Categories     main-dish

Time 1h

Yield 12 servings

Number Of Ingredients 15

Three 8-ounce packages cream cheese, at room temperature
1 packet ranch seasoning
1 1/4 cups mayonnaise
1 large country white boule
2 tablespoons Dijon mustard
4 thin slices Cheddar
4 ounces thinly sliced deli ham
4 ounces thinly sliced deli turkey
2 cups shredded iceberg lettuce
4 strips cooked bacon
1 medium tomato, sliced
1 cup potato chips
1/2 cup prepared chicken salad
1 bunch radishes, very thinly sliced on a mandoline
1 cucumber, very thinly sliced on a mandoline

Steps:

  • In a stand mixer (or with an electric hand mixer), beat together the cream cheese, ranch seasoning and 1 cup of the mayonnaise until easily spreadable. Put one-third of the mixture into a piping bag with a star tip.
  • With a serrated knife, trim the sides of the boule until it is an even cylinder. Cut the cylinder across the radius into four 1-inch slices. Choose a serving platter and place a slice of bread in the center for the bottom layer. Position 4 squares of parchment underneath the bread to keep the serving platter clean once you begin icing.
  • Spread 1 tablespoon of the mustard onto the top of the bread. Top with the Cheddar, then the ham and turkey. Add half of the lettuce on top of the turkey. Spread the remaining 1 tablespoon mustard on one side of another slice of bread, then place it mustard-side down on top of the lettuce.
  • Spread the top of the bread with 2 tablespoons mayonnaise. Top with the bacon, tomato and remaining shredded lettuce. Spread the remaining 2 tablespoons mayonnaise on a third slice of bread, then place it mayonnaise-side down on top of the lettuce. Next, cover the top of the bread with the potato chips in a single layer. Top the potato chips with the chicken salad and then the last slice of bread.
  • With a knife or offset spatula, spread the cream cheese mixture along the top and sides of the cake evenly. Pipe rows of stars onto the top and bottom edge of the cake.
  • Decorate the cake using radish and cucumber slices in a ring around the top and bottom of the cake. Shape the remaining radish and cucumber slices into roses and press into the top of the cake.
  • Serve chilled or at room temperature. Can be made ahead and refrigerated for 1 to 2 hours.

Pumpkin Cake Graveyard image

Time 5h25m

Yield 15 to 20 servings

Number Of Ingredients 24

Nonstick cooking spray
Four 16-ounce boxes pound cake mix, such as Betty Crocker
2 sticks (1 cup) butter, softened
8 large eggs
Two 15-ounce cans pumpkin puree
4 teaspoons pumpkin pie spice
1/4 cup vanilla frosting
Green fruit leather, for the stem and leaf
1 green wafer ice cream cone
Confectioners' sugar, for dusting
2 1/2 cups confectioners' sugar
1/4 cup cream cheese, at room temperature
3 to 4 tablespoons milk
15 drops orange food coloring or 20 drops yellow food coloring plus 15 drops red food coloring, more as needed
Nonstick cooking spray
Two 18.3-ounce boxes brownie mix, such as Duncan Hines
Two 16-ounce cans chocolate frosting, such as Duncan Hines
Two 4.4-ounce boxes chocolate-covered ladyfinger cookies, such as Cadbury
1 package chocolate cream-filled cookies, such as Oreos, crumbled
4 rectangular cookies, such as tea biscuits, graham crackers, almond thins or chocolate-coated tea biscuits such as Petit Ecolier
2 vanilla wafer sandwich cookies with chocolate inside, such as Pepperidge Farm Milano
One 1.5-ounce can silver spray food coloring, such as Wilton Color Mist
6 mini pumpkin candies
3 marshmallow ghost candies, such as Peeps

Steps:

