VEGAN FRUIT FLAPJACKS

These energy-packed vegan fruit flapjacks are yummy, chewy and, above all, simple to make.

1 tablespoon agave nectar (or date syrup)
140 g coconut oil
110 g caster sugar
115 g all purpose flour
150 g rolled jumbo oats
2 teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon bicarbonate of soda
140 g dried fruit (finely chopped ( I used a mix of dried apricots, pears, cranberries and prunes))

Steps:

  • Preheat the oven to 160°C/ 320°F. Line a small square or rectangular baking tray or tin (about 18-20 cm large) with baking paper.
  • Add agave nectar, coconut oil and sugar into a medium saucepan and heat over a medium heat. Stir everything together until the sugar has melted and you have a syrupy consistency, then remove from the pan.
  • In a large bowl, mix together the flour, ginger, cinnamon, oats and mixed dried fruit until combined.
  • In a small bowl mix the bicarbonate of soda with a tablespoon of hot water, stir until dissolved and add into the bowl with the dry ingredients.
  • Pour in the prepared sugar mixture and mix all the ingredients together until evenly combined.
  • Spread the mixture into the prepared baking tray, using a wooden spoon to push the mixture into the corners and flatten the top.
  • Bake in the middle of the oven for about 20 minutes or until golden brown on top and nicely crisp on the edges.
  • Leave in the tray until cool.
  • Once cooled, cut into slices and serve. Transfer to an airtight box and store for up to 5-7 days.
  • Enjoy!

140g dairy-free spread
140g soft light brown sugar
2 tbsp golden syrup
175g rolled oats
75g chopped nuts of your choice
75g dried fruit (such as raisins, dried cranberries, chopped apricots)

Steps:

  • Heat the oven to 160C/140C fan/gas 4 and line a 20cm square baking tin with baking parchment.
  • Melt the dairy-free spread, sugar and syrup in a saucepan over a medium heat. Remove from the heat and tip in the oats, chopped nuts and dried fruit. Transfer to the tin, packing the mix in with the back of a spoon.
  • Bake for 30 - 35 mins until lightly golden and crisp around the edges. Leave to cool in the tin before slicing into squares. Keep in an airtight container for up to three days.

These vegan flapjacks are super simple and gloriously stodgy. Delicious.

250 g Oats
125 g Vegan Butter
90 g Caster Sugar
90 g Golden Syrup

Steps:

  • Preheat your oven to 180˚c (fan oven).
  • Place the 125g vegan butter, 90g caster sugar and 90g of golden syrup into a food processor and blitz until the butter is evenly creamed with the sugars.
  • Tip in the 250g oats and pulse until the oats have combined with butter. (if using jumbo oats, pulse a little longer until the oats are crumbly and reduced in size.)
  • Lightly grease a 20 x 20cm baking tin and tip in the flapjack dough. Press the mixture down gently so it evenly covers the tin. Place into the oven and bake for 13 - 15 minutes until golden brown.
  • Remove from the oven and allow the flapjacks to cool for at least 30 minutes before eating. They will be very soft at first but will harden into a wonderful stodgy texture as they cool. Cut the tray into 8 - 12 squares once cooled.

Toast oats before mixing them into the dough to make these fruity cookies, a delicious hybrid of syrupy flapjacks and coconut macaroons

125g jumbo oats
150g softened butter
100g light muscovado sugar
1 egg
1 tbsp golden syrup
½ tsp vanilla extract
100g self-raising flour
100g mixed dried fruit or raisins
75g dried apricots, finely chopped
50g desiccated coconut
½ tsp ground cinnamon (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Scatter the oats over a baking tray and bake for 20 mins, turning once until lightly browned. Remove from the oven and set aside to cool. Tip the butter and sugar into a bowl and beat with an electric whisk for 2 mins until fluffy. Crack in the egg and add the golden syrup and vanilla, then beat until completely combined. Scatter in the flour, all the dried fruit, the coconut, cinnamon (if using), the toasted oats and a pinch of salt. Beat again until everything is combined and you have a thick dough. Use the dough straightaway or cover and chill for up to two days.
  • Line two baking sheets with baking parchment and arrange six large spoonfuls of dough on each, well- spaced apart. Bake for 15 mins (or 18-20 mins if the dough is fridge-cold) until the cookies have spread and are brown at the edges but soft in the middle. Leave to cool on the baking sheet for 5 mins, then transfer to a wire rack and leave to cool completely. Will keep in an airtight container or tin for up to five days.

100g pitted medjool dates
1 ripe banana
1 tsp ground cinnamon
1 tsp vanilla extract
100g walnut halves
250g porridge oats
50g hemp seeds

Steps:

  • Line a 20 x 20cm square tin with parchment. Roughly chop the dates and cover with 100ml boiling water. Leave to soak for 10 mins.
  • Put the banana in a bowl, mash with a fork, then stir in the cinnamon, vanilla, a pinch of sea salt and the soaked dates along with their liquid.
  • Tip the mixture into a food processor with half of the walnuts and 100g of the oats. Pulse until you have a thick paste. Tip into a bowl and combine with most of the remaining nuts, oats and hemp seeds.
  • Heat the oven to 180C/160C fan/gas 4. Press the mixture into the lined tin, top with the remaining nuts and seeds and, bake for 20-25 mins until golden and firm. Leave to cool completely before cutting into nine squares.

50g butter, plus a little extra for greasing
2 tbsp smooth peanut butter
3 tbsp honey or maple syrup
2 ripe bananas, mashed
1 apple, peeled and grated
250g rolled oats
85g dried apricot, chopped
100g raisin
85g mixed seed (we used pumpkin and sunflower)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 20cm square tin with baking parchment. Heat the butter, peanut butter and honey or maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water, and mix to combine.
  • Tip the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Tip into the cake tin and level the surface. Bake for 55 mins until golden. Leave to cool in the tin. Cut into 12 pieces to serve or store in an airtight container in the fridge. They will keep for up to 3 days.
