SPAGHETTI SAUCE

Number Of Ingredients 20

5 pounds ground beef (I used ground round)
3 tablespoons olive oil
2 large yellow onions, diced
6 cloves garlic, minced
Two 28-ounce cans crushed tomatoes
One 14-ounce can crushed tomatoes
One 6-ounce can tomato paste
1 jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/2 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
8 fresh basil leaves, chopped
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
  • Amen.

1/2 pound ground beef
1 large onion, chopped
1 celery rib, chopped
3 garlic cloves, minced

1 can (28 ounces) diced tomatoes
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (8 ounces) mushroom stems and pieces, drained
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 tablespoon sugar
1/2 teaspoon pepper
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
Hot cooked spaghetti

Steps:

  • In a large skillet, cook the sausage, beef, onion, celery and garlic in oil over medium heat until meat is no longer pink; drain. In a 4-qt. slow cooker, combine the diced tomatoes, tomato soup, mushrooms, tomato sauce, tomato paste, sugar and seasonings. Stir in sausage mixture., Cover and cook on low for 6-8 hours or until flavors are blended. Serve with spaghetti.

A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

4 (14.5 ounce) cans whole peeled tomatoes
2 (15 ounce) cans tomato sauce
4 (6 ounce) cans tomato paste
3 cups water
4 cups fresh sliced mushrooms
2 onions, chopped
4 cloves garlic, minced
4 teaspoons white sugar
¼ cup chopped fresh basil
salt to taste
ground black pepper to taste
2 pinches baking soda
¼ cup grated Parmesan cheese

Steps:

  • Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
  • Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
  • After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
  • Cool, cover, and refrigerate overnight. The next day, reheat and serve.

When I found my Taste of Home magazine in my mailbox, I was excited to try this slow cooker recipe for "Stamp of Approval Spaghetti Sauce" Orginally submitted by Melissa Taylor of Higley AZ. This sauce is the best stuff I have ever tasted- there is no comparison in taste between store bought and this! Everyone that I made it for, my hubby, son, sister, mom and dad loved it and I (shamefully) ate 2 bowls full of plain sauce before serving! Just try it. Notice- It makes a BIG crock pot full of sauce!

2 lbs ground beef
3/4 lb bulk Italian sausage (I used 1 lb.)
4 medium onions
8 garlic cloves, Minced
4 (14 1/2 ounce) cans diced tomatoes (with liquid)

1/4 cup sugar
1/4 cup Worcestershire sauce
1 tablespoon canola oil (I used Olive Oil )
2 teaspoons dried basil

1 teaspoon rubbed sage (I used ground )
1/2 teaspoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon pepper
hot cooked spaghetti

Steps:

  • In a Dutch oven. cook the beef, sausage, onions and garlic over medium heat until meat is no longer pink; drain.
  • Transfer to a 5-qt slow cooker.
  • Stir in the tomatoes, tomato paste, water, sugar, Worcestershire sauce, oil and seasonings.
  • Cover and cook on low for 8 hours or until bubbly.
  • Discard bay leaves.
  • Serve with Spaghetti.

This is my favorite spaghetti sauce recipe. It comes from a freezer cookbook called Once a Month Cooking. This makes alot so plan on freezing about half of the recipe. You can use this sauce on spaghetti, manicotti, veal (or chicken) scallopini, or French bread pizza

1 lb Italian sausage
3/4 cup finely chopped onion
1 (6 ounce) can tomato paste
3 (15 ounce) cans tomato sauce
1 cup water
2 cloves garlic, chopped

2 teaspoons dried basil
1 teaspoon dried oregano
2 tablespoons chopped fresh parsley
2 teaspoons salt

Steps:

  • Brown the sausage with the onion and drain.
  • Add the rest of the ingredients and simmer, partly covered, for 2 hours.
  • Simmering can be done in a crockpot, if desired.

This is a family favorite, I think the original source was Jeanne Jones way back in the early 90's. I've since lost the recipe book, but the recipe is pretty much tatooed to the back of my brain. Much to my kids' delight... We use this for everything from spaghetti, baked rigatoni, lasagne, to eggplant parmagiana. It is excellent vegetarian-style with no meat.

3 hot Italian sausages (about 1/2 lb)
1 tablespoon olive oil
1 small onion, diced
8 garlic cloves, crushed and minced
1 (28 ounce) can crushed tomatoes, preferably Contadina
1 (6 ounce) can tomato paste
6 ounces water
1 teaspoon dried oregano, crushed or 1 tablespoon fresh oregano, minced
2 teaspoons dried basil or 2 tablespoons fresh basil, minced
1 dash cinnamon (optional)

Steps:

  • In a 3 1/2 qt saucepan, cook sausage in a bit of olive oil until brown and crumbly. Remove sausage from pan and wipe pan clean with a paper towel.
  • Place 1 tbsp olive oil in the saucepan, adding the onion and the garlic. Cook until onion is translucent, stirring frequently and don't allow garlic to burn.
  • Add the crushed tomatoes, stirring to combine. Then add the tomato paste, stirring until dissolved.
  • Add water, oregano, basil and cinammon (if using). Season to taste with salt and pepper. If tomatoes are too acidic, add a sprinkle of sugar to counteract.
  • Mix in the cooked sausage, adjust seasoning if necessary.
  • Bring to a boil, then reduce to a simmer. Simmer for a minimum of 30 minutes, semi-covered, stirring occasionally until rich and thick.
  • NOTE FOR MOMS: when the kids were young, I would often add shredded zuchinni and/or carrots at the same time as the onions. This way, they got their veggies too on "spaghetti night". I think you might have to add a tad more liquid for this option.
