SHALLOW-FRIED CHICKEN WITH SOUTHERN TOMATO GRAVY

Shallow-Fried Chicken with Southern Tomato Gravy image

Topped with creamy, Southern-style tomato gravy, these crisp, golden, cornmeal-crusted chicken breasts are shallow-fried until tender and juicy.

Provided by Lynne Webb

Categories     Chicken

Time 30m

Number Of Ingredients 16

4 pieces boneless, skinless chicken breast (1-1/4 to 1-1/2 pounds)
1 egg (lightly beaten)
1 tablespoon milk
3/4 cup yellow cornmeal
1/2 cup dry breadcrumbs
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Vegetable oil
2 tablespoons butter
2 tablespoons flour
1/2 cup sweet onion (chopped)
1 clove garlic (very finely chopped)
1 cup canned diced tomatoes (undrained)
1/2 cup low-sodium chicken broth
1/4 cup whole milk
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 200°F and coat a shallow baking pan with nonstick spray.
  • If your chicken breasts have tenderloins attached, remove them and reserve for another use.
  • Place the chicken breasts between 2 sheets of plastic wrap and pound gently to an even thickness of 1/2-inch.
  • Whisk the egg and milk together in a shallow dish (a pie plate works well). Thoroughly combine the cornmeal, breadcrumbs, salt and pepper on a plate or sheet of wax paper.
  • Dip each piece of chicken in the egg, then coat with the cornmeal mixture, pressing gently to get a solid, even coating.
  • Add about 1/8-inch of oil to a large, heavy frying pan and heat over medium-high heat. Add the chicken breasts in a single layer and cook, turning several times, until golden brown, 2-1/2 to 3 minutes per side.
  • Transfer to the prepared baking pan and place in the oven to keep warm while you make the gravy.
  • Wipe any remaining oil from the pan and melt the butter over medium heat. Sprinkle in the flour and whisk until blended. Continue cooking, stirring constantly, until the mixture is smooth and develops a pale, golden color, 2 minutes.
  • Add the onion and garlic and continue cooking, stirring frequently, until the onion has softened, 3 to 4 minutes longer. If you find the mixture starting to brown, turn down the heat.
  • Stir in the tomatoes, chicken broth and milk and cook, stirring frequently, until the sauce has a thick, gravy consistency. Season to taste with salt and freshly ground pepper.Note: If you feel the gravy is too thick, add a little extra chicken broth and milk in equal amounts.
  • To serve, plate individual servings of the chicken, spoon a little gravy on top, and place the remaining gravy in a bowl to pass at the table. Serve with mashed potatoes, rice or biscuits.

1 tablespoon salt
5 pieces bone-in chicken
Vegetable oil, for frying
1 small yellow onion, chopped

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

2 cups flour
1 1/2 cups milk
1/4 cup chili sauce
2 eggs
peanut oil (for frying)
3 chicken drumsticks
3 chicken thighs

Steps:

  • Fill large skillet almost half full with oil.
  • Heat to 350°F.
  • Season chicken with salt and pepper.
  • Mix milk, eggs, and chili sauce together in a shallow bowl.
  • In a separate bowl place flour.
  • Dip chicken in milk mixture coating all of the chicken.
  • Let excess mixture drip off chicken.
  • Dredge chicken in flour coating the whole piece.
  • Place chicken in heated oil dark meat first.
  • Turn chicken over to ensure even cooking.
  • Cook until golden brown and juices run clear.
  • Serve with my roasted garlic mashed potatoes.
  • Tips- Don't let chicken sit after coating it with flour because the coating will turn out soggy. Make sure you turn the chicken often to avoid burning. Your dark meat will take longer to cook than your white meat. When buying the chili sauce, look in the international foods isle. The chili sauce I prefer is on the Japanese shelf. Careful, that stuff is HOT.

PERFECT SOUTHERN FRIED CHICKEN

Perfect Southern Fried Chicken image

This is an outstanding recipe. When I found this I decided I didn't need to look for the perfect fried chicken recipe any more - I already had it.

Provided by PanNan

Categories     Chicken

Time 2h35m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 whole chicken, cut into 10 pieces (2 legs, 2 thighs, 2 wings, 4 breast)
4 cups water
3 teaspoons salt
1 cup buttermilk
2 eggs
1 tablespoon Season-All salt
1 cup flour
2 tablespoons cornmeal
2 teaspoons dried oregano
2 teaspoons Season-All salt
vegetable oil or shortening (for frying)

Steps:

  • Soak chicken in water and salt at least 2 hours in the refrigerator.
  • Mix buttermilk, eggs and Season All and dip chicken pieces in this mixture.
  • Combine 1 cup flour, 2 tbsp corn meal, 2 tsp dried oregano, and 2 tsp Season All in a bag.
  • Drop two pieces of dipped chicken in the bag at one time.
  • Shake to coat.
  • Place on wire rack to rest.
  • (I place wax paper under the rack to catch any flour that falls off.) Heat a shallow layer of oil or shortening to 360 F in a jumbo chicken skillet (cast iron is great for this job) or an electric skillet.
  • Place the chicken in the pan, trying not to crowd the pieces.
  • Cover for the first five minutes.
  • Check the chicken.
  • When golden brown, turn.
  • Cover for the next five minutes.
  • Remove cover and cook uncovered, turning occasionally, as needed for a total of an additional 20 minutes or until cooked through.
  • Watch carefully, and don't allow it to get too dark.
  • If it's frying too fast, reduce heat slightly.
  • NOTE- the key is to cover in the beginning to start the cooking process inside the chicken, but to uncover during the last part of the cooking time to get the outside nice and crispy and golden brown.

