I love quick and bright meals like this one-skillet wonder. The way it tastes, you'd think it takes a lot more effort, but it goes from prep to dinner table in half an hour. The recipe works well with any light fish, or even shrimp. -Tammy Brownlow, Dallas, Texas

2 large zucchini (about 1-1/2 pounds)
1-1/2 teaspoons ground cumin
3/4 teaspoon salt, divided
1/2 teaspoon smoked paprika
1/2 teaspoon pepper
1/4 teaspoon garlic powder
4 tilapia fillets (6 ounces each)
2 teaspoons olive oil
2 garlic cloves, minced
1 cup pico de gallo

Steps:

  • Trim ends of zucchini. Using a spiralizer, cut zucchini into thin strands., Mix cumin, 1/2 teaspoon salt, smoked paprika, pepper and garlic powder; sprinkle generously onto both sides of tilapia. In a large nonstick skillet, heat oil over medium-high heat. In batches, cook tilapia until fish just begins to flake easily with a fork, 2-3 minutes per side. Remove from pan; keep warm., In same pan, cook zucchini with garlic over medium-high heat until slightly softened, 1-2 minutes, tossing constantly with tongs (do not overcook). Sprinkle with remaining salt. Serve with tilapia and pico de gallo.

1 1/2 lb. zucchini
3 tbsp. olive oil, divided
kosher salt
pepper
4 small fillets tilapia (1 1/2 lbs.)
1 lemon, thinly sliced and seeded
2 cloves garlic, thinly sliced
1 tbsp. capers
1/2 c. fresh flat-leaf parsley, chopped

Steps:

  • Heat oven to 475°F. Line large rimmed baking sheet with reusable baking mat or parchment paper. Using spiralizer, spiralize zucchini, or slice zucchini into thin ribbons.
  • Transfer zucchini to prepared baking sheet; toss with 1 tbsp. oil and 1/4 tsp. each salt and pepper. Roast 15 min. Increase heat to broil and continue to cook until golden brown, 3 to 4 min.
  • Meanwhile, heat 1 tbsp. oil in large cast-iron skillet on medium-high. Season fish with 1/4 tsp. each salt and pepper and cook until just opaque throughout, 2 to 3 min. per side. Transfer to plates.
  • Add remaining tbsp. oil to skillet along with lemon, garlic, and capers and cook, stirring occasionally, until garlic is golden brown and tender. Toss with parsley, then spoon over tilapia and serve with zucchini.

6 - 4 oz. tilapia fillet (any mild fish will work)
2-3 zucchini squash, sliced or cut into smaller pieces
1/8 cup lime or lemon juice (I used lime)
3/4 cup grated parmesan cheese
4 tablespoons of Butter room temperature
4 tablespoons mayonnaise
4 tablespoons finely chopped green onions
1/2 teaspoon seasoning salt
1/2 teaspoon dried basil
Black pepper (preferably fresh ground) to taste
Few dashes hot pepper sauce (optional)

Steps:

  • 1.Preheat oven to 350 degrees Fahrenheit. 2.Place the fillets and zucchini in a buttered baking dish. 3.Brush the tops with juice. 4.Bake fish in preheated oven 20 to 30 minutes or until fish just starts to flake. 5.Meanwhile, combine the cheese, butter, mayonnaise, onions and seasonings in a bowl. Mix well with fork. 6.When the fish is ready, spread the top with the cheese mixture and turn on the broiler or high heat, and bake until golden brown (about 5 minutes). *Baking time will depend on the thickness of the fish you use. Watch the fish closely so that it does not overcook.

½ cup all-purpose flour
1 tablespoon olive oil
2 tablespoons unsalted butter, melted

Steps:

  • Rinse tilapia fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
  • Heat the olive oil in a skillet over medium-high heat; cook the tilapia in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the tilapia in the last minute before removing from the skillet. Serve immediately.

I wanted to add more fish to my diet so one day I bought fresh Tilapia and looked online for an easy recipe to cook that evening because I never buy fresh fish and didn't know the first thing how to cook it. I found a recipe similar but I added my own special touch to it and pretty much changed the original. My husband and I loved it. Here's my version!

2 teaspoons olive oil
1/4 cup chopped onion
1 garlic clove, minced
1/4 cup green bell pepper, thin slices
1 medium zucchini, thin slices
4 ounces fresh large mushrooms, thin slices
2 -6 ounces tilapia fillets
cajun seasoning
powdered cayenne pepper
1 lime, cut in half
olive oil flavored cooking spray (optional)
marjoram (optional)

Steps:

  • Instructions.
  • Heat oil in large skillet over medium heat. Stir-fry onion, garlic clove and pepper until crisp-tender, then add zucchini and continue to cook for a short time. Finally add mushrooms. Push veggies off to the side. Sprinkle one side of Tilapia with Cajun seasoning. Add to skillet. Cook about three minutes and turn.
  • Cut lime in half and squeeze lime juice on tilapia from one half of the lime. Use the other half for serving if you like to squeeze it fresh on your fish. Sprinkle cayenne pepper according to taste. Then cover and continue to cook until fish is done, about another three minutes. Serve.
  • Pan may dry after sautéing veggies, so I spray some olive oil spray before I place tilapia in pan to keep it from sticking. I also like to add a sprinkle of Marjoram on fish.
  • I like to serve it with Steamed Jasmine Rice.
