My trick to making a tasty roast that's pull-apart tender is marinating a boneless cut of pork in a tangy sauce overnight before cooking it slowly the next day. It's unbeatable. -Sue Brown, San Miguel, California

1 boneless pork shoulder butt roast (4 pounds)
2 cups water
1/2 cup soy sauce
1/4 cup sesame seeds, toasted
1/4 cup molasses
1/4 cup cider or white wine vinegar
4 green onions, sliced
2 teaspoons garlic powder
1/4 teaspoon cayenne pepper
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Cut roast in half and place in a bowl. In a separate bowl or shallow dish, combine the water, soy sauce, sesame seeds, molasses, vinegar, onions, garlic powder and cayenne. Pour half over the roast. Turn to coat. Cover and refrigerate roast overnight. Cover and refrigerate remaining marinade. , Drain roast, discarding marinade. Place roast in a 5-qt. slow cooker; add the reserved marinade. Cover and cook on high for 1 hour. Reduce temperature to low; cook until meat is tender, 8-9 hours longer. , Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and cold water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with meat. If desired, sprinkle with additional sesame seeds.

1 cup kosher salt
6 tablespoons granulated sugar
8 cloves garlic, smashed
8 bay leaves
3 tablespoons dried juniper berries, lightly crushed
2 tablespoons black peppercorns
1 teaspoon whole cloves
1 6-rib center-cut bone-in pork loin roast (about 5 1/2 pounds), chine bone notched
For the crust:
1 cup panko breadcrumbs
4 tablespoons unsalted butter, at room temperature
1 scallion, cut into 1-inch pieces
1/2 cup fresh parsley
2 tablespoons fresh thyme
2 teaspoons dried juniper berries, lightly crushed
3 tablespoons dijon mustard

Steps:

  • Brine the pork: Combine 4 cups water, the salt, sugar, garlic, bay leaves, juniper berries, peppercorns and cloves in a large pot or wide Dutch oven (large enough to hold the pork). Heat over medium heat, stirring, until the salt and sugar dissolve. Add 8 cups ice cubes; stir occasionally until the brine is cooled.
  • Make small deep cuts, about 2 inches apart, all over the pork and between the ribs using the tip of a paring knife. Add the pork to the pot and submerge in the brine; add more cold water if needed to completely submerge. Refrigerate overnight.
  • Set a rack in a roasting pan and put the pan on the lowest oven rack; preheat to 325 degrees F. Remove the pork from the brine, pat dry and set aside to bring to room temperature. Remove 3 cups brine (along with the spices) to a medium saucepan; bring to a boil. Remove the hot roasting pan from the oven and carefully stand up the pork on the rack with the chine bone down. Add the hot brine to the bottom of the pan. Roast until the fat is mostly rendered, about 40 minutes.
  • Meanwhile, make the crust: Pulse the panko, butter, scallion, parsley, thyme and juniper berries in a food processor until the herbs are coarsely chopped and the mixture is combined.
  • Remove the pork from the oven and reposition so it is meat-side up; brush the top and sides with the mustard, then sprinkle with the panko mixture, patting to adhere. Return to the oven and roast 50 more minutes.
  • Increase the oven temperature to 425 degrees F and continue roasting until the crust is crisp and a thermometer inserted into the center registers 140 degrees F, about 20 more minutes. Remove from the oven, transfer to a cutting board and let rest 20 minutes before carving.

1 tablespoon vegetable oil
3/4 cup dry white wine or 3/4 cup chicken broth
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon black pepper
2 medium carrots, finely chopped
1 medium onion, finely chopped
1 small shallot, finely chopped
1/4 cup half-and-half
2 -3 tablespoons Dijon mustard

Steps:

  • Trip fat from pork roast.
  • Heat oil in a large skillet over medium-high heat. Brown pork on all sides, about 10 minutes.
  • Put pork roast in crock pot. Mix together the remaining ingredients (except sauce ingredients). Pour over roast.
  • Cook on low 7 hours or until tender.
  • Remove pork and keep warm. Skim fat from juices in crock pot (optional). Stir in half and half and mustard. Cook on high 15 minutes or until slightly thick.

ROAST PORK WITH COUSCOUS & GINGER YOGURT

2 pork fillets , each about 500g/1lb 2oz, trimmed of any fat
2 tsp olive oil
3 tsp ground cumin
1 tsp ground cinnamon
4 tsp grated ginger
250g couscous
100g sultanas
zest and juice 1 lemon
small bunch mint , chopped
200g fat-free natural yogurt

Steps:

  • Heat oven to 190C/170C fan/gas 5. Brown the pork in a non-stick frying pan over a high heat for 4-5 mins, turning twice. Mix the oil, 2 tsp cumin, cinnamon, 2 tsp ginger and some seasoning, then rub all over the pork. Transfer to a roasting tin and roast for 30-35 mins or until the juices run clear when the thickest part is pierced with a skewer.
  • Mix the couscous with the remaining cumin, the sultanas, lemon zest and juice, then season and pour over 400ml boiling water. Stir well and cover for 5 mins, then stir in the mint.
  • Stir the remaining ginger and a little seasoning into the yogurt. Thickly slice the pork and serve with the couscous and ginger yogurt.

3 tablespoons olive oil
2 teaspoons minced fresh gingerroot
1 to 3 garlic cloves, minced
2 pork tenderloins (1 pound each)
1/2 cup honey
1/4 cup packed brown sugar
1/3 cup sesame seeds, toasted

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, ginger and garlic. Add pork; seal and turn to coat. Refrigerate for 4 hours or overnight, turning occasionally., Drain and discard marinade. Place pork on a greased rack in a foil-lined shallow roasting pan. 1/4 cup chili sauce
2 tablespoons low-sodium teriyaki sauce
2 teaspoons fresh ginger, grated (or 1/4 tsp. ground ginger)
2 garlic cloves, minced
2 teaspoons sesame seeds
3 cups Baby Spinach, fresh
1/4 cup nonfat sour cream (or reduced fat)
1 green onion, finely chopped
1 teaspoon Dijon mustard
1 dash salt

Steps:

  • In a small bowl, combine mustard cream ingredients and cover and chill for up to 24 hours before serving.
  • Preheat oven to 425 degrees and place pork on rack in a shallow roasting pan.
  • For basting sauce, in a small bowl, stir together chili sauce, teriyaki sauce, ginger, and garlic; brush some onto pork.
  • Roast pork for 15 minutes. Brush the surface with additional basting sauce; discard remaining basting sauce.
  • Sprinkle pork with sesame seeds.
  • Roast for 10-20 minutes more or until an instant-read thermometer, inserted into the thickest part of the roast, reads 160 degrees.
  • To serve, arrange spinach on a platter and slice the pork. Place pork on top of spinach with the mustard cream on the side.