SOUTHERN FRIED CHICKEN W/CREAM GRAVY

Southern Fried Chicken W/Cream Gravy image

This chicken is crispy and the best I've eaten! It is important to follow the instructions on when to cover or uncover chicken during frying. That's what makes it crispy. To me, this is the ultimate comfort food with the delicious cream gravy. Prep and cook times are approximate.

Provided by keen5

Categories     Chicken

Time 55m

Yield 4 serving(s)

Number Of Ingredients 11

1 chicken, cut up into separate pieces (about 3 lbs.)
1 cup all-purpose flour
2 teaspoons salt
3/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1/2 cup light cream or 1/2 cup half-and-half
vegetable oil
2 tablespoons reserved fat, from skillet
2 tablespoons flour
1 cup light cream
salt and pepper

Steps:

  • Wash and dry chicken pieces; shake in a bag with flour, salt, pepper and poultry seasoning.
  • Dip coated pieces in cream in pie plate; then dip in remaining flour mixture again to coat evenly.
  • Pour enough oil into a large skillet to make a depth of 1".
  • Heat over moderate heat to 375 degrees on deep-fat frying thermometer (if you have one).
  • If not, just test heat by sprinkling a drop of water into grease, if it pops, it's ready enough.
  • (Stand back, so you don't get splattered).
  • Add chicken, skin side down.
  • When underside of chicken starts to brown, lower heat and partially cover skillet with lid.
  • Turn chicken pieces after 15 minutes.
  • Continue cooking second side, uncovered, until browned and chicken is tender, 10 minutes longer.
  • Drain on paper toweling, keep warm.
  • Serve with Cream Gravy, if you wish.
  • For Cream Gravy: Pour off fat from skillet, leaving brown bits; return 2 tablespoons fat to pan.
  • Stir in 2 tablespoons flour; heat until light brown.
  • Remove from heat; gradually stir in 1 cup light cream.
  • Return to heat; cook, stirring constantly, until thickened and bubbly.
  • If too thick, add more cream.
  • Taste; add salt and pepper as needed.
  • Makes about 1-1/4 cups.

BUDGET SOUTHERN FRIED CHICKEN N' GRAVY

Budget Southern Fried Chicken N' Gravy image

This is a staple recipe in my kitchen. This meal is very budget friendly. All the ingredients cost about $10 all together, and you should already have most of the ingredients in your pantry. This is a meal that you can cook for breakfast, lunch, and dinner. It is also a good make ahead meal. P.S. This recipe can also be made with ground turkey or pork, or even the veggie ground beef. I have also made the exact same recipe with pork chops and beef steak.

Categories     Breakfast

Time 25m

Yield 10 chicken bites, 1 serving(s)

Number Of Ingredients 8

1 -4 boneless skinless chicken breast (One per person)
oil (for frying, You really only need enough to barely cover the bottom of the pan that you are using})
flour, to coat chicken
2 tablespoons flour
2 onion rings (Cut into half moons)
1 -3 cup water (for the gravy)
dripping, from fried chicken pan
salt and pepper

Steps:

  • This is a one pot meal!
  • 1. Heat up oil in skillet( turn the oil on low because you don't want the oil to get too hot its bad for the gravy).
  • 2. Cut the chicken breast into small bite size pieces.(You should end up with 10-15 chunks per breast depending on how big or small the chunks are).
  • 3. Season the chunks of chicken to taste with salt and pepper.
  • 4. Dredge the chunks of chicken in flour and brown them on both sides in the skillet. It should take about 30 seconds- 2 minutes per side. (WATCH THIS STEP CAREFULLY!. Since the chicken is small chunks YOU ONLY WANT TO BROWN AND COOK THE CHICKEN SLIGHTLY AS IT WILL CONTINUE TO COOK IN THE GRAVY).
  • 5. Take the chicken out of the pan and drain on paper towels.
  • For Gravy:.
  • 1. Pour off the most of the oil into a separate container(SAVE THE OIL) leaving 1 to 2 tablespoons of oil with the pan drippings in the pan. Begin sauteing the onions until they are tender and translucent).
  • 2. Add the two tablespoons of flour in with the onions along with about 2 tablespoons of the reserved oil. Cook the flour for about 2 minutes until the raw flour taste is cooked out.
  • 3. Begin adding your water. I do it in half cup increments. You don't want your gravy to be to soupy or too thin. (You are looking for the thickness of like a Béchamel sauce before you add the cheese to make macaroni).
  • 4. When your gravy is think enough to your liking season to taste with salt and pepper. Add the chicken in the gray and let the gravy cook for 5 minutes so the chicken can cook through.
  • 5. Enjoy! You can serve chicken and gravy over white rice, mashed potatoes, or grits. I eat it also with a nice cold glass of southern iced tea.