  • For the pumpkin cake: Spray a 12-cup Bundt pan with nonstick cooking spray. Preheat the oven to 350 degrees F.
  • In a large bowl, combine 2 boxes of the pound cake mix, 1 stick of the butter, 4 of the eggs, 1 can of the pumpkin puree and 2 teaspoons of the pumpkin pie spice. Mix with a handheld electric mixer on high speed until blended, about 1 minute. Pour into the prepared Bundt pan and bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes.
  • Let cool in the pan for 15 minutes, then unmold onto a wire cooling rack. Repeat the process to make a second Bundt cake.
  • Once the cakes are cooled, level off the bottoms with a serrated knife so the cakes will sit flat. Place one of the cakes cut-side up and spread the vanilla frosting over it. Place the second cake, cut-side down, on top to form a pumpkin.
  • For the glaze: In a medium bowl whisk together the confectioners' sugar, cream cheese, milk and food coloring. (The glaze should be a bright orange color; add a few more drops of food coloring if needed.) The mixture will be very thick but still pourable. Place the pumpkin cake on a baking sheet fitted with a wire rack. Slowly pour the glaze over the top, moving in a circular motion around the top of the cake and letting the glaze drip down the sides. Set aside until set, about 1 hour.
  • Wrap some fruit leather around the green ice cream cone and press it into place upside down on the cake to form a stem. Dust a work surface with confectioners' sugar, place some fruit leather on top, and cut out a leaf with a leaf-shaped cookie cutter. Press the leaf into place on the cake near the stem.
  • For the graveyard: Spray an 18-by-13-inch baking sheet with nonstick cooking spray and line with parchment; spray the parchment.
  • Prepare both boxes of brownie mix according to the package instructions and pour into the prepared baking sheet. Bake according to the package instructions. Let cool completely, then remove from the pan and place on a large cutting board.
  • Frost the top of the brownie sheet with the chocolate frosting. Slice about 60 of the chocolate ladyfingers in half crosswise. Press the halved cookies, cut-side down, side-by-side around the top edge of the frosted brownie sheet to form a fence. On one of the long sides of the brownie sheet, leave a 3-inch opening in the fence to create an entrance. Place 2 whole ladyfingers on either side of the opening to form the gate entrance. Place another whole ladyfinger on top of the two ladyfingers to make the top of the gate, using a little bit of frosting to adhere it.
  • Cover the top of the frosted brownie with the crumbled chocolate cream-filled cookies to make dirt. Place the pumpkin cake in the center of the graveyard.
  • To make the gravestones, place the rectangular cookies and vanilla wafer sandwich cookies on a baking sheet lined with parchment paper. Spray both sides of the cookies with the silver spray food coloring.
  • Use a knife to cut slits into the brownie to hold the gravestones. Carefully place the gravestones into the slits.
  • Place the small candy pumpkins and marshmallow ghosts in the graveyard around the pumpkin. Serve immediately.

Time 2h25m

Yield 12 cakes

Number Of Ingredients 14

1 medium sugar pumpkin (2 pounds)
2 tablespoons olive oil
Nonstick spray, for greasing tin
4 large eggs
1 1/2 cups brown sugar
1 cup canola oil
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground clove
1/2 teaspoon ground nutmeg
2 cups all-purpose flour
1 cup powdered sugar
1/4 teaspoon ground cinnamon

Steps:

  • For the cakes: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Cut off the stem end from the pumpkin to create a flat surface. Set the pumpkin cut-side down, slice it vertically in half and scoop out the seeds. Lightly oil the pumpkin with the olive oil. Set the pumpkin halves flat on the baking sheet and roast until easily pricked with a fork, 45 minutes to 1 hour. Let cool for at least 10 minutes before scooping out the flesh. Transfer the pumpkin flesh to a food processor and puree until completely smooth. Measure out 2 cups of the puree. Reserve the remainder for another use.
  • Lightly grease or line a 12-cup muffin tin. In a large bowl combine the pumpkin puree and eggs, and mix together. Next, add the brown sugar, canola oil, baking powder, cinnamon, baking soda, clove and nutmeg, and mix together. Add the flour and slowly beat it into the mixture.
  • Pour the batter into the prepared muffin tin and bake until a cake tester comes out clean, about 35 minutes. Allow to cool slightly before removing the cakes from the tin.
  • For the glaze: In a bowl, combine the powdered sugar, cinnamon and 1 to 2 tablespoons water, and mix thoroughly. Brush or drizzle the glaze onto the cakes.

PUMPKIN PIE LAYER CAKE

Pumpkin Pie Layer Cake image

This recipe combines the familiar flavors of pumpkin pie and a classic layer cake. Buttery vanilla cake layers flavored with pumpkin spice sandwich a decadent pumpkin pudding, then the cake is enrobed in a luxurious sweet whipped cream frosting. A perfect marriage of cake and pie.

