4 medium bananas
1/4 cup packed brown sugar
1/2 cup fresh-squeezed orange juice
1/4 teaspoon nutmeg, freshly grated
1/2 teaspoon cinnamon
1/2 cup sherry wine
1 tablespoon butter
2 tablespoons light rum (coconut rum would probably be good here, too)

Steps:

  • Preheat oven to 450 degrees F.
  • Peel the bananas, split them in half lengthwise, then place them in a buttered baking dish (10"x6"x2").
  • Combine the sugar, orange juice, nutmeg, cinnamon and sherry in a saucepan. Heat until sugar is dissolved, then pour over the bananas. Dot with butter.
  • Bake bananas for 10 to 15 minutes, or until the bananas are tender. Baste them once or twice during baking.
  • Remove from oven. Sprinkle with the rum before serving.
  • Serve as-is, or with a scoop of vanilla or coconut ice cream.

1/4 cup dry sherry
1/4 cup dark brown sugar
3 tablespoons apricot jam (or preserves)
2 tablespoons butter, melted and cooled
2 tablespoons strained fresh lemon juice
4 large ripe bananas, peeled and cut lengthwise into halves

Steps:

  • Preheat oven to 350. Mix everything except bananas. Put bananas cut side down, single layer, in a pan only large enough to hold them snugly like that. Pour sherry mixture over them evenly. Bake for 30 or until completely tender. Serve at once, from baking dish.

3 tablespoons butter, cut into small pieces
1/2 cup firmly packed brown sugar
1 tablespoon lemon juice
2 medium bananas, firm and ripe
2 cinnamon sticks
rind of one lime, cut into thin strips
1/3 cup sweetened flaked coconut

Steps:

  • In a shallow microwavable glass baking dish or pie plate, mix butter, brown sugar and lemon juice. Microwave, uncovered, on HIGH for 1 minute. Stir well.
  • Peel bananas and cut them in half crosswise. Slice each lengthwise. Arrange 8 pieces in a single layer in the sugar mixture, turning them over once to coat. Put cinnamon sticks and lime peel around the banana pieces.'.
  • Microwave on HIGH, uncovered for 2 minutes. Baste the bananas with the sauce. Microwave on HIGH for 1 or 2 more minutes, or until the bananas are soft.
  • Let stand for 3 minutes.
  • Garnish with coconut and serve warm with the sauce.

The filling is a matter of choice and experimentation some other good ones are: Rum and Rolos (a shot of rum and 4 or 5 Rolos in each, adults only) Peanut Butter (2tbs Peanut butter)

5 bananas
1 tablespoon honey or 1 tablespoon maple syrup
1/2 teaspoon mixed spice

Steps:

  • Cut bananas in half lengthwise and place each on sheet of tinfoil large enough to cover it.
  • Put your filling in each banana and wrap tightly in the tinfoil.
  • Bake in hot oven, about 230 Celsius (450 Fahrenheit) for approximately 20 minutes, or (on inspection) skins have gone completely black.

1 jar (10 oz.) maraschino cherries
1-3/4 cups flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
2 eggs
1/3 cup butter or margarine, softened
2/3 cup packed light brown sugar
1 cup mashed fully ripe bananas (about 3)
2/3 cup chopped walnuts

Steps:

  • Heat oven to 350°F.
  • Drain maraschino cherries, reserving 2 Tbsp. juice. Cut cherries into quarters; set aside. Combine next 3 ingredients.
  • Mix eggs, butter, sugar and reserved cherry juice in medium bowl until blended. Add bananas; mix well. Add flour mixture; stir just until moistened. Stir in cherries and nuts.
  • Pour into 9-inch square baking pan sprayed with cooking spray.
  • Bake 1 hour or until toothpick inserted in center comes out clean. Cool in pan 5 min.; remove to wire rack. Cool completely.

The original version of this recipe is from Easy Home Cooking. I've listed vegan alternatives for those who want to make the bread without animal products.

1 (10 ounce) jar maraschino cherries
1 3/4 cups all-purpose flour
2 tablespoons baking powder
1/2 teaspoon salt
1/2 cup sucanat or 2/3 cup firmly packed brown sugar
1/3 cup butter or 1/3 cup margarine, softened
2 eggs or 1 mashed ripe banana
1 cup mashed ripe banana

Steps:

  • Drain maraschino cherries, reserving 2 Tablespoons juice.
  • Cut cherries into quarters.
  • Combine flour, baking powder, and salt; set aside.
  • Combine sugar, butter, eggs [or ONE mashed banana], and reserved cherry juice in large bowl. Beat with electric mixer at medium speed 3-4 minutes or until well mixed.
  • Alternate between adding flour mixture and mashed bananas, beginning and ending with the flour mixture. If the mixture seems a bit too dry, you might want to try adding some water at the end. I suggest adding it a teaspoon or so at a time.
  • Stir in drained cherries.
  • Grease a loaf pan and spread batter evenly in pan.
  • Bake in preheated 350 degree oven for 1 hour or until brown.
  • Remove from pan and let cool on wire rack. To store, wrap in plastic wrap or foil and keep in a cool, dry place.

Use up your bananas and transform them into our boozy baked caramelised dessert with the help of rum, maple syrup and pecans

6 ripe bananas, peeled and sliced in half lengthways
2 tbsp dark brown soft sugar
2 tbsp maple syrup
3-4 tbsp rum or whisky
40g pecans, toasted and chopped
vanilla or salted caramel ice cream, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
  • Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.
