PORK KEBABS WITH SESAME RICE

Pork Kebabs With Sesame Rice image

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 9

1 teaspoon toasted sesame oil
1 1/2 tablespoons sesame seeds
1 1/4 cups jasmine or basmati rice
1 1/2 pounds boneless pork loin, trimmed and cut into 1 1/2-inch pieces
Kosher salt and freshly ground pepper
2 bunches asparagus, trimmed
1 tablespoon vegetable oil
1/4 cup ponzu sauce
Lemon wedges, for serving

Steps:

  • Heat the sesame oil in a medium saucepan over medium-high heat. Add the sesame seeds and cook, stirring, until golden, about 1 minute. Stir in the rice, then add 1 3/4 cups water; bring to a boil and cook until most of the water evaporates, about 8 minutes. Cover, reduce the heat to low and cook until tender, about 12 more minutes; remove from the heat and let stand until ready to serve.
  • Meanwhile, preheat the broiler. Thread the pork onto 4 long metal skewers, leaving space between each piece; season with salt and pepper. Place the asparagus on a baking sheet and toss with the vegetable oil and ponzu sauce. Push the asparagus to the side of the pan and add the pork skewers.
  • Broil the pork and asparagus, turning once or twice, until the pork is browned and cooked through and the asparagus is charred in spots, 8 to 10 minutes. Divide among plates and drizzle the pork with the pan juices; serve with the sesame rice and lemon wedges.

PORK FRIED RICE

Pork Fried Rice image

This is my revised version of another pork fried rice recipe. I often substitute chicken for pork, and it doesn't change anything. I have used both basmati rice and long-grain rice which gives the dish only a slight flavor difference. I have also added celery in the past with good outcomes. Enjoy.

SAUSAGE FRIED RICE

Sausage Fried Rice image

My mom often substituted the ground sausage with leftover pork roast from Sunday dinner. Leftover ham would work well too. Feel free to play around with the vegetables, using different kinds or omitting what you don't like. Other seasonings I sometimes throw in teriyaki sauce (instead of soy sauce), sesame oil, and/or a little bit of red pepper. All seasonings are normally added by taste. Food processing the vegetables gives the fried rice a more colorful presentation along with encouraging those who don't like vegetables to eat their vegetables.

Time 40m

Yield 12 serving(s)

Number Of Ingredients 20

1/2 lb ground sausage, browned and drained
1/2 cup chopped onion (or just sprinkle some dried onion flakes for flavoring)
1/4 cup diagonally sliced celery
1 carrot
1 stalk broccoli
6 -7 mushrooms (optional)
1 zucchini
margarine
oil
10 chinese snow peas
1/4 head green cabbage, sliced thinly
green onion, sliced thin (optional)
3 cups cooked rice
3 eggs, beaten fried and crumbled
2 (3 ounce) packages oriental-flavor instant ramen noodles
2 tablespoons clam juice
3 tablespoons soy sauce
salt
pepper
garlic salt

Steps:

  • Start the rice cooking if you don't have some on hand already.
  • Cook the meat in a frying pan and drain the grease if it was raw to begin with.
  • In a food processor, chop the onions, carrot, broccoli, mushrooms and zucchini. Of course, you don't have to chop the veges this small. You can cut them up by hand into larger pieces if you wish.
  • Saute the veges in a wok or large skillet with a little margarine and oil. When veges, meat and rice are done put all into the large skillet and toss together evenly.
  • Add oriental ramen seasoning packets, clam sauce, soy sauce, salt, pepper and garlic salt. With the oriental ramen seasoning you can just throw the noodles away (as my mom used to, ramen is cheaper than buying oriental seasoning packets) or you can save them for the noodles in a stir fry for some other time as I do. (In fact, I'll post a recipe called "Ramen Stir fry"). Toss the fried rice to disperse the flavors.
  • Add cooked egg, snow peas, cabbage and green onions. Warm them up in the fried rice. They don't really need to be cooked, just left crunchy.

SIMPLE HAM (OR PORK) FRIED RICE W/SESAME OIL NO WOK NEEDED

Simple Ham (Or Pork) Fried Rice W/Sesame Oil No Wok Needed image

This is NOT one of the many fried rice recipes that claim to taste just like your local Chinese restaurant. This is just a very tasty, very simple, one skillet fried rice that we have been making for years. The main differences from other recipes seem to be that we use sesame oil to fry the rice, and we do not add soy sauce while cooking. I'm also not going to tell you that you have to let the rice cool before frying. If you can, great, if not, it really doesn't make that big of a difference in this recipe. This is a one-skillet recipe, you do not need to put things in and take them out. It's so much easier this way. I am including pictures on how we scramble the egg in the same pan, I just love this trick! One last suggestion, have everything ready to go when you start, as it comes together very quickly once you start cooking. We always double the batch, my husband mans one skillet and I take the other. Please note, we have done our best to give accurate ingredient amounts, oil may need adjusted depending on your rice. I hope you enjoy this recipe as much as we do.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 11

3 tablespoons sesame oil (may need a splash more to completely coat rice)
1/2 cup sweet onion (finely chopped)
1/2 cup carrot (finely cubed or medium shredded)
1 cup cooked ham (finely cubed) or 1 cup Chinese barbecue pork (finely cubed)
3 cups cooked white rice
2 eggs (beaten)
1/2 cup frozen green pea (thawed)
1/2 cup water chestnut (sliced)
2 green onions (finely chopped)
1 teaspoon sesame seeds
kosher salt

Steps:

  • Preheat large skillet over medium high heat. Add sesame oil.
  • Add sweet onion and carrots. Cook until the carrots are tender, about two minutes.
  • Add the cooked ham (or pork) and combine well.
  • Add the rice, using a wooden spatula or spoon to separate the rice. Cook until the rice is well coated with the oil, adding a splash more oil if needed, but don't over do it or rice will come out oily.
  • Push the rice mixture to the sides of the pan, leaving the center of the pan open to cook the egg.
  • Pour in the beaten egg, cook in the center of the pan until well scrambled. Once the egg is cooked, stir in with the rice mixture.
  • Add the water chestnuts, green onions, peas and sesame seeds. Stir to combine and season to taste with salt.
  • Serve as is, or top with soy sauce, teriyaki sauce or my sons favorite, Recipe #419060, depending on your tastes.
