College Student's Brilliant Doctored Chicken Fruit Salad image

The original version for this yummy fruity chicken salad recipe came from a college student who entered the Pillsbury Bakeoff on a whim, and managed to get picked as one of the 100 contestants. This recipe doctors up ordinary chicken salad. I made his recipe tonight for a light supper, and made quite a few changes, although it is still heavily based on his excellent recipe. For the granola, he used two granola bars (Nature Valley brand) and bashed them with a rolling pin to crush them inside their packages, which is what I did too, although you can also just use any loose granola you happen to prefer.

1/4 cup canned diced pineapple tidbits, drained
1/4 cup canned mandarin orange segments, drained
1/4 cup seedless grapes, quartered
1/4 cup diced apple (I used red delicious)
1/2 cup Miracle Whip or 1/2 cup mayonnaise
1 tablespoon brown sugar substitute or 1 tablespoon brown sugar
3/4-1 cup granola cereal (he used 2 roasted almond granola bars and crushed them inside the packages)
2 cups prepared plain chicken salad, from the deli
croissant, to serve
lettuce leaf, to serve

Steps:

  • Combine all the drained fruits together with mayo and brown sugar Splenda in a mixing bowl.
  • Add the prepared deli chicken salad and granola, stirring to combine.
  • Cover and chill until ready to serve.
  • Serve on large croissants with some lettuce.

1 large onion (chopped)
1 cup frozen peas
1 cup frozen corn kernels
1 tablespoon butter
4 cups cooked jasmine rice
4 garlic cloves (crushed)
6 large prawns (cooked and peeled)
2 tablespoons olive oil
3 tablespoons lemon juice
3 eggs (beaten)
2 tablespoons fresh chives (chopped)
1 dash mild curry powder
1 dash of pepper steak seasoning
2 slices ham (chopped)
fresh chives (chopped)

Steps:

  • Combine the onion, peas and corn and cook in the microwave for 3 minutes in a covered container with a dessertspoon of the butter.
  • Stir into the cooked jasmine rice.
  • Melt the remaining butter in a pan and cook the crushed garlic until soft.
  • Add the prawns to heat through.
  • Add the prawns and garlic to the rice with the olive oil and lemon juice.
  • Mix the 2 tablespoons fresh chives with the egg.
  • Place the egg mixture into the pan and cook in a little butter.
  • When cooked, cut into squares and add to the rice with the curry powder and the pepper steak seasoning.
  • Toss to combine.
  • Add ham and sprinkle with fresh chives.

3 cups cooked elbow macaroni
3 cups cubed cooked chicken
2 cups cubed peeled fresh peaches
1 cup sliced celery
1 cup halved strawberries
1 can (11 ounces) mandarin oranges, drained
3/4 cup pineapple tidbits, drained
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup chopped apple
1/2 cup golden raisins
1/2 cup chopped pecans
1 cup mayonnaise
1/4 cup orange juice
2 tablespoons sugar
1/2 teaspoon ground ginger
1/8 teaspoon pepper
Shredded lettuce

Steps:

  • In a large bowl, combine the first 11 ingredients. In a small bowl, whisk the mayonnaise, orange juice, sugar, ginger and pepper; pour over salad and toss to coat. Serve on a bed of lettuce.
