Shish Taouk is a traditional Middle Eastern chicken shish kebab. The yogurt marinade includes garlic, paprika, fresh herbs, ginger and lemon juice. The common theme with Shish taouk is that it is made of chicken and the marinade includes lemon and yogurt. Sometimes tomato paste is added, mostly for color enhancement.

1.5 cups of plain yogurt
1 Tbs paprika
8-10 cloves of garlic, minced fine
2 sprigs of fresh oregano
1/2 tsp minced fresh ginger
juice of 2 lemons
2 Tbs olive oil
1/2 tsp salt
2 lb of boneless, skinless chicken thighs, cut into 1 inch chunks

Steps:

  • Place first 8 ingredients in a large bowl, stir.
  • Add chicken, cover and place in fridge to marinate for 3 hours or overnight.
  • Skewer chicken on large skewers. Line a rimmed baking sheet with aluminum foil and place racks on top. Place skewed chicken on racks.
  • Broil in oven about 4 inches under heating element, about 8 minutes, turn. Continue broiling for about 4 more minutes. Chicken should have some charring and cooked through. Alternatively you may grill these on a gas or charcoal grill.

2 pounds boneless skinless chicken breast (cut into large chunks)
½ cup plain whole milk yogurt
¼ cup lemon juice
¼ cup olive oil
6 garlic cloves (crushed)
1 tablespoon tomato paste
1 teaspoon paprika
¾ teaspoon cinnamon
½ teaspoon oregano
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon black pepper

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

¼ cup vegetable oil
¾ cup plain yogurt
4 cloves garlic, minced

¼ teaspoon ground cinnamon

2 pounds skinless, boneless chicken breast halves - cut into 2 inch pieces
2 onions, cut into large chunks
1 large green bell pepper, cut into large chunks
1 cup chopped fresh flat-leaf parsley

Steps:

  • Whisk together the lemon juice, vegetable oil, plain yogurt, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl; add the chicken and toss to coat. Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

½ cup fresh squeezed lemon juice (2 lemons)
3 cloves garlic, crushed
1/3 cup plain fat-free Greek yogurt
6 tablespoons olive oil
2 tablespoons apple cider vinegar
1 teaspoon ground pepper
¼ teaspoon ground ginger
½ teaspoon dried oregano
½ teaspoon paprika
1 teaspoon salt
1 teaspoon tomato paste

Steps:

  • Mix all ingredients together in a large zip-top bag. Rub and move around chicken to coat.
  • Place in a glass baking dish or bowl (in case of leakage) and refrigerate and marinate for at least 4 hours.
  • Meanwhile, soak wooden skewers in water, if using.
  • Skewer the chicken onto soaked skewers and place on a broiler pan. Broil on high for 15-18 minutes, turning once, or until chicken is browned and cooked through. (They would also be great on the grill!)
  • Serve with rice and salad or on a pita with garlic sauce.

3 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon baharat, spice
2 tablespoons tomato paste
1 cup Greek yogurt (plain)
1 teaspoon kosher salt
1/2 teaspoon black pepper
12 -15 bamboo skewers, soaked
2 garlic cloves, crushed
1/2 cup vegetable oil
3 tablespoons mayonnaise
1/2 lemon, juice of
salt & pepper, to taste

Steps:

  • Soak bamboo skewers, if using, for about an hour (soak extra and freeze any unused ones for later).
  • Stir together ingredients and allow chicken to marinate in it for at least an hour, preferably more.
  • Skewer chicken.
  • Cook skewers on the grill or under the broiler until cooked through (time will vary with size of chunks).
  • To make toum sauce, grind the garlic with the salt in a mortar until it is pasty.
  • Mix in the lemon and mayonnaise, and very slowly add oil, whisking as you go.
  • Add salt and pepper to taste.
  • Serve sauce with kabobs.

1 can (6 ounce size) tomato paste
1 cup yogurt

Steps:
