GARLIC-PARMESAN CROUTONS
These croutons taste great, and your house will smell wonderful with the scent of the herbs.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Mix butter, Parmesan cheese, oregano, thyme, garlic powder, and salt together in a large, flat-bottomed bowl; add bread cubes and turn with a spatula to coat. Spread coated bread cubes onto a baking sheet.
- Bake in preheated oven until golden brown, 15 to 20 minutes. Cool croutons completely before storing in an airtight container.

SEASONED PARMESAN CROUTONS
Take a boring salad and dress it up with some delicious crispy croutons, flavored with garlic, herbs, and Parmesan cheese.

Steps:
- Preheat the oven to 300 degrees F. Slice the crusts from the bread and then cut the bread into 1/2 inch cubes. Heat a skillet over medium heat and add the butter and olive oil. When hot, add the garlic and cook, stirring constantly, for one minute (make sure the garlic doesn't burn). Stir in the bread cubes and quickly stir to coat in the garlic butter. Remove from the heat and let cool for 5 minutes. In a large bowl, combine the Parmesan cheese, oregano, and thyme. Mix well then add the bread cubes and stir to coat them in the mixture. Spread the bread cubes in an even layer on a rimmed baking sheet. Bake at 300 degrees F for 30-40 minutes or until lightly toasted. Stir the croutons occasionally so they brown evenly. Remove from the oven and let cool completely. Transfer to an airtight container. These can also be frozen.
HERBED GARLIC AND PARMESAN CROUTONS
Can be prepared in 45 minutes or less.

- In a small saucepan combine the garlic, the oregano, the basil, the thyme, 1/2 teaspoon of the salt, the pepper, and the oil and simmer the mixture for 5 minutes, and discard the garlic. In a bowl toss the bread cubes with the oil mixture, spread them in a jelly-roll pan, and bake them in ht e middle of a preheated 350°F oven for 8 minutes. Sprinkle the croutons with the Parmesan and bake them for 7 minutes more, or until they are golden. Sprinkle the croutons with the additional salt and let them cool. The croutons keep in an airtight container for 1 week. Serve the croutons as a topping for tossed green salad.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Place bread cubes in a large bowl; drizzle butter over cubes. Toss to evenly coat. Sprinkle half the Cajun seasoning, half the Parmesan cheese, and half the onion powder over cubes; toss to coat. Spread coated bread cubes onto the prepared baking sheet; sprinkle remaining Cajun seasoning, Parmesan cheese, and onion powder onto cubes.

THE BAREFOOT CONTESSA'S PARMESAN CROUTONS
This recipe comes from Ina's book, The Barefoot Contessa Cookbook. She says it was devised to use leftover baguettes and she uses them as crackers for appetizers, on top of soup and as a snack. She suggests that you grate whole parmesan rather than buying the already grated kind.

- Preheat the oven to 400 degrees.
- Slice baguette diagonally into 1/4 inch thick slices. Depending on the size of the baguette, you should get about 20 to 25 slices.
- Lay the slices in one layer on a baking sheet and brush each with olive oil and sprinkle liberally with salt and pepper. You can use either plain or flavored olive oil such as basil or garlic. The measurements for the salt and pepper in the ingredients are just estimates and you use whatever amount suits you. Sprinkle with the grated parmesan and bake for 15 to 20 minutes until they are browned and crisp. Serve at room temperature.

SEASONING FOR BREAD, CROUTONS OR BREADCRUMBS
I just came up with this. My DH & I had a wonderful oil based dipping sauce for bread at an Italian restaurant. I was shocked when DH tried it and like it. I was just thinking about that day and thought I can replicate that dipping sauce. This is what I came up with. I also tossed with bread and baked for croutons and breadcrumbs.

- Mix all ingredients together.
- If making for a dip you are done. Serve with a pasta dish and warm breadsticks.
- If making croutons heat oven to 350°F.
- Cut up bread into bite size pieces. Place bread and oil mixture in a sealable bag toss to coat.
- Arrange on baking sheet and bake for 8 to 10 minutes.
- Cool and store in an airtight container.
- If making bread crumbs complete steps for croutons and then place croutons in food processor and blend.
- If you feel the crumbs are too wet place on baking sheet and bake for another 5 minutes watching very closely. These will burn in the blink of an eye.
- Store in airtight container.
- I usually freeze in a storage bag until ready to use.

GARLIC PARMESAN CROUTONS!
Pretty much any type of bread will make good croutons. You can use stale pieces of baguette to the end slices of a sandwich loaf. Good croutons follow these basic rules= Make sure to cut the bread into uniform pieces, the cubes must be tossed with olive oil that has been laced with the determined spices, and the pieces must be baked in a 350*F. oven until golden. - Adjust oven rack to the center postion in your oven and heat to 350*F.
- Whisk the oil, garlic, salt and Parmesan cheese together in a large bowl. Add the bread cubes and toss until thoroughly coated.
- Spread the bread cubes onto a baking sheet and bake until golden brown, about 20-25 minutes.
- Allow the croutons to cool to room temperature before serving. Enjoy!