Provided by Food Network Kitchen

Categories     dessert

Time 2h30m

Yield 8 to 10 servings

Number Of Ingredients 22

1 cup milk
1 cup canned pure pumpkin puree
1/2 cup granulated sugar
2 tablespoons cornstarch
2 large egg yolks
1/2 teaspoon pure vanilla extract
1/2 teaspoon pumpkin pie spice
Pinch of salt
2 sticks unsalted butter, plus more for the pans
2 1/4 cups cake flour, plus more for the pans
2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 1/2 cups granulated sugar
4 large eggs
2 teaspoons pure vanilla extract
3/4 cup milk
2 cups cold heavy cream
1/2 cup confectioners' sugar
2 teaspoons nonfat milk powder
2 teaspoons pure vanilla extract
Pumpkin pie spice, for sprinkling

Steps:

  • Make the pumpkin filling: Combine the milk, pumpkin, granulated sugar, cornstarch, egg yolks, vanilla, pie spice and salt in a medium saucepan. Cook over medium heat, whisking occasionally, until bubbles start to form around the edges, about 5 minutes. Continue cooking, whisking constantly and getting into the corners of the saucepan, until the mixture thickens to a pudding-like consistency, about 5 more minutes. Transfer to a heatproof bowl; press plastic wrap directly on the surface and refrigerate until cooled, 1 1/2 to 2 hours.
  • Meanwhile, make the cake: Preheat the oven to 325˚ F. Butter two 9-inch round cake pans; line the bottoms with parchment paper and butter the paper. Lightly dust the pans with flour, tapping out the excess. Combine the flour, baking powder, pie spice and salt in a large bowl and whisk to combine.
  • Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, then beat in the vanilla. Add the flour mixture in three batches, alternating with the milk in two batches; beat until just combined.
  • Divide the batter between the 2 pans. Bake until light golden brown on top and the center springs back when gently pressed, 30 to 35 minutes. Transfer to a rack and let cool 10 minutes in the pans, then remove the cakes to the racks to cool completely. Remove and discard the parchment.
  • Put 1 cake layer on a cake stand or platter. Spread the pumpkin filling on top, leaving a 1/2-inch border. Top with the second cake layer.
  • Make the whipped cream: Combine the heavy cream, confectioners' sugar, milk powder and vanilla in a large metal bowl (for the best results, chill the bowl beforehand). Beat with a mixer on medium-high speed until medium peaks form, 3 to 4 minutes. Spread the whipped cream all over the cake and refrigerate until ready to serve, at least 20 minutes. Sprinkle with pumpkin pie spice before serving.

Number Of Ingredients 16

2 cups flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice (may substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon freshly grated)
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup brown sugar, packed
8 tablespoons unsalted butter, room temperature (1 stick)
1/2 cup canned pumpkin (100-percent pure)
1/4 cup whole milk
1 large egg
1 teaspoon vanilla extract
8 ounces cream cheese, at room temperature
2 tablespoons unsalted butter, at room temperature
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 -4 cups confectioners' sugar, sifted plus more for optional dusting

Steps:

  • For the cookies: Preheat the oven to 350 degrees. Have ready 2 ungreased baking sheets.
  • Whisk together the flour, baking soda, pumpkin pie spice blend, baking powder and salt in a medium bowl.
  • Combine the brown sugar and butter in the bowl of a stand mixer or hand-held electric mixer; beat at medium speed for 3 minutes, until creamy. Stop to add the pumpkin puree, milk, egg and vanilla extract; beat on medium-low spead for 2 minutes, until all ingredients are incorporated. Reduce the speed to low; gradually add the flour mixture, beating until just combined.
  • Drop level tablespoonfuls of dough onto each baking sheet, spaced about 1 inch apart (the cookies do not spread much). Bake one sheet at a time, for 9 to 12 minutes or until set; they should spring back when lightly pressed. Cool for 2 minutes on the baking sheet; then transfer the cookies to a wire rack to cool completely. Repeat to use all the dough, making a total of 60 cookies.
  • To make 2-inch cookies, drop 2-tablespoon amounts of dough on the sheets. Bake for 10 to 13 minutes, until set and springy to the touch. Cool as directed above; repeat to use all the dough, making a total of 32 cookies.
  • For the filling: Combine the cream cheese, butter, cinnamon and vanilla extract in the bowl of a stand mixer or hand-held electric mixer. Beat at medium speed 3 minutes until smooth, stopping often to scrape down the sides of the bowl. Reduce the speed to low and gradually add 2 cups of the confectioners' sugar, or up to 4 cups as needed, beating well after each addition until the mixture is creamy. (More sugar means a stiffer filling.).
  • Turn half the cookies flat-sides up. Spread each one with 2 teaspoons of the filling, then top with the remaining cookies. If desired, dust the tops of the cookies with confectioners' sugar just before serving.
