BAKED BLACK TIP SHARK STEAKS

My Grandmother went to a seminar this morning and I KNEW she'd be FAMISHED when she returned. I decided to prepare lunch for her, in advance of her return. A little Asian/Ecuadoran #FUSION!!!!!!!!!!!!!! Baked Ecuadoran Black Tip Shark fillets, with potato, stewed tomato, lime, and onion; Edamame bowls. Blackberry/Raspberry/Blueberry compote over vanilla bean Ice Cream to finish.

1 lb black tip shark steaks or 1 lb fillets
1 large idaho potato
1 large lime
1 large sweet onion
1 (12 ounce) can stewed tomatoes
weber's roasted garlic and herb seasoning
1/3 cup shiraz wine
6 slices unsalted butter
fresh ground tellicherry peppercorn

Steps:

  • Preheat oven to 375°.
  • In large glass, rectangular, baking dish, place 6 pats of butter in two lines of three pats each, across the pan.
  • Wash, and slice the potato into 1/2 inch slices.
  • Lay the potatoes in a single layer between the butter, or on top.
  • Sprinkle 1/3 of the ground peppercorns.
  • Slice the onion into 1/2 inch rings, and push rings loose and lay on top of potatoes.
  • Season lightly with Weber's seasoning.
  • Place shark steaks in the center of the baking dish, on top of the potatoes and onions.
  • Season lightly with peppercorns, and seasoning mix.
  • Squeeze the juice of 1/2 lime, over everything in the dish.
  • Add Shiraz wine.
  • Place, uncovered, into the preheated oven, and set a timer for 40 minutes.
  • Five to 10 minutes prior to the fish timer ending, steam, or microwave, the Edamame, then sprinkle the pods lightly with sea salt, and keep them warm.
  • Plate and serve immediately.
  • Serve with Shiraz, or Chardonnay and a Baguette and butter.

1 lb fresh shark steaks or 1 lb fresh swordfish steak
2 green onions, thinly sliced
2 tablespoons orange juice
2 tablespoons chili sauce
1 teaspoon dried basil, crushed
1 tablespoon finely chopped fresh gingerroot
1 tablespoon reduced-sodium soy sauce
5 -6 dashes hot chili oil
nonstick spray coating

Steps:

  • Rinse fish; pat dry with paper towels.
  • Cut into serving size pieces.
  • For marinade, in a shallow bowl combine the green onions, orange juice, chili sauce, basil, gingerroot, soy sauce, and chili oil.
  • Add the fish; turn to coat with marinade.
  • Cover; marinate at room temperature for 20 minutes.
  • Spray the unheated rack of a broiler pan with nonstick coating.
  • Drain fish, reserve marinade.
  • Place fish on prepared rack.
  • Broil 4 inches from the heat for 5 minutes.
  • Using a wide spatula, carefully turn fish over.
  • Brush with the reserved marinade.
  • Broil for 5-7 minutes more or until fish flakes easily when tested with a fork.

3 (8 ounce) shark steaks
¼ cup soy sauce
¼ cup Worcestershire sauce
2 tablespoons onion powder
2 tablespoons garlic salt
2 tablespoons chopped fresh thyme
2 tablespoons ground black pepper
2 tablespoons chili powder

Steps:

  • Rinse the shark steaks and trim off any skin.
  • Mix together the soy sauce, Worcestershire sauce, onion powder, garlic salt, thyme, black pepper, and chili powder in a small bowl to form a paste. Spread a thin layer of the soy sauce mixture on both sides of each shark steak. Place on a plate and cover. Allow to marinate in the refrigerator at least 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the shark on a baking sheet. Bake the shark in the preheated oven until cooked completely through, about 40 minutes, turning the steaks over once, about half-way through the cooking time.

My step daughter prepared this recipe for my DH and me many years ago. It was outstanding. My SD lives in Switzerland, and she and her husband visit once a year. For some reason we have never had this dish again. I have never actually prepared the recipe but I still remember how good it was. I will have to try it sometime soon. Preparation time includes time to marinate the shark steaks. I always guess the prep and cooking time.

