Baked Pastry-Wrapped Olives image

We love wrapping pitted green or black olives-or better yet, a combination-in premade puff pastry. The buttery dough envelops the salty; meaty olives to create a truly addictive combination. Make these ahead of time, freeze them, and pop them in the oven directly from the freezer. Make a lot-they tend to go fast!

2 sheets frozen puff pastry (about 1 pound), thawed if frozen, but well chilled
About 30 large pimiento-stuffed green olives or pitted green or black olives

Steps:

  • Lay the pastry on a clean work surface. Using a small, sharp knife or a pizza cutter, cut fifteen 2-inch squares from each pastry sheet (30 total). Place an olive in the middle of each pastry square and gently roll the dough around it into a ball or simply fold the dough around the olive, exposing the olive through the sides. Place on an ungreased baking sheet or freeze for up to 2 months in a plastic container, making sure the pastry pieces don't touch each other.
  • Place a rack in the middle of the oven and preheat to 400 degrees F. Bake the olives for 15 to 17 minutes, turning them once halfway through baking. The pastry should be a pale golden brown on both sides. If baking the olives straight from the freezer, bake for closer to 20 minutes. Serve hot. (Warn people to let them cool for about a minute before biting into one; they are very hot.)
  • Variations:
  • You can line the pastry with various flavorings before you wrap the olive. Consider any of these possibilities:
  • Finely chop 3 tablespoons fresh rosemary, basil, or thyme and press into the pastry.
  • Press about ½ cup grated hard cheese into the pastry before you cut it into squares.
  • Add a very light sprinkle of grated lemon zest to the pastry.
  • Add a very light sprinkle of red chile flakes or cayenne pepper on top of the pastry.

These puff pastry-wrapped olives are our family's favorite holiday appetizer. We make them with a variety of olives - pimento stuffed green, plump kalamata, Provencal - just make sure they are pitted. We like to use strongly flavored olives; the flavor of canned ripe olives disappears in the puff pastry. You can make these ahead, and freeze; allow 30 minutes for the pastry to thaw before baking. Another advantage: the kids like to make them and eat them.

Steps:

  • Preheat oven to 400º F (205ºC)
  • Cut rashers of bacon into thirds.
  • Wrap one third of bacon rasher around olive and secure with toothpick.
  • Next, place on foil lined tray or pyrex dish.
  • Bake for about 10 minutes, turn the olives, and bake another 8 to 10 minutes or so, or until the bacon is starting to brown and is cooked. Serve hot or warm.

What a different, fun appetizer! We enjoyed these served at room temp, so be sure to allow to let them cool entirely.

1 jar(s) green spanish olives w/ pimento
1 c white flour
3/4 stick salted butter
1 pinch salt
1-2 dash(es) hot tabasco
1/2 tsp worstchester sauce
1 pkg shredded cheddar cheese 16 0z.
* sometimes i put some fresh chopped cilantro, or parsely in the dough for color. the cilantro adds a nice contrasting flavor if people will like it.

Steps:

  • 1. Have all ingredients room temperature. In the softened butter add the tobasco, and worstchester sauce, then the shredded cheese.Drain the olives in a strainer and set aside in a bowl.
  • 2. Add salt & flour to cheese mixture. Make into a dough working all ingredients thoroughly.You can add cilantro at this time if desired.
  • 3. Take aprox a tsp of the dough and make a ball. Flatten it in the palm of your hand and place an olive in the middle. Wrap the olive in the dough and make a ball again. Place on a greased cookie sheet. You can get 20 or so on a large cookie sheet. Place in 375* oven for aprox 30 min. or until tops start to get golden. You must keep an eye on them because you are using butter and this can burn easily . Remove from cookie sheet on a plate to cool and place in a tupperware container.
  • 4. You can make these ahead of time and place in a bag in a freezer to bake at another time. Make sure to flower them before you put in the bag or they will stick together and be a mess when you thaw them. They keep 3 months in the freezer. This is a great thing to have on hand when people drop by. You can always have a nice appetizer handy at all times!

