Is it a cookie? Is it a cracker? Hard to say. These homemade crispy, crunchy sesame crisps are found all over Asia, and they're perfect with a cup of coffee or tea!

5 large egg whites
1/2 cup powdered sugar
1/2 cup vegetable oil
1/3 cup all purpose flour
1 1/2 cup raw sesame seeds

Steps:

  • Beat the egg whites until they start to get bubbly. Add the powdered sugar and beat until the sugar is dissolved. Beat in the oil and flour and mix well. Stir in the sesame seeds. Let the mixture sit for 20 minutes.
  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Fill a zip top bag with batter and cut a ¼ inch hole in one corner. Squeeze out the batter onto the parchment to make circles, about an inch and a half apart. Bake for 15-18 minutes until golden. Cool and serve.

Turn leftover brown rice and quinoa from dinner or meal-prepping into these delicious crispy crackers that are loaded with three good-for-you seeds--and create an everything-bagel flavor, without the bagel. The whole grains that make up this copycat cracker recipe add lots of fiber for a healthy snack that pairs perfectly with hummus or cheese.

1 cup cooked brown rice, at room temperature
1 cup cooked quinoa, at room temperature
¼ cup sesame seeds
¼ cup flaxseeds
¼ cup sunflower seeds
2 tablespoons reduced-sodium tamari
2 tablespoons water
¼ teaspoon salt
¼ teaspoon ground pepper

Steps:

  • Place oven racks in upper and lower sections of the oven. Preheat to 350 degrees F. Cut 3 pieces of parchment paper the size of a large baking sheet.
  • Place rice, quinoa, sesame seeds, flaxseeds, sunflower seeds, tamari, water, salt and pepper in a food processor. Process until finely chopped and coming together in a ball. The dough will be sticky.
  • Divide the dough in half. Place 1 piece of dough between 2 sheets of the prepared parchment paper. Roll out as thin as possible. Remove the top sheet of parchment and place the dough with parchment on a baking sheet. Repeat with the remaining dough and prepared parchment.
  • Bake for 15 minutes. Switch the position of the baking sheets and continue baking until dark around the edges and crisp, 12 to 15 minutes more. Remove from oven and carefully break into roughly shaped crackers. If some crackers aren't fully crisp, return them to the oven and bake for 5 to 10 minutes more.

5 ounces whole-wheat flour
4 3/4 ounces all-purpose flour, plus additional for rolling
1/3 cup poppy seeds
1/3 cup sesame seeds
1 1/2 teaspoons table salt
1 1/2 teaspoons aluminum-free baking powder
3 tablespoons olive oil
6 1/2 ounces water

Steps:

  • In a medium bowl whisk together both flours, poppy seeds, sesame seeds, salt, and baking powder. Add the oil and stir until combined. Add the water and stir to combine and create a dough. Turn the dough out onto a floured surface and knead 4 to 5 times. Divide the dough into 8 equal pieces, cover with a tea towel and allow to rest for 15 minutes.
  • Preheat the oven to 450 degrees F.
  • For a thin snacking cracker: On a lightly floured surface, roll out 1 piece of dough to 1/16-inch and place on a parchment lined baking sheet. If there is room on the sheet pan, repeat with a second piece of dough. Bake on the middle rack of the oven for 4 minutes then flip and bake for an additional 2 to 3 minutes or until golden brown. Remove from the oven and place on a cooling rack. When cool, break into desired size pieces. Repeat procedure with remaining dough.
  • For a thicker dipping cracker: On a lightly floured surface, roll out the dough as above but to 1/8-inch thick. Bake for 6 minutes on the first side, then flip and bake another 4 to 6 minutes.
  • For super even thickness and easy rolling: Roll out using a lightly floured pasta roller. Flatten the dough until it will pass through the first setting and go to the highest number that your pasta roller will allow without tearing the dough. Bake according to the thin cracker instructions.
  • Note: Baking times will vary depending on exact thickness of dough and oven temperature, so watch them closely. Store in an airtight container for up to 2 weeks.

