FRIED BROWN RICE WITH SHRIMP AND VEGETABLES
Add carrots, peas and scallion to this shrimp dish with egg and brown rice.

Steps:
- Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop out onto a plate.
- Add the shrimp to the skillet, sprinkle with 1/4 teaspoon salt and cook, stirring constantly, until just cooked through, about 3 minutes. Transfer to a bowl. Add the remaining tablespoon oil, then add the watercress, carrots, peas, garlic, soy sauce, and 1/4 teaspoon salt and cook, stirring constantly, until the watercress wilts and the peas heat through, 2 to 3 minutes.
- Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, shrimp, and any juices to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the scallions and sesame oil and serve.
SESAME RICE
This is how I love my brown rice. I always use short grain rice, adding about 1/2 cup more water than called for. With a splash of soy sauce, I'm in heaven!

Steps:
- In a saucepan with a tight-fitting lid, toss the rice with 1/2 teaspoons of the sesame oil to coat the grains.
- Add the water, cover, and bring to a boil, then reduce the heat and simmer until the rice is tender, about 40 to 45 minutes.
- Stir in the scallions, sesame seeds, the remaining sesame oil, and soy sauce to taste.
- Enjoy!
- Note:.
- Toast sesame seeds in a single layer on an unoiled baking tray at 350*F for 2 to 3 minutes, until fragrant and golden.
- Watch carefully, so as not to burn!
SESAME SHRIMP AND GREENS WITH RICE
Steps:
- Whisk soy sauce, honey, sesame oil, ginger, rice vinegar, pepper flakes and garlic in a large bowl. Add shrimp and toss to coat. Refrigerate for 20 to 30 minutes. Remove shrimp from marinade and reserve marinade.
- Preheat a grill to medium-high heat.
- Prepare 4 large sheets of aluminum foil. Spray each with nonstick cooking spray. Scoop 1/2 cup rice into the center of each sheet. Top each with 1 cup spinach, 1/4 cup zucchini and 1/4 cup snap peas. Divide shrimp evenly among the packets. Spoon remaining marinade over each packet. Fold each packet to close (not too tight), leaving the seam side up.
- Place packets, seam-side up, on the grill. Cook until shrimp is cooked through, 12 to 15 minutes. Remove and open packets carefully.

- In a medium skillet, saute sesame seeds in butter for 2-3 minutes or until golden. Add rice, celery and onion; saute until the rice is browned. Spoon into an ungreased 1-1/2-qt. baking dish. Dissolve bouillon and salt in water; pour over the rice mixture. Cover and bake at 325° for 50-60 minutes or until rice is tender.

BROWN RICE WITH SESAME SEEDS
I have been making this for years as a variation on the way my folks taught me how to make white rice.

Steps:
- Saute rice in butter just until translucent and very lightly browned.
- Add onion and sesame seeds, and continue browning until onion is translucent, stirring frequently to prevent onion from burning.
- Drain any excess butter or olive oil.
- Add stock or water carefully to prevent steam burns; it WILL blow steam!
- Adjust heat for a slow simmer, cover, and cook about 45-50 minutes, stirring gently every 15 minutes.
- If all liquid is not absorbed, remove cover and continue cooking for up to another 15 minutes.
- Fluff with a fork before serving.

- Place masala spice ingredients in dry frying pan and toast slightly till seeds start to pop and you can smell them. Remove from pan and place in spice grinder(I use coffee grinder) and grind to powder. Set aside.
- Wash the rice three times and boil in 4 cups lightly salted water until tender, about 20-25 minutes.
- Chop the cucumber finely and set aside.
- While the rice is cooking, wash and prepare the vegetables. Slice the green onions finely. Chop radishes coarsely. Chop the carrot into small pieces. Heat the oil in a wok or pan and stir fry the garlic for 40 seconds. Add the prepared vegetables and stir-fry for 3 minutes. Add the sesame seeds after 2 minutes. Add masala spice powder and stir for a minute or so to mix well.
- When the rice is tender, drain and stir in the fried vegetables and sesame seeds. Stir in the sesame tahini.
- Sprinkle with a little soy sauce and lemon juice and serve hot with sesame tahini to taste.
- Top with chopped cucumber for garnish.
