2 beaten eggs
1/2 cup milk
1/2 cup finely chopped saltine
1/2 cup finely chopped onion
1/2 teaspoon dry mustard
1/8 teaspoon pepper (i like a little more)
1 lb fully cooked ground ham
1 lb ground pork
1/2 cup brown sugar
2 tablespoons vinegar
1/2 teaspoon dry mustard

Steps:

  • combine eggs, milk, saltines, onion and 1/2 tsp dry mustard, and pepper.
  • Add ham and pork.
  • Mix well.
  • Shape into loaf and place in a 13x9x2 baking pan.
  • Bake at 350 for 1 hours
  • For Glaze: combine Brown sugar, vinegar, and 1/2 tsp dry mustard.
  • Spoon glaze over loaf.
  • Bake additional 20 minutes, basting with glaze.

1/4 cup chopped onion
1 tablespoon chopped parsley
1/2 cup quick-cooking oats
3/4 cup evaporated milk or 3/4 cup half-and-half
1 egg, beaten
1/4 cup light brown sugar
1/4 cup vinegar

Steps:

  • Combine ground ham, mustard, chopped onion, parsley, oats, milk and egg; mix well to blend and form into a loaf. Place in greased loaf pan.
  • Combine brown sugar and vinegar in saucepan; heat till sugar is dissolved. Pour mixture over ham loaf.
  • Bake at 350 degrees for 60 minutes.

1 1/2 lbs ground cooked ham
1/2 cup breadcrumbs
1 small yellow onion, chopped (optional)
1/2 teaspoon white pepper or 1/2 teaspoon ground black pepper
1 cup brown sugar
1 (8 ounce) can crushed pineapple with juice, partially drained
1/4 cup mustard (I use spicy brown)

Steps:

  • Prehat oven to 350 degrees.
  • Spray a cooke sheet with cooking spray.
  • In a large bowl mix all of the loaf ingredients well.
  • Shape into a loaf on cookie sheet.
  • Bake@ 350 degrees for 1 1/2 hours.

1 cup crushed butter-flavored crackers (about 25)
2/3 cup finely chopped onion
1/2 cup finely chopped green pepper
2 eggs, lightly beaten
2 tablespoons lemon juice
1 teaspoon ground mustard
1 teaspoon ground ginger
1 teaspoon Worcestershire sauce
1/4 teaspoon pepper
Dash ground nutmeg
Dash paprika
1-1/3 pounds finely ground fully cooked ham
1 pound bulk pork sausage
GLAZE:
1/2 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup water
1 teaspoon ground mustard

Steps:

  • In a large bowl, combine the first 11 ingredients. Sprinkle ham and sausage over the cracker mixture and mix well. Shape into two loaves. Place in ungreased 9x5-in. loaf pans. Cover and freeze one meat loaf for up to 2 months. Bake the remaining loaf, uncovered, at 350° for 1 hour., Meanwhile, in a small saucepan, combine glaze ingredients. Bring to a boil; boil for 2 minutes. Remove loaf from the oven; drain. Baste with half of the glaze. Cool remaining glaze and set aside. Bake meat loaf 30-40 minutes longer or until a thermometer reads 160°, basting occasionally. , Cover and freeze reserved glaze for up to 2 months. , To prepare frozen ham loaf with the frozen glaze: Thaw both in the refrigerator overnight and bake as directed.

1 ½ pounds ground pork
2 eggs
1 cup dried bread crumbs
1 cup evaporated milk
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup brown sugar
1 tablespoon mustard powder
¼ cup cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 90 minutes.

4 slices ham (thin cut of the bone)
500 g minced beef (ground beef)
1/2 onion (finely chopped)
1/4 teaspoon salt
1/2 teaspoon pepper
2 teaspoons garlic (minced)
2 tablespoons tomato paste
1/2 teaspoon curry powder
cooking spray

Steps:

  • Preheat oven at 200°C.
  • In a large bowl mix the mince, onion, salt, pepper, garlic, tomato paste and curry powder then mix well until smooth.
  • Lay down a long sheet of aluminium foil, then place a sheet of baking paper over the spray with the oil and then lay down the 4 slices of ham with the edges overlapping.
  • Spread the mince mixture over two thirds of the ham then roll up like a swiss roll.
  • Roll the baking paper into a bon-bon shape then roll with the alfoil and crimp the edges.
  • Place onto an oven tray with a splash of water to cover the bottom.
  • Bake at 200C for 25 to 30 minutes, then remove the foil and paper and slice and serve.

2 cups soft breadcrumbs
2 eggs
1 cup sour cream

  • Have meat ground together for one 2 lb.
  • combination mixture; bring to room temperature.

  • In large bowl, lightly but thoroughly combine meat and bread crumbs; use your hands if necessary.
  • In medium bowl, beat eggs, add sour cream, onion, lemon juice and spices.
  • Mix well, pour over meat mixture and blend together.
  • Form mixture into loaf and place in well oiled shallow baking dish.
  • Bake uncovered for 1 hour.
  • NOTE: This mixture isn't packed into a loaf pan, it is a free standing long loaf shape.
  • Meanwhile, prepare basting sauce.
  • In a small saucepan, mix all ingredients and bring to a boil.
  • Thicken with some cornstarch mixed with water; as needed.
  • When ham loaf has baked for 45 minutes, remove from oven and drain off grease.
  • Spoon sauce over ham loaf and continue baking another 15 minutes.
  • Baste every few minutes with sauce until done cooking.
  • Let sit for at least 10 minutes before cutting to allow loaf to retain shape.
  • Enjoy!
