BEEF AND VEGETABLE STIR-FRY



Beef and vegetable stir-fry image

Super simple and super fast, this stir-fry ticks all the boxes for a perfect one-pan meal. The convenience of bottled stir-fry sauce keeps prep to a minimum, but if you want to make an easy from-scratch sauce, simply whisk together 2 tablespoons low-sodium soy sauce, 1 teaspoon toasted sesame and oil and 1/4 teaspoon cornstarch and add it in Step 2 as directed. Using equal parts soy sauce and freshly squeezed orange juice in the mix is another nice twist since orange complements many stir-fries. A sprinkle of chopped fresh cilantro or basil would be welcome here too.

Steps:

  • Heat ginger and garlic in oil in a large skillet over medium-high heat until fragrant, 30 seconds; add beef, mushrooms, snow peas, carrots, and water chestnuts. Stir-fry until beef is cooked through and vegetables are tender, about 3-5 minutes.
  • Stir in sauce; heat through. Sprinkle with red pepper flakes and peanuts; garnish with scallions.
  • Makes 1 serving.

2 tablespoons packed light brown sugar
2 tablespoons low-sodium soy sauce
2 teaspoons cornstarch
2 tablespoons toasted sesame oil
8 ounces top round steak, thinly sliced against the grain
2 bunches scallions, cut into 1-inch pieces
1/2 English cucumber, quartered and cut into 1-inch pieces
1/2 head napa cabbage, cut into 1-inch-thick strips
1 cup shredded carrots (about 2)
1 tablespoon minced peeled ginger
2 red jalapeno peppers, halved, seeded and thinly sliced
3 cups cooked white rice, for serving

Steps:

  • Whisk the brown sugar, soy sauce, cornstarch, 2 tablespoons water and 2 teaspoons sesame oil in a bowl. Add the steak and toss.
  • Heat a large skillet over high heat; add 2 teaspoons sesame oil. Add the scallions, cucumber and cabbage; stir-fry until the vegetables start softening, about 2 minutes. Add the carrots and 1/4 cup water; cook, stirring, until the water evaporates and the vegetables are tender, 2 to 3 minutes. Transfer to a bowl; wipe out the skillet.
  • Heat the remaining 2 teaspoons sesame oil in the skillet over medium-high heat. Add the ginger and jalapenos; stir-fry 30 seconds. Transfer the steak to the skillet using a slotted spoon; stir-fry until browned, 2 to 3 minutes.
  • Add the steak marinade back to the skillet and cook, stirring, until thick, about 2 minutes. Return the vegetables to the skillet and heat through. Serve over rice.

1 (1 lb) lean flank steak
1 teaspoon five-spice powder
1 tablespoon dark sesame oil
1 1/2 tablespoons minced peeled fresh ginger
3 garlic cloves, minced
2 cups red bell peppers, strips
2 cups yellow bell peppers, strips
1/2 cup no-salt-added beef broth
3 tablespoons low sodium soy sauce
1 tablespoon cornstarch
4 cups thinly sliced bok choy
1 tablespoon sesame seeds, toasted
1/4 teaspoon salt
4 cups hot cooked rice

Steps:

  • Trim fat from steak; rub surface of steak with five-spice powder. Slice steak diagonally across grain into thin strips.
  • Heat oil in a large nonstick skillet over medium heat. Add ginger and garlic, and stir-fry 2 minutes. Add beef, and stir-fry 4 minutes. Add bell peppers, and stir-fry 2 minutes. Combine broth, soy sauce, and cornstarch in a small bowl. Add to beef mixture. Add bok choy, and cook 1 minute or until bok choy wilts and mixture thickens, stirring constantly. Remove from heat, and stir in toasted sesame seeds and salt. Serve over rice.

I didn't feel like grilling yet another steak tonight, and I had some vegetables that needed to be used up, so I came up with stir-fry. Feel free to substitute whatever vegetables you have on-hand or like better. The sauce has a nice bite, so reduce or omit the red pepper flakes if that's not what you like.

1 -1 1/2 lb beef steak (your choice, I used sirloin)
1 cup green pepper, chopped
1 cup baby carrots, halved lengthwise (or quartered depending on size)
1 cup celery, sliced
1 cup mushroom, sliced
3/4 cup red onion, chopped
3 garlic cloves, minced
1 (8 ounce) can sliced water chestnuts
1 tablespoon butter
1/4 cup low-sodium low-fat chicken broth
1/4 cup low sodium soy sauce
2 teaspoons rice vinegar
2 teaspoons toasted sesame oil
3/4 teaspoon red pepper flakes
1 teaspoon sugar
2 tablespoons flour

Steps:

  • Chop all the vegetables first, you won't have time if you start cooking first.
  • Cut the steak into bite-sized pieces, or strips against the grain if you prefer. In a small bowl or measuring cup, mix sauce ingredients together well with a whisk.
  • In a wok or huge skillet, melt the butter over medium-high heat until very hot, then add the garlic, onion, and steak pieces. Stir-fry 3-5 minutes, until meat is mostly browned.
  • Add all the vegetables; stir-fry 2-3 minutes. Pour the sauce over the entire pan, and continue stir-frying another 5-10 minutes, until steak is desired done-ness and vegetables are crisp-tender.
  • Serve over rice.

Steps:

  • Combine soy sauce, 4 Tbsp oil, honey, mustard and red pepper into bowl and add in steak. Mix and Bag -- will marinate as it defrosts.
  • Slice and bag -- 1 medium onion.
  • 1 red pepper.
  • 1 green pepper.
  • broccoli florets (either use frozen or make sure to blanch broccoli first. me FROZEN!).
  • Put both bags in a large bag with a copy of the instructions and enjoy!

1 lb flank steak, thinly sliced on bias (or boneless sirloin steak)
8 green onions, cut into 1 inch pieces (white and light green part only)

Steps:

  • Combine first 5 ingredients in a small bowl. Heat wok or skillet over high heat. Add oil to pan; swirl to coat. Add half of the beef to pan, and cook for 3 minutes or until browned. Remove the beef from pan and repeat procedure with remaining beef. Add onions; cook for 1 minute. Add soy sauce mixture; cook 1 minute. Return beef to pan; cook 1 minute. 2 cups brown rice (about 1/2 C uncooked)
1/2 lb lean ground beef (93% fat free)
1 tablespoon toasted sesame oil (sub Core oil or use WPAs)
2 garlic cloves, minced
3 green onions, sliced
1 cup broccoli coleslaw mix (found near bagged salads in produce dept)
1 cup napa cabbage, shredded
1 tablespoon light soy sauce
crushed red pepper flakes, to taste

Steps:

  • Prepare brown rice according to its package directions.
  • While the rice is cooking, in a medium skillet or wok, brown the ground beef over medium heat until no longer pink. Remove the beef from the skillet, drain & set aside.
