BLACKBERRY CHIPOTLE SAUCE

Steps:
- 1. Heat oil in pan over medium heat til it shimmers. Add onion and sweat til softened, 3 minutes. Stir in 1 cup blackberries, broth, brown sugar and chipotle. Bring sauce to simmer and cook til blackberries are softened and mixture slightly reduces. This should take about 2 minutes.
- 2. Whisk together lime juice and cornstarch; whisk into blackberry mixture til it thickens. add remaining 1 cup blackberries. Season sauce with salt and garnish with chopped cilantro.

Blackberries give a unique twist to this smoky barbecue sauce.

Steps:
- Combine all ingredients and bring to a boil over medium high heat and stir constantly for 5 minutes.
- Crush blackberries and chipotle pepper as you stir.
- Remove from heat and let cool 10 minutes.
- Spoon mixture into fine sieve and press until solids are all that remains in the sieve.
- Discard solids and serve sauce as desired.

Steps:
- Season steaks with salt, pepper and garlic.
- Heat oil over medium-high heat until almost smoking.
- Sear the steaks in the hot oil for 3 minutes per side for medium-rare.
- Transfer the steaks to a serving plate, tent with foil, and let stand.
- Using the same skillet, add the red wine, scraping up any browned bits on the bottom of the pan.
- Let wine boil until reduced by half.
- Add broth, blackberry preserves and chipolte pepper.
- Return to a boil and reduce by half. (The sauce should coat the back of a spoon.).
- Whisk in the butter.
- Season sauce with additional salt and pepper, to taste.
- Drizzle sauce over the steaks.
