This is from one of our favorite Japanese restaurants. It's different but is the perfect combination with a Japanese style meal when the flavors all meld together. We serve with recipe #234170 and it all blends perfectly on the plate.

1/2 cup mayonnaise
1 teaspoon soy sauce
2 tablespoons red wine vinegar
white pepper (to taste)

Steps:

  • Using a whisk blend all ingredients. Better if made ahead of time.
  • Serve on crisp greens like a combination of iceberg and butter lettuces along with julienned carrots.

This fabulous dipping sauce is known by many names. Hibachi Mustard Sauce, cream sauce, or magic mustard sauce as it is known to many fans of Benihana's Japanese steakhouse restaurants!

1/3 cup sesame seeds ((toasted, ground))
2 cups soy sauce
1 tsp ground mustard ((dissolved in 1 tsp water))
1 pinch garlic powder
1 cup heavy cream

Steps:

  • Toast your sesame seeds in a dry skillet or frying pan over medium high heat until golden and fragrant. Remove from heat.
  • Combine toasted sesame seeds, soy sauce, ground mustard ( mixed with 1 tsp water ) and garlic powder in a blender or food processor bowl. Combine until smooth, about 15 - 30 seconds.
  • In a small saucepan, bring the heavy cream to low heat and add the blended sesame seed, soy, and mustard mixture. Continue to cook for about 2 - 3 minutes, or until completely heated through, stirring occasionally.
  • Remove from heat and serve warm.

1 tablespoon ketchup
1 tablespoon melted butter
1 tablespoon mirin
2 teaspoons rice vinegar
1/4 teaspoon paprika

1 tablespoon granulated sugar
1-2 tablespoons water (, or until desired consistency is reached)
optional: a few splashes of hot sauce or cayenne pepper for a touch of heat
optional: a small pinch of smoked paprika for a hint of smokiness

Steps:

  • Thoroughly combine all the ingredients in a small bowl, cover and chill for at least 2 hours before serving. Preferably overnight for best flavor results.Store in an airtight jar in the fridge where it will keep for up to a week.Makes 1 1/4 cups

This sauce is found in many teppanyaki style Japanese steak houses in the U.S. I first had this type of cooking in Okinawa in the late 60's and fell in love with the sauce. I tried different versions of this mustard sauce, and after numerous attempts, came up with this version I like the best. This sauce goes well with grilled teppanyaki style meats and seafood.

This is a base recipe for classic Hibachi steakhouse mustard sauce. I like a little more kick than this recipe provides but this one seems to be in the wheelhouse for my family. Kick it, flip it, turn it around and make it yours.

3 Tbsp ground mustard
1 1/2 tsp white sugar
4 Tbsp milk
2 Tbsp heavy cream
2 Tbsp hot water (+/- depending on desired consistency)
1 Tbsp toasted sesame seeds
1/4 c soy sauce
1 clove garlic, minced

Steps:

  • 1. Place all ingredients into blender of food processor and process until smooth.
  • 2. NOTE: Experiment the ratios until you achieve the kick and consistency that you enjoy.

2 tablespoons dry English mustard
6 tablespoons cider vinegar
2 large egg yolks
1/3 cup sugar
1 teaspoon kosher salt
1 1/2 cups half-and-half

Steps:

  • In a small bowl, stir together the mustard and 2 tablespoons of the vinegar into a smooth paste. Cover with plastic wrap and set aside at room temperature to mellow the flavor of the mustard, for at least 6 hours or overnight.
  • In a medium saucepan, whisk together the yolks, sugar, and salt with the reserved mustard paste. Whisk in the half-and-half. Cook the sauce over medium heat, stirring constantly with a wooden spoon until thickened, about 10 minutes. Do not let the mixture boil at any time. Stir in the remaining 4 tablespoons vinegar and continue to cook for another 10 minutes, stirring, until thickened and creamy. Pour sauce into a bowl. Set the bowl of sauce in a bowl of ice water. Stir the sauce to cool. Serve. Store covered in the refrigerator for up to 2 days. Serve with baked ham, pork or on sandwiches.

CHICKEN IN MUSTARD SAUCE



Chicken in Mustard Sauce image

This healthy yet elegant weeknight chicken dish came to The Times in 1988, courtesy of Jacques Pépin. It's simple but loaded with flavor, and you can throw it together in about a half hour. Just sauté the chicken until golden, then make a quick sauce from onions, water and mustard and reduce until thick. Serve with rice to soak up the sauce, and a crisp green salad. If white meat is not your thing, it would be equally delicious made with boneless chicken thighs (just be sure to add a few minutes of cooking time).

8 5-ounce chicken breasts, skinless and boneless
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon vegetable oil
1 cup onion, finely chopped
2 tablespoons flour
2 cups water
1 1/2 teaspoons dry mustard
1 tablespoon Dijon mustard

Steps:

  • Sprinkle the meat with the salt and pepper.
  • Heat the oil in a large skillet over medium-high heat. When it is hot, brown the chicken for one-and-a-half minutes on each side.
  • Mix in the onion and continue cooking for one minute.
  • Sprinkle the flour on the chicken pieces, turning them so that all the pieces are coated. Cook one minute to lightly brown the flour.
  • Add the water and stir to dissolve the flour until the mixture comes to a boil. Lower the heat, cover the skillet and boil gently for five minutes.
  • Remove the meat to a serving platter and keep warm.
  • Cook the sauce to reduce it to about one-and-a-half cups. Mix the dry mustard with the Dijon mustard and stir until smooth. Stir the mustard mixture into the sauce and heat, but do not allow the sauce to boil after the mustard has been added.
  • Place the chicken pieces in the sauce and warm over low heat for 10 to 15 minutes to develop the flavor.
  • Serve the chicken with the sauce.