Steps:

  • Preheat the oven to 400°F
  • Line 2 baking sheets with parchment paper.
  • In a medium bowl, whisk the flour with the sugar and salt.
  • Add the egg white and whisk until smooth.
  • Whisk in the butter until smooth and creamy.
  • Spoon teaspoons of the batter 3 inches apart on the prepared baking sheets and spread to 2-inch rounds.
  • Sprinkle with the sesame seeds and bake in the upper and middle third of the oven for about 15 minutes, shifting the pans from top to bottom and front to back, until the tuiles are golden and fragrant.
  • Let cool.
  • In a medium bowl, combine the salmon with the shallot, chopped chives, lemon zest and a pinch of white pepper.
  • Spoon the salmon onto the tuiles and top with a dollop of crème fraîche and a couple of snipped chives.
  • Serve right away and ENJOY!

1/2 cup white sesame seeds
1/4 cup black sesame seeds
2 tablespoons poppy seeds
2 tablespoons mustard seeds
1 tablespoon coarse salt
3/4 teaspoon cayenne
6 tablespoons water
2 tablespoons cornstarch
1 quart vegetable oil for deep-frying
40 won ton wrappers

Steps:

  • In a small shallow bowl stir together seeds, salt, and cayenne. In a small bowl stir together water and cornstarch until combined well.
  • In a 3-quart heavy kettle heat oil over moderate heat until a deep-fat thermometer registers 360°F. Working quickly (do not let oil overheat), brush one side of each of 2 won ton wrappers with cornstarch mixture and gently press coated sides into seed mixture. Shake off any excess seeds from wrappers and fry wrappers, turning them over once, until golden, 8 to 10 seconds total. (Some seeds will fall off during frying.) With tongs transfer crisps as fried to brown paper or paper towels to drain. Make more crisps, 2 at a time, in same manner. (Crisps may be made 3 days ahead and kept in an airtight container at room temperature. Before serving, ‒recrisp- crisps in a 225°F oven 10 to 15 minutes.)

1 cup confectioners' sugar
3 tablespoons unsalted butter
3 tablespoons honey
2 tablespoons orange juice
1/2 cup white sesame seeds
1/4 cup black sesame seeds
1/4 cup all-purpose flour
Zest of 1/2 orange, about 1 tablespoon
1 pinch of salt

Steps:

  • Preheat the oven to 350 degrees. Line baking sheets with Silpats or parchment paper, and set aside.
  • In a small saucepan, combine confectioners' sugar, butter, honey, and orange juice. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute.
  • Remove pan from heat, and stir in remaining ingredients. Cool to room temperature.
  • Using a 1/2-ounce ice-cream scoop, drop batter onto prepared baking sheets about 4 inches apart. Bake until cookies are crisp and golden, 10 to 12 minutes. To form ice-cream cones, shape warm cookies around a cone-shaped dowel, and place upright in a tall glass to cool. For flat cookies, transfer from baking sheet to a wire rack to cool.

1 cup pastry flour (5 oz.)

1/2-3/4 cup water

Steps:

  • Toast the sesame seeds in a 350F oven for 10 to 15 mins, stirring occasionally, until golden brown.
  • In a large bowl, combine seeds, flours and salt.
  • Add oil, stir until the mixture comes together.
  • Add just enough water (a tablespoon at a time) to form a workable dough.
  • Divide dough into three equal portions.
  • Roll one portion, until it's very thin (about 1/16 inch thick).
  • Cut dough into desired shape (s)- use a wine glass/cookie cutter or a pizza wheel.
  • Transfer them to parchment-lined cookie sheets.
  • Bake the crackers for 25-30 mins, until they're beginning to brown around the edges.
  • Remove them from oven and transfer to a rack to cool.

  • Spread sesame seeds in 9x9 inch baking pan. Toast in the oven for 10 to 15 minutes. Remove from oven and cool. Increase oven temperature to 375 degrees F (190 degrees C).
  • Melt butter and cool a bit. Stir in sugar, lemon rind, egg, sesame seeds, flour, and baking powder.
  • Drop by 1/2 teaspoonfuls onto cookie sheets, leaving about 2 inches between each cookie. Bake for 10 minutes or until golden brown. Cool for 1 to 2 minutes before removing from cookie sheets. Cool cookies on wire racks.
