1 cup knorr sesame and ginger marinade, divided
6 boneless skinless chicken breasts
3 tablespoons maple syrup

Steps:

  • In a large resealable bag, combine 3/4 cup marinade with the chicken.
  • Turn to coat.
  • Seal the bag and marinate the chicken in the refrigerator for 30mins to 1 hour.
  • Meanwhile, combine remaining 1/4 cup marinade with the syrup, set aside.
  • Remove chicken from marinade and discard the used marinade.
  • Grill chicken 10 minutes or until cooked completely, brushing with marinade/maple syrup mixture.

1 tablespoon pure maple syrup
3 cloves garlic, smashed
Small bunch fresh thyme sprigs
Kosher salt and freshly ground black pepper
2 pounds bone-in chicken pieces, such as legs, thighs and breasts, halved
Olive or vegetable oil for brushing the grill grates
Serving suggestions: green salad, cornbread and/or your favorite barbecue sauce

Steps:

  • Stir the maple syrup, garlic, thyme, 1 tablespoon salt, a generous grind of pepper and 3 cups of water together in a large bowl until the salt is dissolved. Add the chicken, making sure it's completely covered by the brine. Cover and refrigerate for 2 to 3 hours.
  • Prepare an outdoor grill or grill pan for high heat.
  • Drain the chicken and pat very dry. Lightly oil the grill grates and grill the chicken, flipping occasionally, until no longer pink near the bone, 15 to 20 minutes (depending on the size of the chicken pieces). Serve with a salad, wedges of cornbread and/or your favorite barbecue sauce on the side.

3 tablespoons pure maple syrup or pancake syrup

Steps:

  • In large resealable plastic bag, pour 3/4 cup Lawry's® Sesame Ginger Marinade With Mandarin Orange Juice over chicken; turn to coat. Close bag and marinate in refrigerator 30 minutes.
  • Meanwhile, in small bowl, combine remaining 1/4 cup Marinade and syrup; set aside.
  • Remove chicken from Marinade, discarding Marinade. Grill or broil chicken 30 minutes, turning and brushing frequently with reserved maple syrup mixture during the last 10 minutes or until chicken is thoroughly cooked. Brining chicken breasts in a soy sauce and fish sauce marinade flecked with lime adds flavor and helps retain moisture while they are on the grill. Chicken breasts do particularly well when pounded into an even thickness and cooked quickly over a hot fire, which chars the exterior but keeps them juicy inside. But if you or anyone in your clan would prefer dark meat to white, this recipe will also work with boneless, skinless thighs, though you might have to add a minute or so to the cooking time. Or use a combination of breasts and thighs. Serve these with a cucumber salad and grilled eggplant in the heart of summer.

4 (6-ounce) boneless, skinless chicken breasts
2 tablespoons soy sauce
2 teaspoons Asian-style fish sauce
1 (2-inch) piece ginger, peeled and grated
3 garlic cloves, grated
2 limes, as needed
2 tablespoons peanut oil, more for grill
Sesame oil, as needed
Coarsely chopped cilantro, for garnish
Thinly sliced red or green chilies, seeded, for garnish (optional)

Steps:

  • Place chicken breasts between two sheets of parchment or plastic wrap. Using a mallet or rolling pin, pound each to an even thickness of 1/2 inch. Do not make them any thinner or they could dry out.
  • In a large bowl, whisk together soy sauce, fish sauce, ginger and garlic. Grate in zest of 1 lime and squeeze in its juice. Whisk in peanut oil. Place chicken breasts in bowl and turn breasts well to evenly coat with mixture. Cover and refrigerate for at least 1 hour and up to 4 hours. Remove chicken from fridge while you heat the grill.
  • Light the grill, building a hot fire, or heat your gas grill to high. Once grill is fully heated, brush breasts lightly with peanut oil and place chicken on the grill. Cook until undersides are browned and chicken is about halfway cooked, 3 to 5 minutes. Flip breasts and grill until cooked through, 3 to 5 minutes more.
  • Transfer chicken to a platter. Drizzle with sesame oil; garnish with lime juice and cilantro, and chiles if desired.
