SEMINOLE GOLD BARBECUE SAUCE
I've always been fond of the Mustard based barbecue sauces found in South Carolina. This sauce reminds me of that sauce. Excellent on pork and chicken. Being a graduate of Florida State, I call it "Seminole Gold"

- In a heavy non-reactive saucepan, combine mustard, brown sugar, vinegar and beer.
- Season with chili powder, black, white and cayenne pepper.
- Bring to a simmer over medium high heat.
- DO NOT BOIL, or you will scorch the sugar and peppers.
- Reduce heat and simmer for about 20 minutes.
- Mix in the Worcestershire sauce, butter, and liquid smoke.
- Simmer for another 15 to 20 minutes.
- Add a few dashes of the hot sauce to taste.
- Pour into an airtight jar and refrigerate over night to allow flavors to blend.
- This will keep in fridge for a couple of weeks.

This is one of my favorite tomato-based barbecue sauces. It's great on turkey, chicken, pork and, of course, beef! This is the sauce on turkey meatballs.

SMOKY TEX-MEX BARBECUE SAUCE
This is one of the best barbecue sauces I have tasted in a long time. It can be used as a marinade, a basting sauce and a dipping sauce. I used it for pork ribs but it would be good with chicken, too.

Steps:
- In a saucepan, heat the oil over medium heat; fry the garlic and onion, stirring occasionally, until softened, about 3 minutes.
- Add the ketchup, water, vinegar, sugar, chili powder, oregano, Worcestershire sauce, cumin, mustard, salt and liquid smoke; bring to a boil.
- Reduce the heat and simmer until slightly thickened, about 3 minutes.
- Let cool before using for marinating or basting. If using as a dipping sauce, measure off the required amount, reheat and thin with a little water.
COUNTRY STYLE RIBS AND POTATO WEDGES
Easy weeknight barbecue, with a deliciously different mustard based barbecue sauce that comes together quicker than you might think. This makes a sweet sauce. If you like yours more tangy, you can reduce the sugar and increase the vinegar. I like it on the potatoes, too. Round out the meal with some green veggies or a crisp salad, and shake up your usual routine.

- Saute onion in 1 tbps oil until softened, add remaining sauce ingredients, and cook until reduced to a thick barbecue sauce consistently, about 20-30 minutes. Puree in blender or with stick blender, if desired. Allow to cool to room temperature.
- Preheat oven to 400°F.
- Meanwhile, sprinkle ribs generously with rub. You will probably not use all the rub, leftovers are good on chicken, vegetables, etc. Allow to sit while the sauce finishes reducing.
- Toss potatoes with remaining oil and a little more rub.
- Cook ribs on charcoal or indoor grill, on medium heat until cooked through and nicely browned, about 20 minutes.
- Meanwhile, bake potatoes on a large baking sheet, about 20 minutes.
- Toss ribs in sauce, reserving some for dipping, if desired.

CAROLINA BBQ GOLD SAUCE
A slightly sweet, mustard-based barbecue sauce popular in South Carolina for use when grilling or roasting chicken and pork. Recipe is for a mild version - with an optional Hot version. If you like really browned chicken, start basting early; otherwise, baste frequently after the first 30 minutes of grilling. For crockpot BBQ, add 1 cup of sauce the crockpot with Boston butt, and cook until very tender. Remove and discard excess fat from pork. - Slowly add vinegar, whisking till blended.

TOMATO BASED BARBECUE SAUCE
I was responsible for this recipe in class. It is not the typical BBQ sauce, but is out of this world. The list of ingredients may be long, but it is well worth it!! The will yield 1 qt of sauce, enough for 3-4 slabs of ribs or 4-6 chickens. It can also be canned. Just follow the instructions for canning high acid foods. This is also a mild sauce, but you may add 1/4 tsp. of cayenne pepper (or to taste) for a hotter sauce. The chiles used in this recipe are the large dried MILD red chiles called California or New Mexico chiles.

- Saute until the onion is translucent, about 5 minute.

BEST BARBECUE SAUCE
My hubby eats this stuff by the gallon it's good on anything. It's perfect with my pulled pork recipe. We use it on chicken, pork, even as a dip for homemade chicken fingers. I have no idea how many servings this has. I just put in a number.
