SESAME SHRIMP AND ASPARAGUS STIR-FRY
Stir-fries are very quick to put together, especially if you plan ahead and have all your favorite ingredients on hand. And, if made with lean protein like shrimp and lots of veggies, stir-fries make for a well-balanced dinner.

- Meanwhile, in a small bowl, stir together the soy sauce, rice vinegar and ginger. Set aside. In a 12-inch skillet over medium-high heat, toast the sesame seeds until golden, about 4 minutes. Transfer to a small bowl. In the same skillet, heat the vegetable oil over medium-high heat until hot. Add the asparagus and cook until tender-crisp, stirring frequently, about 5 minutes. Add the tomatoes and cook 2 minutes, stirring frequently. Stir the soy sauce mixture and shrimp into the asparagus mixture. Cook 1 minute to heat through. Remove the skillet from the heat, and stir in the sesame oil. To serve, spoon the rice onto 4 dinner plates, top with the shrimp mixture and sprinkle with toasted sesame seeds.

- Pour the sauce over shrimp, sprinkle with sesame seeds, green onions: Pour over the shrimp. Toss to coat. Sprinkle the shrimp with toasted sesame seeds and remaining green onions. Serve immediately with rice, soba noodles, rice noodles, bok choy, spinach, broccoli, or asparagus.

THAI SHRIMP AND ASPARAGUS
This is an incredibly quick and easy recipe, perfect for busy weekday meals. I found this in the Chicago Sun-Times and it stated that it serves 2 but I have to double it for my husband and myself. I use Thai Kitchen Sweet Red Chile sauce.

- Pour the chile sauce and broth into a medium-size skillet and bring to a simmer over medium-high heat. Add the shrimp, reduce the heat to medium and cook, turning the shrimp, until they turn pink and opaque and are cooked through and the sauce thickens somewhat, about 3-4 minutes.
- Add water to a large skillet to a depth of about 1 inch and bring to a boil over medium-high heat. Rinse the asparagus spears and snap off and discard their tough ends. Add the asparagus to the boiling water, reduce heat and simmer until the spears turn bright green, about 3 minutes. Drain the asparagus and cut them into 1 1/2-inch pieces, then add the soy sauce to them.
- Spoon the shrimp onto plates; garnish the shrimp with asparagus, cilantro and sesame seeds.
- I serve this with steamed jasmine rice.

- Preheat oven to 450 degrees F.
- Combine salt, 2 teaspoons olive oil, and 1 teaspoon sesame oil in a small cup or bowl. In a jelly-roll type pan (10 1/2 x 15), toss asparagus with oil mixture; roast 10 to 12 minutes, until tender.

- In a smaller bowl, mix the water with the sugar, oyster sauce, and corn starch; set aside.

- Place eggs in a heavy pot. Cover with 4 cups cold water. Bring to a boil over high heat; cover, immediately reduce to a bare simmer, and cook eggs 9 minutes. Crack the shells and put in a bowl of ice water for 10 minutes, then drain.
- Heat oven to 400 degrees. Spread asparagus on a large baking sheet. Dot with 2 tablespoons butter; sprinkle with salt and pepper. Roast, turning occasionally, until crisp-tender, about 10 minutes, and transfer to a platter.
- Meanwhile, in a small skillet over medium heat, toast the black and white sesame seeds until fragrant, about 1 minute. Pour into a bowl and toss with coarse sea salt.

- For the shrimp: combine the first 9 ingredients in a large zip-lock heavy duty plastic bag; seal the bag and marinate in the frig for 1 hour.
- Remove shrimp from the bag and reserve the marinade.
