ORANGE VINAIGRETTE



Orange Vinaigrette image

A quick and simple Orange Vinaigrette that delivers an explosion of flavors that are both bright and spicy with a touch of sweetness. Use on salads, vegetables, poultry, or pork. Makes about 1/2 cup.

¼ cup frozen orange juice concentrate (thawed)
1 tablespoon apple cider vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1 garlic clove (minced, (about 1/2 teaspoon))
½ teaspoon kosher salt (or to taste)
¼ teaspoon pepper
Pinch of crushed red pepper (optional)
¼ cup extra virgin olive oil

Steps:

  • Place all the ingredients except for the olive oil in a bowl and whisk together to combine.
  • Drizzle in the olive oil while whisking until it's emulsified.
  • Keep stored in the fridge.
  • Serve over your favorite greens, vegetables, chicken, pork, or fish.

¼ cup freshly squeezed orange juice
1 tablespoon raw honey
¼ cup olive oil
2 tablespoons white wine vinegar
½ teaspoon grated orange peel
¼ teaspoon salt
⅛ teaspoon cayenne pepper

Steps:

  • Combine the parsley, orange juice, honey, olive oil, white wine vinegar, grated orange peel, salt, and cayenne pepper in a blender, and pulse until blended. Refrigerate 4 hours for best flavor. Shake gently just before serving.

1/3 cup fresh orange juice
1 teaspoon sugar
1 teaspoon anise seeds, coarsely ground with a mortar and pestle or in an electric coffee/spice grinder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup extra-virgin olive oil
For salad
1 (1 1/4-lb) fennel bulb (sometimes called anise; preferably with fronds), quartered lengthwise
2 pears
1 3/4 lb radicchio (2 medium heads), thinly sliced

Steps:

  • Make dressing:
  • Whisk together all dressing ingredients in a large bowl until combined well.
  • Make salad:
  • Tear enough fennel fronds, if using, into small sprigs to measure 1/2 cup. Trim fennel stalks flush with bulb and discard stalks. Cut out and discard core of bulb, then cut bulb lengthwise into thin strips. Peel and core pears, then cut into 3-inch-long matchsticks. Add fennel strips and fronds to dressing along with pears and radicchio and toss well.

1 red onion, cut in 1/2 and thinly sliced
A small bunch flat-leaf parsley, roughly chopped
Sea salt and freshly ground black pepper
7 ounces (200 grams) Manchego cheese

Steps:

  • Remove the skin and pith from 4 of the oranges, slice across thinly and remove the pips. Arrange on a serving plate then sprinkle over the onion and parsley. Season with sea salt and freshly ground black pepper. Dress the salad with a couple of squeezes of the remaining orange, then stick a small sharp knife into the cheese and twist to make little chunks. Scatter these over the top of the salad and serve straight away.

3 tablespoons lemon juice
1 tablespoon aniseed
6 cups cubed honeydew
4 cups cubed fresh pineapple
2-1/2 cups cubed cantaloupe
2 cups seedless green grapes
2 cups seedless red grapes
2 cups cubed orange sections
1 cup sliced fresh strawberries
1 medium firm banana, sliced
2 kiwifruit, peeled and sliced

Steps:

  • In a saucepan over medium-high heat, combine water, sugar, lemon juice and aniseed; bring to a boil. Reduce heat to medium; cook, uncovered, for 40 minutes or until mixture is slightly thickened and reduced by one-third (about 1-1/2 cups). Remove from the heat; cover and cool to room temperature, about 30 minutes. Meanwhile, in a large bowl, combine honeydew, pineapple, cantaloupe, grapes and oranges. Pour anise mixture over fruit; toss to coat. Cover and chill for at least 1 hour. Just before serving, add strawberries and banana; gently toss. Garnish with kiwi.
