Essentially these are Anzac biscuits that we bake on Anzac Day but these cookies are requested constantly so have become a firm favourite in our household. They are so easy to make and keep well. Enjoy

Yield 15-36 cookies (dependent on the size of your spoonfuls)., 15-36 serving(s)

Number Of Ingredients 8

90 g rolled oats
150 g flour
65 g coconut
160 g raw sugar (use brown sugar for a chewy cookie)
125 g butter
2 tablespoons honey (use a strong flavoured honey or golden syrup)
2 tablespoons water
1 teaspoon bicarbonate of soda

Steps:

  • Preheat oven to 180°C.
  • Mix the oats, flour, coconut & sugar in a large mixing bowl.
  • In a saucepan over low heat met the butter, honey & water. When butter mixture is melted take of the heat.
  • Quickly mix in the bicarb to butter mixture. Be careful the mixture will froth up and expand.
  • Working quickly add the butter mix to the dry ingredients and mix well.
  • Place rounded spoons of the mix on baking trays allowing space for the cookies to expand.
  • Bake for 10-12 minutes. Transfer to racks to cool.
