cups all-purpose flour
8 large eggs, beaten
3 cups panko breadcrumbs
fresh parsley, chopped, for sprinkling
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons flour
2 cups milk
¼ cup dijon mustard
salt, to taste
pepper, to taste
1 cup shredded parmesan cheese

Steps:

  • In a medium cast iron skillet or pan, cook the bacon until almost brown, about 5 minutes.
  • Add the onions and cook, stirring, until caramelized, about 10 minutes.
  • Add the spinach and cook until wilted, about 3 minutes. Remove the pan from the heat.
  • Place a chicken breast on a piece of plastic wrap. Cover with more plastic wrap and pound until thin. Repeat with remaining chicken breasts.
  • Lay out a large piece of plastic wrap and layer the chicken on the plastic so the edges are overlapping slightly.
  • Season with salt and pepper.
  • Layer the ham, Swiss cheese, and bacon-carmelized onion mixture over the chicken.
  • Roll the chicken into a log tightly wrap in plastic, twisting the ends to seal.
  • Refrigerate for 1 hour to set.
  • Add the flour, eggs, and panko to 3 separate baking sheets or other wide, shallow dishes. Roll the chicken in the flour, then in the egg, and finally in the panko. Coat once more in the egg, then panko.
  • Transfer the chicken roll to a greased baking sheet and bake at 375° (190 celsius) for 40 minutes, until golden brown.
  • Make the creamy Dijon sauce: in a small pot over medium heat, melt the butter. Add the garlic and cook until aromatic. Add the flour and cook until starting to brown. Whisk in the milk, then add the mustard and season with salt and pepper. Add the Parmesan and cook until the sauce is thickened.
  • Slice the chicken roll and serve with the sauce and fresh parsley.

2 tablespoons honey mustard
4 slices deli ham (about 4 ounces total), halved lengthwise
12 thin slices Swiss cheese (about 4 ounces total), halved lengthwise into 24 strips
1 package (10 ounces) frozen peas
1 tablespoon butter
3/4 cup couscous

Steps:

  • Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. Place cutlets on work surface, and season with salt and pepper.
  • Spread cutlets with mustard; layer with 1 slice of ham and 2 strips of cheese. Starting at a short end, roll up cutlets; place, seam side down, on prepared baking sheet. Top each cutlet with 1 piece of remaining cheese; broil until browned and chicken is opaque throughout, 6 to 10 minutes.

1 (8 ounce) package refrigerated crescent rolls
1 (3 ounce) package cream cheese with chives, softened
2 tablespoons butter
1 cup shredded cooked chicken
¾ cup sliced fresh mushrooms
½ teaspoon lemon pepper
2 tablespoons butter, melted
3 cups seasoned croutons, crushed
⅓ cup drippings from a roast chicken
1 tablespoon minced onion
½ cup dry white wine
1 cup chicken stock
2 tablespoons cornstarch
3 tablespoons chicken stock
salt and ground black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Roll out and separate the crescent roll dough on a large baking sheet.
  • Mix together the cream cheese and butter in a bowl until well blended. Stir in the shredded chicken, mushrooms, and lemon pepper. Fill the crescent rolls with a tablespoonful of the chicken mixture. Roll each piece up beginning with the wide end; press and seal the top of the rolled dough. Brush the rolls with butter, then roll them in the crushed croutons. Return the coated rolls back to the baking sheet.
  • Bake in the preheated oven until golden brown, about 20 minutes.
  • Heat the drippings in a large skillet over medium-high heat. Stir in the onion and wine; cook and stir until most of the wine has evaporated, about 5 minutes. Pour in 1 cup of chicken stock and continue to cook and stir until the sauce has reduced by half, about 15 minutes. Reduce heat to low. Mix the cornstarch and remaining 3 tablespoons of chicken stock in a small bowl. Stir the cornstarch mixture into the skillet until thickened, about 5 minutes. Season with salt and pepper.
  • Spoon the hot gravy over the chicken rolls before serving.

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, stir together soup, milk and ½ cup of cheese. Pour into the bottom of an 8-inch square baking dish. Set aside.
  • In a separate bowl, combine chicken and remaining ½ cup of cheese.
  • Unroll crescent roll dough and separate into 8 triangles. Place about 1-2 heaping tablespoons of the chicken mixture on the wide end of each crescent roll. Roll the dough up and place each crescent roll (seam-side down) in the bottom of the dish.

1 cup fresh white breadcrumbs

1 1/2 teaspoons dried thyme, crumbled
4 ounces Muenster cheese, cut into 1/2x4-inch-long sticks

Steps:

  • Preheat oven to 400°F. Lightly grease small baking sheet.
  • Place chicken breasts between sheets of waxed paper and pound to 1/4-inch thickness, using mallet or rolling pin. Season chicken with salt and pepper. Combine crumbs, Romano cheese, paprika and thyme in shallow dish. Place 1 cheese stick at short end of each chicken breast. Roll up chicken, enclosing cheese. 2 lbs boneless skinless chicken breasts (8 4-ounce pieces)
1 cup whole wheat Italian style breadcrumbs
6 tablespoons grated parmesan cheese, divided
5 ounces fresh Baby Spinach
1 minced garlic clove
olive oil, for sauteeing

Steps:

  • Prep the chicken: Cut the chicken into 8 pieces and pound the pieces until they are thin (for quick cooking) and have expanded in surface area (for more filling). Place the breadcrumbs in a shallow bowl with 2 tablespoons of Parmesan cheese and set aside.
  • Prep the filling: Chop the spinach and saute it with the garlic and just a drizzle of olive oil for 2-3 minutes or until just barely wilted. Combine the sauteed spinach with the ricotta, Parmesan cheese, and 2-3 tablespoons of the egg whites. Place the remaining egg whites in a separate shallow bowl and set aside.
  • Assemble the chicken: Oil the bottom of a large baking dish and preheat the oven to 450 degrees. Place one piece of chicken on a flat working surface. Put a spoonful of ricotta-spinach filling right in the middle and roll the chicken up so that the edges meet to form a "seam". Dip the entire chicken roll in egg whites, and then roll it in the breadcrumbs. Place in a baking dish, seam side down. Repeat for the remaining 7 pieces of chicken. Bake for 25 minutes.
  • Finishing touches: After 25 minutes, the chicken should be cooked through (white on the inside) and browned on the top. Cover the chicken with the marinara sauce and slices of fresh Mozzarella. Bake for another 3-5 minutes or until cheese is melting. Sprinkle with fresh basil.
