Bake up the best chocolate chip cookies with a recipe that results in cookies with soft, chewy centers and slightly crispy edges.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, at room temp
1/4 cup cream cheese, at room temp
1/2 cup sugar
1 cup packed light brown sugar
1 1/4 teaspoons vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips

Steps:

  • In a medium bowl, whisk together the flour, baking soda and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, cream cheese, sugar, light brown sugar and vanilla extract until light and fluffy, about 2 minutes, scraping down the sides as needed. Add the eggs, one at a time, beating well after each addition. Add the flour mixture, beating to combine, then stir in the chocolate chips.
  • Cover the bowl with plastic wrap and refrigerate the dough for a minimum of 2 hours and up to 3 days.
  • When ready to bake, preheat the oven to 375°F and line two baking sheets with parchment paper or Silpats.
  • Drop 2- to 3-tablespoon mounds of dough onto the baking sheets, spacing the mounds at least 2 inches apart.
  • Bake the cookies for 9 to 11 minutes, or until golden brown. Cool the cookies on the baking sheets for 2 minutes then transfer them to a wire rack to cool completely.

½ cup packed brown sugar
½ cup butter, softened
½ cup vanilla ice cream
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ cup malt powder

½ cup white chocolate chunks

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat white sugar, brown sugar, and butter with an electric mixer in a large bowl until light and fluffy. Beat ice cream, egg, and vanilla extract into butter mixture until smooth.
  • Whisk flour, malt powder, baking soda, and salt together in a bowl. Add flour mixture to butter mixture and stir until just combined. Drop spoonfuls of dough 2 inches apart onto baking sheet.
  • Bake in preheated oven until lightly browned, about 8 minutes. Cool cookies on a wire rack.

1 cup light brown sugar, lightly packed
3 tablespoons granulated sugar
1 stick unsalted butter, at room temperature
1 large egg
1/3 cup white miso paste
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 cups semisweet chocolate chips (sometimes I use chunks)
Nonstick cooking spray, for the baking sheet

Steps:

  • Beat both sugars and butter together in a medium bowl with an electric mixer until creamy. Add egg, miso and vanilla and beat until well mixed. Add flour and baking soda and mix until just combined. Stir in chocolate chips. Cover with plastic wrap and refrigerate at least 1 hour (this is very important in order to have a chewy cookie that doesn't spread out too much).
  • Preheat oven to 350 degrees F. Spray 2 baking sheets with nonstick cooking spray.
  • Use a medium ice cream scoop to portion cookie dough on the prepared pans. Use two fingers to lightly flatten each scoop of dough. Bake, rotating and switching the pans halfway through, 13 to 14 minutes for a chewy cookie (a few minutes longer if you like a more well-done cookie). Eat warm with a glass of milk and cool the rest on a wire rack.

Sorry to disappoint, but the secret ingredient isn't anything exotic or special: it's just cornstarch. Yes, cornstarch. If you like your cookies to have that crispy exterior but still have a chewy interior, then this recipe is for you. It's the cornstarch that lets that happen. That's how I like my cookies and this recipe has fast become a family favourite. You can use regular chocolate chips in these, but it really is worth it to chop up some great chocolate instead. Thanks to Anna Olson of the Sugar tv show for the great tip.

3/4 cup unsalted butter (softened)
1 cup firmly packed brown sugar
1/4 cup white sugar
1 large egg (take 30 minutes to bring it to room temperature first)
2 teaspoons pure vanilla extract
2 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
8 ounces bittersweet chocolate, cut into small chunks

Steps:

  • In a large mixing bowl, cream together butter and sugars until smooth (I do this by hand, with a wooden spoon).
  • Stir in vanilla and then blend in egg.
  • Add the flour, cornstarch, baking soda and salt (I sift these four ingredients through a sieve first) and combine; stir in chocolate chunks and stir to incorporate chunks throughout the dough.
  • Chill dough in fridge for one hour, two if you can spare the time.
  • Preheat oven to 350°F; line your cookie sheets with parchment paper.
  • Drop dough by tablespoons onto cookie sheets and bake in preheated oven for about 8-10 minutes, or until cookies are golden brown around the edges.
  • Remove cookies to wire racks and let cool.

Steps:

  • Preheat oven to 350° F.
  • Into a bowl sift together flour, baking soda, and salt and stir in oats.
  • In bowl of a standing electric mixer beat butter with sugars until light and fluffy. Beat in Nestle's Quik until combined well. Add eggs, 1 at a time, beating well after each addition, and beat in vanilla. Add flour mixture, beating until just combined, and stir in chocolate chips.
  • Arrange rounded tablespoons of dough about 2 inches apart on ungreased baking sheets and bake in batches in middle of oven 12 minutes, or until golden. Transfer cookies to racks to cool.
