Steps:

  • Cut 1 bunch asparagus into thirds. Heat 2 teaspoons sesame oil in a skillet over medium heat. Cut a 1-inch piece ginger into matchsticks, add to the skillet and cook, stirring, 1 minute. Add 3 cups quartered shiitake mushroom caps and 1 sliced garlic clove and cook, stirring, 2 minutes. Add the asparagus and 1/3 cup water; bring to a boil, cover and cook until crisp-tender, 3 minutes. Add 1 tablespoon each soy sauce and butter; cook, stirring, 1 minute. Season with salt and pepper.

Remember those sesame noodles I used to order in New York as a cash- strapped actress? Well, I've re-created my own recipe here and, in my humble opinion, it's even better than the original. Best part? This is a cinch to make.

8 ounces Chinese egg noodles, cappellini, or pad thai- style rice noodles
1 tablespoon peanut oil
1/4 cup peanut butter
1/2 teaspoon toasted sesame oil
3 tablespoons rice vinegar
1/4 cup soy sauce
2 teaspoons toasted sesame seeds
1 tablespoon honey
2 tablespoons freshly grated ginger, or 1 tablespoon ground ginger
2 garlic cloves, minced
1 tablespoon red pepper flakes
1 tablespoon sriracha or other red chile sauce
2 Persian cucumbers, 1 grated, 1 thinly sliced
1 scallion, chopped
1/4 cup salted roasted peanuts, chopped
1/4 cup fresh cilantro leaves, chopped

Steps:

  • Bring a pot of water to a boil. Prepare a bowl of ice water.
  • Cook the noodles in boiling water until al dente, 3 to 5 minutes. Drain and transfer to a bowl of ice water and soak for 5 minutes, until well chilled. Drain again, return to the bowl, toss with the peanut oil, and set aside.
  • In a large bowl, whisk together the peanut butter, sesame oil, rice vinegar, soy sauce, sesame seeds, honey, ginger, garlic, red pepper flakes, and sriracha. Fold in the grated cucumber, half the scallion, and half the peanuts. Add the chilled pasta and toss to coat thoroughly. Transfer to a serving bowl, twirling the pasta into a nest shape. Top with the sliced cucumber, cilantro, and the remaining scallion and peanuts.

1/4 cup reduced sodium soy sauce
3 tablespoons rice wine vinegar
2 tablespoons hoisin sauce

1/4-1/2 teaspoon red pepper flakes
2 cups water
2 (3 ounce) beef-flavor ramen noodles (plus seasoning packet)
4 scallions, sliced
1 teaspoon sesame oil
2 tablespoons oil (divided)
1 lb boneless sirloin, thinly sliced across grain
4 garlic cloves, minced
1 lb asparagus, thinly sliced diagonally
toasted sesame seeds
green onion (to garnish)

Steps:

  • In a bowl mix together, soy,rice vinegar, hoisin sauce, brown sugar, chopped ginger, 2 tsps. sesame oil cornstarch and pepper flakes, set aside.
  • To 2 cups boiling water andd two beef ramen noodles, 1 seasoning packet, 4 scallions and 1 teaspoons sesame oil. Cook one minute, remove from heat; let stand covered.
  • In a large skillet heat oil, add boneless sirloin and garlic and stir fry until lightly browned. Remove beef, keep warm. Add second Tbls. of oil add asparagus; stir fry until done to your taste.
  • Add beef and soy mixture to skillet. Stir fry until thickened. Sprinkle with toasted sesame seed and more green onions. Toss with noodles and serve.

1 pound asparagus
2 tablespoons peanut oil
2 tablespoons minced shallots
1 tablespoon sesame seeds
2 teaspoons soy sauce (low sodium, if desired)
Dash of toasted sesame oil
Freshly ground black pepper

Steps:

  • Trim tough ends from asparagus spears. Set spears aside.
  • Heat a 10-inch cast-iron skillet for about 2 minutes over medium-high heat. Add 1 tablespoon peanut oil and half of the asparagus in a single layer.
  • Cook for 3 to 4 minutes without turning. Shake pan occasionally. Turn, and cook 3 minutes more. Asparagus should be bright green with brown spots.
  • Add 1 tablespoon shallots and half the sesame seeds, and cook, shaking the pan to toss asparagus, for 1 to 2 minutes or until shallots are transparent. Do not let them burn.
  • Add half the soy sauce, sesame oil, and pepper, and cook 30 seconds. Transfer to a plate, and keep warm. Repeat with remaining asparagus. Keep warm until ready to serve.

Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang - an ambitious restaurateur who emigrated from Sichuan to Taipei to New York - firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan's Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

Steps:

  • Bring a large pot of water to a boil. Add noodles and cook until barely tender, about 5 minutes. They should retain a hint of chewiness. Drain, rinse with cold water, drain again and toss with a splash of sesame oil.
  • In a medium bowl, whisk together the remaining 2 tablespoons sesame oil, the soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic and chili-garlic paste.
  • Pour the sauce over the noodles and toss. Transfer to a serving bowl, and garnish with cucumber and peanuts.

Steps:

  • Mix the marinade ingredients together, stirring to dissolve the sugar.
  • Bring a large pot of water to a boil. Add salt and the asparagus.
  • Cook until bright green and tender but still firm, just a few minutes. Scoop the asparagus out, rinse it under cold water, and set on a towel to dry.
  • Pull the noodles apart with your fingers, add them to the boiling water, and give them a quick stir. Boil until tender but not overly soft, tasting them often as they cook. It should take only a few minutes. Pour the noodles into a colander and immediately rinse under cold water. Shake off the excess water.
  • Toss the noodles with all the marinade and most of the scallions, sesame seeds and asparagus.
  • Mound them in a bowl or on a platter, then garnish with the remaining asparagus, scallions and sesame seeds.

2 tablespoons oriental sesame oil
1/4 cup tamari soy sauce
2 tablespoons vegetable stock
2 tablespoons chinese rice wine
1/2 teaspoon chili oil
1 lb linguine
1 tablespoon vegetable oil
2 garlic cloves, minced
1 teaspoon fresh ginger, minced
1 pint asparagus, cut diagonally into 2-inch lengths
1/4 cup water
1 teaspoon tamari soy sauce
4 scallions, thinly sliced

Steps:

  • Bring a large pot of water to a boil for the noodles.
  • Toast the sesame seeds by placing them in a small skillet over medium heat. Swirl the pan.
  • Occasionally until the seeds begin to smoke and become fragrant. Immediately pour them into a small bowl to cool.
  • Combine the sesame oil, tamari, vegetable stock, wine, and chili oil in a measuring cup and set aside. This will be the sauce for the noodles.
  • When the water is at a rolling boil, cook the noodles until tender yet chewy.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger and cook 1 minute. Add the asparagus and stir-fry 1 minute. Pour in the water and cover the pan. Cook until the asparagus pieces are tender, about 5 minutes.
  • Drain the noodles and return them to the pot. Pour on the prepared sauce and toss with tongs to coat.
  • 7. Remove the cover from the asparagus. Pour on the teaspoon of tamari and the scallions and toss for 1 minute. Serve on the noodles. Garnish with sesame seeds.

2 chicken legs, cooked
1½ tbsp sesame seeds
4 wholewheat noodle nests
160g frozen edamame beans
160g long-stemmed broccoli , cut into small florets
1 tbsp tahini
2 tbsp sesame oil
2 tsp honey
1½ tbsp low-sodium soy sauce
1 tbsp rice wine vinegar

Steps:

  • Boil the kettle. Remove the chicken skin, then shred the meat and discard the bones. Set aside. In a large pan, toast the sesame seeds for 1 min until golden, then tip into a large bowl (big enough to hold the noodles).
  • Fill the pan with water from the kettle and bring back to the boil. Add the noodles and cook following pack instructions. Tip in the beans and broccoli for the last 2 mins.
  • Meanwhile, mix the tahini, sesame oil, honey, soy sauce and vinegar into the sesame seeds. Drain the noodles, reserving a cup of the cooking water, and run under cold water to cool. Drain again and toss through the sauce along with the chicken. Add a splash of the cooking water to make the sauce thin enough to coat the noodles (it will thicken as it cools). Transfer to containers and chill until ready to eat, if not eating straight away.

