GARLIC BUTTER BAKED SHRIMP (SHRIMP DE JONGHE)

Steps:
- Preheat oven to 375˚F.
- Butter a 9x13 baking dish.
- Arrange shrimp in the baking dish in a single layer. Set aside.
- In a mixing bowl combine softened butter, breadcrumbs, sherry, garlic, shallot, parsley, salt, pepper, paprika, and cayenne; mash and mix until thoroughly combined.
- Spoon breadcrumb mixture over the shrimp.
- Bake for 22 to 25 minutes, or until top is golden brown.
- Sprinkle with parsley.
- Serve.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Heat 1 tablespoon butter and vegetable oil large oven-safe skillet over medium heat. Add garlic; cook until fragrant, about 30 seconds. Add shrimp, 2 tablespoons parsley, and dill. Cook and stir, flipping shrimp halfway, until pink, 3 to 4 minutes. Move shrimp to a plate and set aside.
- Melt the remaining 2 tablespoons butter in the skillet, stirring into the shrimp juices. Add flour; whisk until fully combined and starting to turn golden, 30 seconds to 1 minute. Add chicken broth and milk in that order; whisk to combine. Stir in tomatoes, lemon juice, salt, and pepper. Bring sauce to a simmer.
- Stir 1/2 cup Parmesan cheese and Romano cheese into the sauce until cheeses begin to melt and sauce is creamy. Add 1 tablespoon mozzarella cheese. Mix in about 1/2 the cooked penne to start; add more if there is enough sauce to coat. Add the shrimp and stir to combine. Top with the remaining parsley, Parmesan, and mozzarella.
- Bake in the preheated oven and bake until top is golden and sauce bubbles around the edges of the skillet, 8 to 10 minutes.

- Preheat oven to 350°. Cook vermicelli according to package directions. , Meanwhile, in a large skillet, saute green pepper and onions in butter until tender. Add garlic; cook 1 minute longer. Gradually stir in flour until blended. Stir in shrimp, celery salt and pepper; cook, uncovered, over medium heat 5-6 minutes or until heated through., In a microwave-safe bowl, combine process cheese, tomatoes and mushrooms. Microwave, uncovered, on high 3-4 minutes or until cheese is melted, stirring occasionally. Add to shrimp mixture. Drain vermicelli; stir into skillet. Pour into a greased 13x9-in. baking dish. SHERRY'S AWESOMELY QUICK BAKED SHRIMP SCAMPI
I love shrimp scampi, but I wanted a quick way to make it last night. I figured instead of standing over the stove, I would just put all the ingredients into a baking dish and then serve it over pasta. Everyone was very happy!

- 1. Heat oven to 350. Cook pasta as directed and drain. Place in lg bowl, add a little olive oil, salt and pepper, if you wish.
- 2. In a 2-quart baking dish, add butter, broth or wine, lemon juice, garlic, parsley, salt and pepper. Place baking dish in oven until butter is melted. Make sure the tails are off the shrimp and if they're not deveined, do so.
- 3. Place shrimp in baking dish and spoon the butter mix over shrimp. Sprinkle bread crumbs evenly over shrimp to cover. Bake 15 mins to give shrimp time to fully cook. Serve over pasta. And of course, spoon all the extra "juice" from the baking dish over the shrimp and pasta. Sprinkle w/ chopped parsley. Goes great w/ some garlic bread to sop up any left over liquid!
SHERRY'S SHRIMP PASTA BAKE
Steps:
- Cook pasta as directed, drain, keep warm. In lg skillet, saute the green pepper, onion and garlic in butter until tender. Gradually stir in flour until blended. Stir in the shrimp, celery salt and pepper. Cook uncovered, over med heat for 6 min or until heated through.
- In microwave-safe bowl, combine the Velveeta Cheese, tomatoes and mushrooms. Microwave, uncovered on high for 4 min or until cheese is melted, stirring occasionally. Add to shrimp mix, stir vermicelli into skillet.
- Spray a 13-inch x 9- inch x 2-inch baking dish with cooking spray. Pour skillet contents into baking dish, sprinkle with parmesan cheese.
- Bake, uncovered at 350°F for 30 min or until heated through.

SEAFOOD PASTA WITH SHERRY TOMATO CREAM SAUCE

- In a large saucepan boil water for the pasta. When water begins to boil add salt liberally, let water return to a boil and cook pasta to al dente. Drain.
- Heat a large skillet over medium heat with olive oil, 3 turns of the pan. Add mushrooms, shallots and garlic, red pepper flakes and saute 5 minutes. Deglaze the pan with sherry, stir in stock and tomatoes and bring to a bubble. If using raw seafood, season with lemon zest, salt, and pepper. Raise the heat a bit then add the seasoned seafood and heat through or cook until just about firm and opaque, a couple of minutes. If using cooked seafood, season the seafood when you add it to skillet with lemon zest, salt and pepper.
- Stir in heavy cream and toss hot pasta with sauce and chives and/or parsley, adjust seasoning and serve.

- Preheat oven as directed for garlic bread. In large pot of boiling water, cook spaghetti.
- In pot over medium heat, cook oil, add garlic, cook, stirring 4 min or until golden. Stir sauce, herbs and red pepper in pot, bring to boil. Reduce heat to medium, add shrimp, cook until shrimp is pink.
- Meanwhile, bake garlic bread. Drain pasta. Toss spaghetti with shrimp mix. Serve with garlic bread.

SHERRY'S SCRUMPTIOUS SHRIMP SAUCE FOR PASTA
Where I live everyone has their own version of a local favorite " shrimp sauce." Served over angel hair pasta it can be a very elegant dinner. I have several variations to this basic recipe. You can use crawfish tails instead of shrimp. Also you can use a nice white wine instead of evaporated milk. Sometimes I add mushrooms...you get the idea!

- In a skillet on medium -high heat melt the butter. Add the green onion tops and bottoms chopped nicely and the minced garlic. Saute' for about 2 minutes.
- Add the shrimp that have been cleaned, deveined, and drained. Season with the salt, pepper, basil,parsley, garlic powder, and cayenne pepper. Cover and continue sauteeing on medium heat for 3 or 4 minutes.The shrimp will release a good amount of water. This is good.
- Remove the lid and reduce the heat to medium. Add the cream cheese in cubes. Add the cream of shrimp soup, grated parmesan and evaporated milk. Stir constantly with a wooden spoon until it appears nice and creamy. If it begins to stick you need to reduce the heat a little.
- Cover and continue to cook on medium for about 10 minutes. Reduce heat to low and serve. Serve over angel hair pasta.
