This Honey Mustard Pork Tenderloin is baked to perfection with green beans, potatoes, and ready in only 35 minutes. This recipe is a must for your busy weeknights!

2 pound pork tenderloin (2 tenderloins (about 1 lb each))
2 pound baby potatoes
1 pound green beans
3 tablespoon olive oil
½ teaspoon garlic powder
1 tablespoon Italian seasoning
½ teaspoon salt
¼ teaspoon pepper (ground)
2 tablespoon grainy mustard
2 tablespoon honey
2 tablespoon soy sauce (low sodium)
3 cloves garlic (minced)
1 tablespoon sriracha sauce (or any other hot sauce)

Steps:

  • Preheat oven: Preheat the oven to 450 F degrees.
  • Make the sauce: Mix all the sauce ingredients together and season with salt and pepper if needed.
  • Prepare the pork tenderloins: Wash the pork tenderloins and pat dry with paper towels Brush or spoon the sauce over the pork and set aside.
  • Prepare the veggies: Season the potatoes and green beans with olive oil, salt, pepper, Italian seasoning, and garlic powder. Toss until evenly coated. I seasoned them separately and divided the oil and seasoning in half for each.
  • Prepare the sheet pan: Lay the green beans down the middle of the sheet pan and dump the potatoes along the sides. Lay the pork tenderloins over the green beans and brush or spoon with more sauce.
  • Bake: Let everything cook for 25-30 minutes, or until the pork registers 145 F degrees at the thickest part on an instant read thermometer. Brush or spoon more sauce over the pork at the half-way point.
  • Rest: Cover the pork with foil and rest for 15 minutes before serving. Enjoy!

Baked Pork Chops with Honey Mustard Sauce - tangy and sweet and downright scrumptious! Bone-in center cut pork chops, Dijon mustard, whole grain Dijon mustard, minced garlic, roasted potatoes.

1 pound sweet potatoes (skin on), scrubbed then cubed into 1-inch cubes (2 large potatoes)
1 pound Yukon gold potatoes (skin on), scrubbed then cubed into 1-inch cubes (2 large potatoes)
2 tablespoons olive oil
5 large garlic cloves, minced
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
4 5-ounce bone-in center cut pork chops, (½-1 inch thick)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
2-3 tablespoons fresh parsley, chopped for garnish
2 tablespoons Dijon mustard
2 tablespoons whole grain stone ground mustard
2 tablespoons honey
4 cloves of garlic, minced

Steps:

  • Adjust oven rack to the center position. Preheat oven to 450°F.
  • Add cubed potatoes to a large bowl, season them with salt and pepper then toss then with the minced garlic and oil. Roast potatoes on a baking sheet for 15 minutes - gently toss at 8 minutes so they don't stick to the pan.
  • Meanwhile season pork chops on both sides with salt and pepper.
  • Then mix the honey, mustard and garlic in a small bowl and baste ½ of the mixture on the top of the pork chops.
  • Remove potatoes from the oven and drizzle 1 more tablespoon of oil around the pan. Gently, turn a spatula upside down and use the flat edge to release any potatoes that are stuck to the pan. Then make 4 5x5 inch wells and add the pork chops to the pan with the honey mustard side up.
  • Roast pork chops and potatoes for 10 minutes.
  • Then leaving the pan in the oven turn on the broiler to high and broil for 2-3 minutes. The pork chops' internal temperature should reach 145-160 degrees.
  • Spoon on more sauce, garnish with parsley and enjoy!

1 cup honey
¼ cup brown mustard
3 tablespoons champagne vinegar
½ teaspoon red pepper flakes
½ teaspoon salt
½ teaspoon black pepper
4 (6-ounce) boneless pork chops
6-8 medium Yukon gold potatoes
2 tablespoons light olive oil

Steps:

  • In a large bowl stir together honey, mustard, vinegar, red pepper, salt and black pepper. Reserve ⅓ cup of mixture and set aside. Trim any excess fat from pork chops. Dredge both sides of pork chops in mixture and let sit at room temp 20-30 minutes.
  • Meanwhile: Preheat oven to 425° F. Wash and cut potatoes into ½-cubes. Toss with olive oil and salt and pepper to taste. Evenly spread on a large parchment-lined baking sheet. Bake 15 minutes, then reduce heat to 400°. Add prepared pork chops to baking sheet with potatoes in a single layer, bake 7-10 minutes more, or until pork reaches an internal temperature of 145° and potatoes are tender. Remove from oven and let sit 5 minutes. Serve with remaining honey mustard mixture drizzled on top of pork chops.

3 medium sweet potatoes, peeled, cut into 1-inch pieces (about 4 cups)
2 tablespoons olive oil
1 1/4 teaspoons salt
1/2 teaspoon pepper
1/2 lb fresh broccoli florets (about 4 cups)
4 boneless pork chops (about 3/4 inch thick)
3 tablespoons honey
1 tablespoon whole grain Dijon mustard
2 teaspoons balsamic vinegar

Steps:

  • Heat oven to 425°F. Spray 18x13-inch rimmed sheet pan with cooking spray.
  • In large bowl, mix sweet potatoes, 1 tablespoon of the oil, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Stir to coat. Place on pan. Bake 25 minutes.
  • In same bowl, mix broccoli, remaining 1 tablespoon oil and 1/4 teaspoon of the salt. Remove pan from oven; stir or turn potatoes, and arrange broccoli on pan with potatoes. Bake 5 minutes.
  • Meanwhile, season pork chops with remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper.
  • In small bowl, mix honey, mustard and vinegar. Reserve 2 tablespoons of the honey glaze.
  • Remove pan from oven; add pork chops to pan. Brush pork chops with remaining honey glaze. Roast 18 to 22 minutes or until pork is no longer pink and meat thermometer inserted in center reads at least 145°F, and vegetables are browned and tender.
  • Spoon reserved 2 tablespoons honey glaze on pork chops. Serve pork chops with vegetables.