1 cup butter
2 cups sifted all-purpose flour
1/4 teaspoon salt
1/4 cup ice water
2 egg yolks
1 pinch flour

Steps:

  • Ok, you get the whole story!
  • "Before beginning the adventure with puff paste there is one thing to be explained that will make its compositions comparatively easy.
  • (Ha Ha!) The butter used must be washed.
  • The purpose of washing it is to make it elastic.
  • It should be soft through being kneaded, but in no sense soft through being melted- quite the contrary, it must be soft and cold at the same time.
  • In winter turn on the cold water faucet.
  • Manipulate the butter with the hands under the stream of cold water until it is creamy and waxy.
  • At other seasons, do this in a quart of ice water placed in a bowl of ice.
  • The butter may be kneaded with a spoon if preferred.
  • The final kneading of the butter is done on a board or it is patted briskly in the hands until no water flies.
  • This is the recipe of a professional cook.
  • As it calls for egg yolks it differs from the orthodox rule for puff paste.
  • However, her results are remarkable and her method is simple, so I am giving it in preference to the usual rather complicated recipes.
  • (Ha Ha again, it is complicated!) She stresses 2 points: Keep the hands, the bowl, the board and the rolling pin as cold as possible.
  • (Ha Ha, your hands will be frostbitten!) A cold windy day is best for making puff paste.
  • "Work with hands,as in the first paragraph, under water, 1 cup of butter.
  • Place 1/4 cup butter in a cold bowl.
  • Form the remainder into a square and place it where it will keep cold.
  • Add to the butter in the bowl, the flour and salt, work these ingredients with a pastry blender, 2 knives or the finger tips.
  • Beat and add 1/4 cup ice water and 2 egg yolks, (the yolks may be omitted, in that case use in all, 6 tablespoons of water).
  • Work these ingredients well with the hands.
  • If necessary add, to loosen the dough from the bowl, a pinch of flour.
  • Place the dough were it will be cold but will not freeze, preferably in the open air.
  • If it is not possible to do this, fold the dough in a clean cloth and place it in a dripping pan that has been placed between 2 dripping pans filled with ice.
  • After 15 minutes, roll the dough into a square on a floured board.
  • Roll it one way only, not back and forth.
  • A good way is out from the centre.
  • Put the square of butter in the centre of the dough and fold the 4 corners to the centre completely covering the butter.
  • Permit the dough to stand on a cloth or piece of waxed paper in a cold place for 1/2 hour.
  • Turn it once to keep it from becoming dry.
  • Roll out the dough again into a square and fold the corners to the centre.
  • Permit it to stand again for 1/2 hour.
  • Repeat this process.
  • The dough must be chilled and rolled at least 4 times in all.
  • Chill the dough until you are ready to use it.
  • Wrapped in waxed paper it may be kept in the refrigerator for several days.
  • Roll it, cut it into shapes.
  • Chill it again and bake it.
  • One of the secrets of success of puff paste is to have it ice cold when placed in a hot oven.
  • The matter of baking puff paste is a moot point.
  • In all rules the very cold paste is put into a very hot oven- 500°F.
  • In some it is baked at this temperature throughout.
  • In this case the pastry is covered with waxed paper after 10 minutes baking.
  • In other rules the heat is reduced 50 degrees every 5 minutes until the temperature is 350°F for final baking.

1 large egg
1/4 cup whole milk
20 pitted olives
Store-bought puff pastry, rolled into 1 (10 by 12-inch) rectangle

Steps:

  • Prepare the egg wash: Combine the yolks, whole egg, and milk in a small mixing bowl and whip with a hand whisk until well combined. Preheat the oven to 400 degrees. Set the puff pastry on a lightly floured work surface, with the long side facing you and cut in half from top to bottom. Use a pastry brush to coat one piece of the dough with egg wash. Lay the olives spaced about 1-inch apart from top to bottom on the egg-washed dough. Place the other rolled-out dough half on top of the olives and mark each olive by pressing the dough on either side of the olive. Use a sharp paring knife to cut between each puff pastry-covered olive. Place on a parchment paper-covered baking sheet and brush with more egg wash. Bake until well risen and golden brown, about 20 minutes. Cool completely on a wire rack before serving. There is no need to cut these in half. Just cut between the olives to make small packages. Baking and cooling is the same. These puff pastry items are best eaten the day they are made.

Zest of 1 lemon
1 tablespoon finely chopped fresh parsley
1 large egg
Flour, for dusting
1 sheet frozen puff pastry (from a 17.3-ounce package), thawed
About 40 pimento-stuffed green olives (two 3-ounce jars), drained

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a mixing bowl, toss together the Parmesan, lemon zest and parsley until combined.
  • In a separate small bowl, whisk the egg with 2 teaspoons water to make an egg wash.
  • On a floured work surface, gently roll out the puff pastry sheet, removing any fold marks but keeping the same general size and shape. Using a sharp knife or a pizza wheel, cut forty 1-by-2-inch rectangles. Place an olive in the middle of a rectangle and gently wrap the pastry around the olive, pinching the seam and ends to seal. Coat the wrapped olive first in egg wash and then in cheese mixture. Transfer to the prepared baking sheet. Repeat with remaining pastry and olives.
  • Bake until golden brown and crispy, about 15 minutes. Remove the olives from the baking sheet and cool completely on a wire rack.
