The Best Sweet Potato Potato Salad image

Number Of Ingredients 12

1/4 cup chopped cornichons or relish
2 tablespoons whole-grain mustard
1 tablespoon honey
2 ribs celery, diced
Zest and juice from 1 lemon
1/2 small red onion, minced
Kosher salt and freshly ground black pepper
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup white vinegar
1/2 cup mayonnaise
2 tablespoons minced fresh chives, plus more for garnish
2 tablespoons minced fresh parsley, plus more for garnish

Steps:

  • In a bowl, mix together the cornichons or relish, mustard, honey, celery, lemon zest and juice and red onion. Season with salt and pepper and let sit while the potatoes cook.
  • Put the potatoes in a large saucepan and add enough cold water to cover by 1 inch. Season the water generously with salt. Bring to a boil over medium-high heat. Reduce the heat to a simmer and cook until the potatoes are tender, about 10 minutes.
  • Drain the potatoes in a colander, put back in the saucepan, add the vinegar and, using a rubber spatula, toss gently to combine.
  • Add the mayonnaise, chives and parsley to the celery-onion mixture and stir to combine. Add the warm potatoes to the dressing and toss. Season to taste. Garnish with extra chives and parsley.

There are a number of similar recipes here, but this one, I feel, really features the potato ingredient! The original of the recipe was found in the Nov 2003 cookbooklet Crisco Best Recipes -- Year-Round Holiday Magic.

1 1/2 lbs sweet potatoes, scrubbed, quartered lengthwise & cut crosswise into 3/4-inch pieces (or yams)
3 tablespoons cider vinegar
2 tablespoons sweet pickle relish
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup vegetable oil
2 green onions, thinly sliced
1/4 cup red bell pepper, finely chopped

Steps:

  • In a large pot, steam prepared yams 10 to 15 minutes or until tender, then remove from steamer.
  • When cool enough to handle, peel yams (if desired; I don't), then place in a large salad bowl.
  • While yams cool, combine vinegar, pickle relish, mustard, salt & pepper in a small jar with a tight-fitting lid, & shake well.
  • Add vegetable oil & shake again, before pouring over yams & tossing them to coat.
  • Add green onions & red pepper & either serve at room temperature or chilled.

This recipe comes from Stefano de Pieri - great Italian chef. However this is very Asian fusion inspired but is fantastic. I have successfully made it with a mixture of butternut pumpkin and sweet potato.

1 kg sweet potato
1/2 cup olive oil (or less)
20 garlic cloves, peeled
1 red onion, minced
1 red chile, minced
1/2 cup chopped herbs (coriander, parsley, dill and chives)
2 tablespoons balsamic vinegar
2 cups roasted peanuts

Steps:

  • Cut sweet potato into chunks, toss in a little olive oil place in large baking dish with garlic cloves.
  • Season to taste with salt and pepper amd bake at 220 Degrees C for 45 minutes to 1 hours.
  • Remove from oven peel garlic and keep warm.
  • Mix red onion, chilli and herbs into potato and garlic.
  • Whisk remaining ingredients including the remaining olive oil, and toss through salad.
  • Lastly top with peanuts and serve, extra herbs and black pepper.
  • Fantastic!

Nonstick cooking spray, for spraying the baking sheet
6 cups 1/2-inch-diced sweet potatoes (4 to 6 large sweet potatoes; I leave the skin on but peeling is an option)
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 cups loosely packed baby arugula
4 scallions, white and light green parts only, thinly sliced
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
2 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray.
  • Toss the sweet potatoes in a large bowl with the olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Transfer to the prepared baking sheet and bake for 20 minutes. Stir the potatoes and continue to bake until fork-tender, an additional 15 to 20 minutes. Let cool completely.
  • In a large bowl, combine the cooled sweet potatoes, arugula and scallions. In a small bowl, whisk the mayonnaise with the lemon juice and Parmesan; season with salt and pepper. Just before serving, toss the dressing with the sweet potato and arugula mixture to coat.

1 lb sweet potato, peeled, coarsely grate, and blanched
1/2 cup chopped onion
1 medium garlic clove, minced
1/2 teaspoon hot sauce
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh parsley
1/4 cup fresh lemon juice
1/4 cup olive oil
1/4 teaspoon pepper
salt, to taste

Steps:

  • Grate or spiralize your peeled sweet potato, then blanch in boiling water.
  • Wash and peel the sweet potatoes. Using a spiralizer or cheese grater, create shredded sweet potato "noodles". Set aside.
  • Bring a pot of water to a boil and blanch the sweet potato noodles until tender but still holding their shape, about 1 to 2 minutes depending on the thickness of your noodles.
  • Immediately drain your noodles and place in a bowl of ice water to stop the cooking.
  • Mix onions, garlic clove, hot sauce, cilantro, parsley, lemon juice, olive oil, pepper and salt in a bowl. Then add sweet potato to the bowl and toss to dress. Serve.

From my Cooks of the Green Door cookbook. Haven't tried this salad, but it sounds really delish! Feel free to modify the amount of sour cream and mayo to suit your tastes.

6 medium sweet potatoes, peeled and cut into 1/2 inch pieces
1 1/2 cups celery, chopped
3 green onions with tops, sliced
1 cup raisins
1 (20 ounce) can crushed pineapple, drained well
1 cup pecans, chopped
1 cup mayonnaise (low fat or not)
1 cup sour cream (low fat or not)
2 tablespoons cider vinegar
1 tablespoon honey
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add sweet potato cubes. Boil about 5-7 minutes just until tender but firm enough to hold their shape. Drain into a colander and rinse under cold water. Drain well. In a large bowl gently toss sweet potatoes with celery, green onions, raisins, pineapple and pecans.
  • In medium bowl, mix together mayonnaise, sour cream, vinegar, honey, salt and pepper. Gently toss with sweet potato mixture. Cover and refrigerate until serving time.

DILL SWEET POTATO SALAD

My family asks me to make this every chance I get. It is a nice change from the usual potato salad with mayonnaise.

2 large japanese sweet potatoes
1 large cucumber
5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
2/3 cup coconut vinegar (decrease amount if using white vinegar) or 2/3 cup other vinegar (decrease amount if using white vinegar)
1/4 cup chopped fresh dill (or more)
salt and black pepper

Steps:

  • Cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
  • White they cool a bit, dice the cucumber and combine with the rest of the ingredients.
  • Add in cooled sweet potatoes and stir well.
  • Taste for salt and pepper and chill or serve room temperature.