3 tablespoons soy sauce, or to taste

Steps:

  • Bring a large pot of water to a boil and salt it. Prepare the vegetables: trim, seed, peel as necessary and cut into bite-size pieces. Reserve in a container until ready to use.
  • Cook the noodles in the boiling water until tender but not mushy. When they're done, rinse in cold water, then toss with a little sesame oil. Store in one or more containers.
  • Whisk together the sesame oil and tahini, sugar, soy, ginger, vinegar, hot oil and pepper in a large bowl. Thin the sauce with hot water until it's about the consistency of heavy cream; you will need 1/4 to 1/2 cup per serving; store as desired.

3 garlic cloves, minced
1 tablespoon red wine vinegar
1 tablespoon brown sugar
6 tablespoons chunky peanut butter
1/4 cup soy sauce
6 tablespoons sesame oil
1 tablespoon hot chili oil (optional)
2 cooked boneless skinless chicken breast halves
5 tablespoons sesame seeds, toasted
1 lb thin asparagus, trimmed
3 scallions, white bulb and inches green cut up
1 small cucumber, halved and seeded cut into 1/4 inch dice

Steps:

  • Bring a large pot of water to boil. Add the linguine and cook until just tender. Drain and rinse under cold water. Drain again, and set aside in a large mixing bowl.
  • Place the garlic, vinegar, brown sugar, peanut butter and soy sauce in a food processor. Process for one minute. With motor running, slowly add the sesame and chile oils through the feed tube, and process until well blended.
  • Shred the chicken into 2 inc julienne and toss with linguine. Add the sauce and 4 T of the sesame seeds and toss to coat well.
  • Cut the asaragus on a diagonal into 1 inch lengths. Blanch in a saucepan of boiling water for 1 minutes. Drain, rinse under cold water and pat dry.
  • Place the linguine and chicken in a large flat serving bowl and arrange the asaragus on top. Sprinkle with scallions, cucumber and remaining sesame seeds.
  • Serve at room temperature.

SALMON WITH SESAME, SOY & GINGER NOODLES

This simple, Asian-inspired fish and fried noodle dish makes a perfect casual, mid-week supper

4 tbsp dark, light, low-salt (or a mixture) soy sauce
4 tbsp rice wine or mirin
1 stem ginger, finely chopped, plus 2 tbsp syrup from the jar
1 garlic clove, crushed
2 salmon fillets
140g any noodle
2 tbsp sesame seed
2 spring onions, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small jug, whisk together the soy, rice wine or mirin, stem ginger and syrup, and garlic. Line a roasting tin with baking parchment and put the salmon in it. Pour over half the sauce, then bake for 15 mins until the salmon is cooked through.
  • Meanwhile, bring a large pan of water to the boil. Add the noodles and cook following pack instructions, then drain well.
  • In a small frying pan, lightly toast the sesame seeds for 1 min, then add to the cooked noodles (reserving a sprinkle for the top). Pour the remaining sauce over the noodles, plus any from the roasting tin, and toss together. Serve with the salmon, scattered with the chopped spring onions and remaining sesame seeds.

1 1/2 lbs asparagus, thin, trimmed on the bottom and cut diagonally into 2 inch pieces
1 tablespoon canola oil
1 tablespoon fresh ginger, chopped and peeled
1 tablespoon reduced sodium soy sauce
1/4 tablespoon crushed red pepper flakes
1 teaspoon sesame seeds
1 teaspoon sesame oil

Steps:

  • In a skillet, heat 1 cup water to boiling over high heat.
  • Add asparagus, heat to boiling.
  • Reduce heat to medium once it boils.
  • Cover and cook for 4-5 minutes or until asparagus is tender-crisp.
  • Drain the asparagus in a colander, the nimmediately plunge into a large bowl of ice water to stop it from cooking. Drain the asparagus from the ice water.
  • Carely wipe skillet dry with paper towels. Add canola oil, heat it over high heat until hot. Add the asparagus, ginger, soy sauce and crushed red pepper and cook for 1-2 minutes or just until asparagus is heated through.
  • Remove the skillet from the heat and stir in sesame seeds and sesame oil. Coat thoroughly.
  • Serve immediately.
