SPAGHETTI SQUASH TOMATO BAKE
Steps:
- Preheat the oven to 400 degrees F.
- Cut the spaghetti squash in half lengthwise and scrape out the seeds with a spoon. Drizzle 2 teaspoons extra-virgin in each of the squash halves and sprinkle with salt. Place them flesh-side down on a baking sheet. Roast until you can fluff the squash easily with a fork, 45 to 50 minutes.
- Flip the squash halves and fluff the "spaghetti" strands with a fork, then season with salt. Pour 2/3 cup sauce over each of the squash halves, and top each with 1/2 cup shredded mozzarella. Bake until the cheese is browned and bubbly, another 25 minutes. (You can flip the oven to the broiler at the last minute for extra cheese browning!)
- Garnish with basil and serve.
BEST EVER SPAGHETTI SAUCE
This is my favorite spaghetti sauce recipe. It comes from a freezer cookbook called Once a Month Cooking. This makes alot so plan on freezing about half of the recipe. You can use this sauce on spaghetti, manicotti, veal (or chicken) scallopini, or French bread pizza

- Add the rest of the ingredients and simmer, partly covered, for 2 hours.
- Simmering can be done in a crockpot, if desired.
- This makes alot of sauce and can be frozen beautifully.
BEV'S SPAGHETTI SAUCE

- Brown the ground beef, onion and garlic in olive oil with bay leaves, oregano, basil, Italian Seasoning, salt and pepper.
- Add tomato paste, tomato sauce and diced tomatoes.
- Stir well and bring to a simmer over medium heat.
- Cover and simmer for 1 1/2 hours.
- Use sauce to top your cooked spaghetti.
- Top with sauteed mushroom.
- Pass the Parmesan.
SPAGHETTI SAUCE

- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
- Amen.

- Bring 4 quarts salted water to a boil in large pot.
- In a large pot on high heat, add extra-virgin olive oil. Add carrot and onion and cook for 1 minute. Add both sausage and ground beef and cook until 3/4 done, about 5 minutes.
- Add tomato paste and garlic and cook for 2 minutes. Deglaze with wine and reduce for 2 minutes. Season with salt and pepper. Stir in crushed tomatoes and reduce for 10 minutes on medium heat until slightly thickened.
- Add pasta to water and cook for 2 to 3 minutes, stirring to prevent sticking.
- Stir in basil, parsley, and pasta and season with salt and pepper. Add pasta cooking water, if needed, to loosen sauce to liking. Garnish with grated cheese and parsley.
MOM'S BEST SPAGHETTI SAUCE
A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

- Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
- Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
- After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
- Cool, cover, and refrigerate overnight. The next day, reheat and serve.

- Trim fat from chuck and pork and grind together.
- Brown together till just light tan, stirring constantely.
- Add onions to meat, cook till onions are trainsparent.
- Add the following to the meat and onions: garlic, tomato paste,tomatoes,water, celery,parsley,oregano,basil leaves,rosemary,green pepper,bay leaf, brown sugar, black pepper,salt.

- Brown Some Meat. Pop a Dutch oven on the stove and get it nice and hot. Then brown ground beef, bulk Italian sausage—or anything from the butcher’s case.
- Veg out, or, Rather, In! If you have a few minutes to spare, don’t add the sauce to the pan just yet. Saute a chopped onion or some minced garlic in the Dutch oven to add more savory goodness to the sauce.
- Booze It Up. Once your veggies are tender, you could deglaze the pan with broth, balsamic vinegar, or you could add red wine or vodka like Ruth Hartunian-Alumbaugh does.
- Dump in the Sauce. And reach for that adult-beverage bottle again, says Crystal Jo Bruns: “Swirl about 1/4 cup of your favourite red wine in the jar to get out the very last dribbles of sauce to add amazing flavour.”
- Add in the Savory Stuff. Stir the meat you browned earlier or any precooked meat you have on hand into the sauce. And if you want to use canned tomatoes or mushrooms (“Canned are fine!”
- Finish it Off. Before you take your new-and-improved sauce to the table, cut the heat and stir in a pat of butter or a splash of half-and-half for extra creaminess, or minced fresh herbs for extra freshness.
