Attention, cheese lovers! This may be the best cheese spread you've ever had! My friend's mother gave me this recipe over 15 years ago. I always make it around the holidays, or for football and hockey game nights. Everyone begs for this recipe. Turn this into a pub spread by adding a half cup of your favorite dark ale. Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

1 (8 ounce) package cream cheese
1 (8 ounce) container cold pack aged sharp Cheddar cheese (such as MacLaren's Imperial Sharp Cold Pack Cheddar Cheese product)
¼ cup finely chopped red onion
1 tablespoon Worcestershire sauce
2 teaspoons freshly ground black pepper
1 teaspoon paprika
1 dash hot sauce, or to taste

Steps:

  • Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.
  • Stir red onion, Worcestershire sauce, black pepper, paprika, and hot sauce into cheese mixture with a fork until evenly combined; spoon into an airtight container and refrigerate, 8 hours to overnight.
  • Remove cheese spread from refrigerator about 30 minutes before serving.

2 tablespoons unsalted butter
3 tablespoons unbleached all-purpose flour
2 teaspoons fresh thyme leaves
2 teaspoons Dijon mustard
1 bottle (12 ounces) lager beer
4 ounces cream cheese, room temperature, cut into 6 to 8 pieces
6 ounces extra-sharp cheddar, grated (about 1 1/2 cups)
6 ounces Gruyere, grated (about 1 1/2 cups)
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground pepper
1/4 cup coarsely crushed pretzel rods, plus whole pretzel rods for serving
Inner celery stalks, for serving

Steps:

  • Melt butter in a medium saucepan over medium heat. Add flour; cook, whisking, about 2 minutes. Add thyme and mustard, then gradually add beer, whisking constantly until smooth. Bring to a boil and cook 1 minute more.
  • Reduce heat to medium. Add cream cheese, a piece at a time, whisking constantly until smooth. Whisk in cheddar and Gruyere, a handful at a time, until melted. Remove from heat. Add Worcestershire. Season with salt and pepper. Serve, sprinkled with pretzel crumbs, with pretzel rods and celery.

½ cup Black Diamond Sharp Cheese Spread
1 cup sour cream
5 slices bacon, cooked and chopped
3 green onions, chopped
6 tomatoes
1 jalapeno, seeded and chopped
1 green pepper, chopped
½ cup red onion, finely chopped
2 tsp red wine vinegar
2 Tbsp olive oil
2 tsp cumin
1 tsp chili powder
1 lime, juiced
2 avocados
3 tsp coriander, chopped
salt, to taste
pepper, to taste

Steps:

  • In a mixing bowl, combine Black Diamond Sharp Cheese Spread, sour cream, and green onions. Set aside.
  • Cut your tomatoes in half and then in half again. Remove the seeds and chop remaining flesh and place in a bowl. Add in the chopped jalapeno, green pepper, red onion, red wine vinegar, and olive oil. Season with cumin, chili powder, and some salt and pepper.
  • In a third bowl, blend the avocado flesh, lime juice, and coriander. Season with salt and pepper. Taste and adjust seasoning along the way until it's just right.
  • Using a square baking dish, start layering your dip: Place the avocado mixture on the bottom, then the cheese mix, followed by a layer of bacon, and top with salsa.
  • Serve with baked nacho chips.

Made with lager, sharp Cheddar, and nutty Gruyère, this beer cheese is perfect for game day or any casual get-together.

4 tablespoons unsalted butter
¼ cup all-purpose flour
1 cup lager beer (see note)
1½ cups half & half
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder
Scant ½ teaspoon salt
¼ teaspoon cayenne pepper
4 oz (1 cup) shredded Cheddar cheese
4 oz (1 cup) shredded Gruyère cheese
1 tablespoon chopped fresh chives, for serving (optional)

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the flour and whisk until the flour is completely absorbed. Continue cooking, whisking constantly, for 1 minute.
  • While whisking constantly, slowly pour in the beer and half & half. Whisk in the mustard, Worcestershire sauce, garlic powder, salt, and cayenne pepper. Bring the mixture to a boil, whisking constantly, then reduce to a simmer and continue cooking, whisking frequently, until thickened enough to coat the back of a spoon, about 3 minutes.
  • With the heat on low, add the cheeses a handful at a time, whisking between each addition, until the cheese is fully melted before adding more. Taste and adjust seasoning, if necessary. Transfer the dip to a serving bowl and sprinkle with fresh chives, if using. Serve immediately.
  • Leftover beer cheese can be covered and refrigerated in an airtight container. Reheat gently on the stovetop over medium-low heat, whisking frequently, until warmed through.
  • Note: Lager is a family of beers that includes bright lagers, amber lagers, dark lagers, Oktoberfests, and pilsners. I used Fat Tire because that what I had in the house, but Budweiser, Bud Light, Coors Light, and Miller Lite are all good options. No need to use anything fancy!

This dip or spread has a great fresh taste. Serve it right after making it for a softer dip. For a spread, refrigerate before serving. Please use a good quality cheese as a generic brand has extra oil added and will separate out.

2 cups sharp cheddar cheese (8 oz pkg)
1/3-1/2 cup mayonnaise
1/4 cup chopped onion
1/2 teaspoon hot pepper sauce or 1/2 teaspoon Worcestershire sauce
3 tablespoons chopped fresh cilantro

Steps:

  • Cut-up cheese in 1-inch cubes and put in food processor bowl along with the mayo. Process 'til smooth.
  • Add the onions and pepper sauce. Process another minute.
  • Transfer cheese mixture to a small mixing bowl.
  • Add chopped cilantro and combine well.
  • If serving immediately as a dip, pile into a bowl and garnish with a cilantro sprig.
  • For a firmer spread-like consistency, refrigerate at least two-hours.
  • Serve with crackers and celery sticks.

1 pound sharp cheddar cheese, preferably white
1 stick softened sweet butter
2 teaspoonfuls or so of Dijon mustard (or to taste)
Cayenne pepper to taste
1/4 cup or so of dry sherry
1 to 1 1/2 cups chopped toasted pecans
Garnish: finely sliced chives

Steps:

  • Grate the cheddar cheese while very chilled, but then let the grated cheese get back to room temperature. In the bowl of a food processor, whirl the cheese, butter, mustard, sherry and cayenne pepper until smooth and creamy
  • Transfer to a mixing bowl, cover and refrigerate until needed. (You can do 2 weeks before serving.) Remove from refrigerator 1 hour before serving; fold in the nuts and repack into four 1 cup ramekins of crocks. Dust with chives for garnish
  • Serve with crackers, or a crunchy vegetable like celery or fennel or jicama.

6 slices bacon, or more to taste
1 1/2 cups mayonnaise
1 (8-ounce) bag shredded sharp cheddar cheese, shredded

  • Toast the almonds in a skillet over medium-high heat, stirring with a wooden spoon and occasionally shaking the pan, for about 4-5 minutes or until lightly golden. Remove the almonds from the pan and set them aside.
  • Cook the bacon in the skillet over medium-high heat, flipping occasionally, for about 8 to 10 minutes or until brown and crispy. Drain, cool, and chop it into bits.
  • In a large mixing bowl, mix together the mayonnaise and cheddar cheese. Add the bacon, green onions, toasted almonds, and cayenne and stir until well-combined.
