ENGLISH SHERRY TRIFLE



English Sherry Trifle image

This layered dessert is best presented in a clear glass bowl. It looks very elegant but is so easy to prepare. (An adopted recipe. I have not prepared this particular version, myself, but I do love trifle.)

2 cups whipping cream (or more!)
1 -2 cup sherry wine (or more!)
2 cups fruit cocktail, drained
2 bananas, sliced
2 cups fresh strawberries or 2 cups frozen strawberries (pureed, leaving 6-8 whole for garnish)
1 sponge cake, cut into cubes (see recipe below or use store bought sponge or flan cake )
5 eggs, separated
1 tablespoon lemon juice
1 cup sugar
1 cup flour
2 tablespoons butter, melted
1 teaspoon salt

Steps:

  • Spoon approximately 1/3 of whipping cream into bottom of glass serving bowl.
  • Next, a layer of 1 cup fruit cocktail, a layer of banana, a layer of 1 cup puried strawberries, and finally half of the sponge cubes.
  • Pour 1 cup of Sherry over cake cubes.
  • Put 1/3 whipping cream on top, and repeat with alternate layers of fruit cocktail, banana, strawberry, and cubes with Sherry.
  • Top with remaining whipped cream, and whole berries for garnish.
  • Sponge Cake: beat egg yolks and lemon juice until pale, add 3/4 cup sugar and beat well.
  • In a separate bowl, beat egg whites, add salt, and 1/4 cup sugar beating until stiff.
  • Stir 1/4 of the whites into yolk mixture. Spoon the rest carefully into yolk.
  • Sift flour on top, fold in melted butter until blended.
  • Preheat oven to 350 degrees F.
  • Pour batter into tube pan, bake 45 minutes (or until toothpick comes out clean). Invert and cool.

This punch recipe easily scales down by half, or even all the way to festive drinks for two.

Spiced Syrup:
1 1/3 cups raw sugar
3 tablespoons allspice berries, cracked
2 tablespoons whole cloves
2 (3-inch) cinnamon sticks
Assembly:
1 (750 ml) bottle amontillado sherry (preferably Lustau)
1 (750 ml) bottle dry vermouth (preferably Dolin)
1 1/2 cups plus 1 tablespoon cranberry juice cocktail
1 1/2 cups plus 1 tablespoon fresh lemon juice
Blood orange or navel orange wheels, fir sprigs (optional), cranberries, and cinnamon sticks (for serving)

Steps:

  • Spiced Syrup:
  • Bring raw sugar, allspice, cloves, cinnamon, and 1 1/3 cups water to a simmer in a small saucepan over medium heat. Remove from heat and let spices steep 10 minutes. Strain through a fine-mesh sieve into a small measuring glass or bowl (you'll have 1 1/2-1 3/4 cups syrup); let syrup cool. Cover and chill until cold, at least 30 minutes.
  • Assembly:
  • Stir spiced syrup, sherry, vermouth, cranberry juice, and lemon juice in a large pot or bowl.
  • If serving from a dispenser with a spigot, line sides at the bottom with a row of orange wheels and fill one-quarter full with crushed ice to hold orange wheels against sides. Create another layer of orange wheels and add just enough ice to hold them against sides. Repeat until dispenser is full. Pour punch over ice and top with fir sprigs, if desired. Serve punch in ice-filled glasses garnished with cranberries, cinnamon sticks, and orange wheels.
  • If serving in a punch bowl, add 4 cups ice cubes to punch and stir until very cold, about 1 minute. Remove ice with a slotted spoon. Ladle into ice-filled glasses garnished with cranberries, cinnamon sticks, and orange wheels.
  • Do Ahead
  • Syrup can be made 1 month ahead. Keep chilled. Punch (stirring in ice if serving in a punch bowl) can be made 8 hours ahead. Cover and chill.

I generally make this with cream sherry, but you can use dry if you want it not quite so sweet. The refrigerating overnight is to allow the fruit and sherry sauce flavors to blend more thoroughly. It's good served hot out of the oven or cold later on (after baking of course). May be served in dishes or poured over pound cake, pudding or ice cream. Or you can put a dollop of vanilla ice cream on top. Times do not include chilling time overnight.

2 tablespoons flour
1 (29 ounce) can pear halves in natural juice
1 (29 ounce) can peach halves in syrup
1 (20 ounce) can pineapple chunks
1 (14 ounce) can spiced apple rings
1 (17 ounce) can apricot halves
1/2 cup sugar
1 cup sherry wine

Steps:

  • Combine butter and flour in small saucepan over low heat, blending until smooth.
  • Stir in sugar.
  • Slowly add sherry, stirring constantly, until thickened.
  • Combine the sauce with the drained fruits in a 2-quart casserole.
  • Cover and refrigerate overnight.
  • Bake at 350° for 30 minutes.

1 can (29 ounces) pear halves, drained

1 teaspoon curry powder

Steps:

  • In a 2-1/2-qt. casserole, combine fruit and raisins. Melt butter in a small saucepan; stir in brown sugar and curry powder. Cook and stir over low heat until sugar is dissolved. Pour over fruit mixture; mix gently. Cover and bake at 400° for 30 minutes or until heated through.

15 ounces pears, peeled & diced

1 cup sherry wine

Steps:

  • combine sauce ingredients in double boiler until thick and smooth.
  • combine fruit in casserole and pour sauce over all while still hot.
  • cover and refrigerate overnight or several days.
  • bake uncovered @ 350 degrees F for about 30 to 40 minutes. fresh fruits should be tender. sauce will be bubbly.