4 shark steaks
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon sodium-free seasoning (Mrs Dash)
1 tablespoon all-purpose flour
2 tablespoons butter (to saute the shark)
1 garlic clove, chopped
1 cup chopped onion
1/2 cup white wine
4 roma tomatoes, peeled, seeded, and chopped into small cubes
1/2 teaspoon tarragon
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 tablespoon fish seasoning
3 tablespoons butter (to saute the vegetables)
1/2 cup breadcrumbs
1/2 teaspoon mustard powder
1 garlic clove, chopped
2 tablespoons parsley, chopped
2 tablespoons butter, chopped into small pieces (for the topping)

Steps:

  • For the Shark Steaks:.
  • Sprinkle salt, pepper, and Mrs Dash on shark steaks.
  • Rub shark steaks with lemon juice.
  • Marinate shark steaks in refrigerator for one hour.
  • Lightly coat shark steaks with flour.
  • Heat 2 tablespoons butter in frying pan.
  • Saute shark steaks on both sides.
  • Place shark steaks in warm glass casserole and cover with foil to keep warm.
  • For the Vegetables:.
  • Heat 3 tablespoons butter in frying pan.
  • Saute 1 clove garlic and onions for 2 or 3 minutes, until onions are translucent.
  • Add wine and continue cooking on medium heat until fluid is reduced by one half.
  • Add tomatoes and tarragon and continue cooking on medium heat for 2 minutes.
  • Pour over shark steaks and keep warm.
  • For the Topping:.
  • Combine bread-crumbs, mustard, garlic and parsley and mix well.
  • Place on top of shark steaks and vegetables.
  • Place little pieces of butter on top of bread-crumb mixture.
  • Bake at 350 approximately 5 minutes or until thoroughly heated and butter is melted.

4 garlic cloves
25 large fresh basil leaves
1/4 cup whole almonds, toasted
3/4 pound plum tomatoes, peeled, seeded, chopped, drained
3 tablespoons extra-virgin olive oil
2 tablespoons chopped pitted imported green olives
4 5-ounce shark or swordfish steaks (about 3/4 inch thick)
4 tablespoons dry white breadcrumbs

Steps:

  • With processor running, drop garlic through feed tube; process until chopped. Scrape down sides of bowl. Add basil and almonds; chop finely. Add tomatoes, oil and olives; process using on/off turns until mixture resembles coarse paste (do not purée). Season with salt and pepper. (Pesto can be made 4 hours ahead. Cover and chill.)
  • Preheat oven to 400°F. Lightly oil large baking sheet. Arrange shark steaks on prepared sheet. Sprinkle with salt and pepper. Spread 3 to 4 tablespoons pesto over each steak. Cover each with 1 tablespoon breadcrumbs. Bake until fish is just opaque in center, about 10 minutes.
  • Preheat broiler. Broil fish until crumbs on top begin to brown, about 2 minutes. Transfer fish to plates. Serve, passing remaining pesto separately, if desired.

1/4 cup fresh parsley, Chopped

16 ounces shark steaks
4 garlic cloves
2 tablespoons fresh mint leaves
1/2 teaspoon sea salt
1 lemon, for squeezing

Steps:

  • Rinse and pat dry the shark steaks.
  • Mince the garlic. Pour the salt over the garlic, and use the flat of the knife to crush down, almost to a paste.
  • Rough chop the mint.
  • Add the mint to the garlic, and crush some more. It should start to take on a green tinge, and start to give off the faint smell of mint.
  • Rub the mix into one side of the shark steaks, and squeeze half of the lemon over that side. Flip the other side up and repeat.
  • Cover tightly and refrigerate for 1 to 3 hours.
  • Start grill and preheat to medium when ready to prepare.
  • After preheating, using a paper towel, apply olive oil lightly to the grate (use tongs to hold the paper towel to avoid any unnecessary burns).
  • Place the shark steaks on the oiled grate, close the lid and allow to cook for 5 minutes.
  • Flip the steaks, using a spatula or tongs, no fork, and cook for another 5 minutes.
