Time 55m

Yield 4

Number Of Ingredients 18

½ cup low-sodium soy sauce
½ medium orange, juiced
2 teaspoons sesame oil
2 teaspoons stevia powder
½ teaspoon garlic powder
⅛ teaspoon ground ginger
1 tablespoon vegetable oil
2 (8 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 cup broccoli florets
½ cup canned bamboo shoots, drained
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
½ cup chopped orange bell pepper
½ cup thinly sliced green onion
1 tablespoon black sesame seeds
1 cup cooked long-grain white rice
1 cup cooked wild rice

Steps:

  • Combine soy sauce, orange juice, sesame oil, stevia powder, garlic powder, and ginger for teriyaki dressing in a small saucepan. Bring to a boil over medium-high heat, stirring constantly; continue cooking until the mixture thickens slightly. Remove and set aside.
  • Heat a large skillet over medium-high heat. Add vegetable oil and heat until shimmering, 1 to 2 minutes. Add chicken and garlic; stir-fry for 2 to 3 minutes. Add broccoli and continue to stir-fry, 4 to 6 minutes. Add bamboo shoots and bell peppers; cook for an additional 4 to 6 minutes.
  • Carefully pour the teriyaki dressing into the skillet (watch for splattering); cook until chicken is no longer pink in the center and juices run clear, and the vegetables are tender, about 5 minutes more.
  • Remove from heat and stir in green onion and sesame seeds, reserving some of each for garnish. Serve immediately over cooked white and wild rice with the reserved green onions and sesame seeds.

CRISPY SESAME CHICKEN

Crispy sesame chicken image

Level up a take-out favorite by making this crispy sesame chicken in easy sticky sauce at home. Add rice or noodles for a delicious family dinner.

Provided by Alida Ryder

Categories     Dinner

Time 50m

Number Of Ingredients 15

500 g (1lb) chicken breasts (cubed into bite-size pieces )
1 egg (beaten)
2 tbsp soy sauce
1 cup flour
½ cup cornstarch / cornflour
oil (for frying)
1 tbsp canola / vegetable oil
3 garlic cloves (crushed )
1/3 cup soy sauce
1/3 cup water
¼ cup brown sugar (You could add up to one third cup sugar if you prefer the sauce to be sweeter.)
2 tbsp rice vinegar / lemon juice
2 tsp sesame oil
2 tbsp sesame seeds
1 tbsp cornstarch / cornflour (mixed with 2 tbsp water )

Steps:

  • Place the chicken in a bowl then add the egg and soy sauce. Massage the egg and soy into the chicken well then allow to sit for a few minutes while you make the sauce.
  • To make the sauce, heat the oil in a large pan then cook for garlic for 30 seconds until fragrant.
  • Pour in the soy sauce, water, sugar, vinegar and sesame oil. Bring to a simmer then pour in the cornstarch slurry. Reduce the heat then simmer until the sauce is thick and glossy. Remove from the heat and set aside.
  • Heat enough oil to fry the chicken in a deep pan or pot. Place a wire rack over a sheetpan.
  • Combine the flour and cornstarch in a separate bowl then coat the chicken in the flour mixture, making sure each piece is completely covered.
  • Carefully add the chicken to the hot oil, cooking in batches to avoid over-crowding the pan, until the chicken is golden brown and crisp. Remove with a slotted spoon and allow to drain on the wire rack while you cook the remaining chicken.
  • Place the pan with the sauce back on the heat and bring to a simmer. Add the fried chicken and sesame seeds to the pan then toss to coat the chicken in the sauce. Season to taste with more soy, vinegar or sesame oil as necessary then serve over rice or noodles.

EASY SESAME CHICKEN STIR-FRY

Easy Sesame Chicken Stir-Fry image

There is no sauce to this recipe, and you may omit the sesame oil if desired, the chicken is still great with just the added soy sauce, but I suggest to increase if you are not using the sesame oil --- unless you have a huge wok you will need to make this in two batches so the chicken will cook evenly --- this is quick and very easy to make, to save time you may slice the breasts up 24 hours in advance --- my family like lots of heat so I most always add in 1 teaspoon crushed chili flakes, do not make this omitting the cornstarch it will not be the same --- all ingredients may be adjusted to taste, serve with cooked rice or noodles :)

4 tablespoons vegetable oil
1 teaspoon seasoning salt, divided
fresh ground black pepper (to taste)

STIR-FRIED HOISIN CHICKEN WITH SESAME SEEDS

Stir-Fried Hoisin Chicken With Sesame Seeds image

Simply delicious. Even my picky kids approved! I used black sesame seeds and it works out well. I think the white sesame seeds would offer a better color contrast in the dish. Frankly, I don't think the water chestnuts would be missed. Take care not to over cook, the veggies will be mushy and the chicken tough. Another great recipe from "The Big Book of Chicken" by Maryana Vollstedt. Great with my recipe for Thai Cucumber Salad recipe#415110 UPDATE: 5/11 I have made this several time since I first posted. Feel free to add mushrooms, pea pods, green beans, matchstick carrots or any of your favorite Asian friendly veggies.

  • Sesame Chicken: Dice chicken to small bite-sizes (small cube shape) and season with salt, pepper, ginger, arrowroot powder, and olive oil. Mix well and set aside.
  • Sesame Chicken Sauce: Pulse dates, garlic clove, and ginger in a small food processor a few times until finely chopped. Add the rest of ingredients under “sauce”. Toss/blend a few more times until the sauce is smooth and no fruit chunks.
  • Pan-fry: Pre-heat a large stainless steel skillet (without oil) over low heat until it’s well heated (about 4-5 mins), add avocado oil and pan fry the chicken in separate batches (not to overcrowd the skillet). Don’t touch or move the chicken pieces until you see the bottom layer is in golden brown then cook the flip side until they are about 90-95% cooked through. Set aside with chicken juice in the skillet.
  • Combine: Add a bit more cooking oil to the skillet, saute ‘aromatics’ with a sprinkle of salt until fragrant. Add 3-4 heaping tbsps of sesame chicken sauce*, quickly stir-fry the sauce with aromatics for 8-10 seconds then add the chicken back to the skillet. Coat the sauce over chicken pieces and stri-fry for a few additional minutes until they are cooked through. Garnish with sesame seeds and chopped scallions. Serve hot and immediately with steamed broccoli florets or any simple mixed green salad of your choice.
