SEASONED FRIES
These fries are always popular with my meat-and-potatoes bunch. The cheesy seasoning can easily double as a flavorful baked potato topper, too.-Maribeth Edwards, Follansbee, West Virginia

Steps:
- Soak cut potatoes in cold water for 10 minutes. Drain and pat dry with paper towel then transfer to large bowl.
- Add remaining ingredients except salt, toss well to combine.
- Meanwhile, line a large baking sheet with foil. Place baking sheet in oven, preheat oven and baking sheet to 375 for 10 minutes.
- Remove preheated baking sheet from oven, pour fries onto baking sheet (being careful not to burn yourself baking sheet will be hot). Arrange fries in a single layer.
- Bake for 45 minutes, raise temperature to 425 and bake for another 10 minutes until golden and crispy.
- Remove from oven and immediately sprinkle with salt (this step is optional but I highly recommend it).
- Note: You can flip the fries half way through the cooking process if you'd like. But I don't feel it's necessary, so no flipping here!

SEASONED POTATO FRIES
"Here's an easy side dish for two that can be made in minutes from scratch. I think these fries rival frozen french fries for flavor," relates Peggy Hinnah of Fulton, Missouri. "We love snacking on these crunchy morsels served straight from the oven."

KITTENCAL'S EASY SEASONED HOME FRIES
This is easy but the potatoes will need a few hours or overnight soaked in cold water, the garlic powder and seasoned salt may be adjusted to taste, I have left the cayenne as optional I like to add it in for a little heat, if you are not a garlic-lover then omit the garlic powder --- throw in some chopped green onions the last few minutes of cooking if desired :)

Steps:
- Cube the potatoes in about 3/4-inch squares.
- Place into a large bowl then cover with cold water, rinse then cover once again with water.
- Refrigerate for at least 3 hours or up to 48 hours (the longer soaking time the better!).
- Drain very well in a colander (I like to pat the potatoes dry using paper towels).
- Melt the butter in a large skillet over medium heat, then add in garlic powder, seasoned salt and cayenne pepper (if using).
- Place the potatoes in the skillet and stir to coat with the butter.
- Cover with a lid and cook for 8-10 minutes.
- Remove the lid and cook for another 10 minutes, turning frequently with a spatula for even browning and crisping.
- Season with more seasoned salt to taste and black pepper.
- Delicious!

- Wash the potatoes well under cold water. Cut a slit in the middle of each potato to release steam, and place into plastic baggies (usually 2 per bag).
- Microwave potatoes for about 3-4 minutes on both sides. Carefully remove from microwave and baggies, and allow to cool slightly.
- Once potatoes are cool enough to handle, use a very sharp knife to cut the potatoes into 2 inch cubes.
- Melt about a tablespoon of butter in a large non-stick skillet. Place the potatoes in the skillet in a single layer and brown on one side. Season with garlic salt and seasoned salt, making sure there is some seasoning on every potato.

- Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
- Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
- Add the fries to a dry bowl and toss them with the olive oil, smoked paprika, garlic powder, Old Bay, black pepper, and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.
