BEEF & RED PEPPER BURGERS



Beef & red pepper burgers image

Pack your patties with extra vegetables - carrot and roasted pepper - to boost flavour and up your veggie intake

1 red pepper , cut into quarters
2 tbsp olive oil
400g lean steak mince
1 medium egg
1 carrot , coarsely grated
50g stale breadcrumbs
40g cheddar , finely sliced
6floury rolls , halved
3 tbsp mayonnaise
¼ cucumber , or 1-2 mini cucumbers, sliced

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Put the pepper on a baking tray and rub with 1/2 tbsp oil. Roast in the oven for 25-30 mins, turning once halfway through. Remove and allow to cool slightly before finely chopping.
  • Tip the mince, roasted pepper, egg, carrot and breadcrumbs into a large bowl and mix well. Using your hands, shape the mixture into six equal burgers.
  • Heat the remaining oil in a large, heavy-based, non-stick frying pan over a medium heat. Fry the burgers for 5-6 mins each side until cooked through. Top with slices of cheddar. Spread the rolls with mayo, add the burgers and top with slices of cucumber.

Here's what you need: black beans, jarred roasted red pepper, garlic, cayenne pepper, cumin, salt, cornmeal

15 oz black beans, 1 can, drained and rinsed
½ cup jarred roasted red pepper, finely chopped
1 clove garlic, minced
¼ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon salt
¼ cup cornmeal

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In a large bowl, microwave black beans for 1 minute, or until softened.
  • Add roasted red peppers, garlic, cayenne, cumin, and salt. Mash until black beans are finely mashed.
  • Add cornmeal and mix until thoroughly combined.
  • Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment paper-lined sheet pan.
  • Bake for 30 minutes, or until firm and browned, flipping over halfway through.
  • Serve burgers with your favorite fixins.

1/3 cup Hellmann's® or Best Foods® Real Mayonnaise
1/4 tsp. Kosher salt
1/4 tsp. ground black pepper
1/4 tsp. cayenne powder
1/4 lb. extra sharp white cheddar cheese, coarsely grated
1/4 lb. extra sharp yellow cheddar cheese, coarsely grated
1/3 cup drained and finely chopped roasted red peppers or piquillo
1-1/2 lbs. lean ground beef
4 hamburger buns
8 thick slices double smoked bacon, crisp-cooked

Steps:

  • 1. Combine Hellmann's® or Best Foods® Real Mayonnaise, salt, pepper and cayenne in large bowl with fork. Stir in cheese and roasted peppers. Cover and refrigerate at least 30 minutes.
  • 2. Meanwhile, shape ground beef into 4 patties. Season, if desired, with salt and black pepper; set aside.

For the red pepper mayo:
1 cup mayonnaise
1/4 cup (packed) coarsely chopped and drained roasted red bell peppers
2 teaspoons drained capers
2 teaspoons fresh lemon juice
1/4 teaspoon kosher salt
For the burgers:
1/2 cup plain breadcrumbs
1/2 teaspoon freshly ground black pepper
18 ounces canned salmon, drained, picked through, flaked
2 tablespoons vegetable oil, divided
4 hamburger buns
1/3 cup drained roasted red bell peppers, cut into 1/4" strips

Steps:

  • Make the red pepper mayo:
  • Blend mayonnaise, bell peppers, capers, lemon juice, and salt in a blender, scraping down sides if needed, until smooth. Transfer to a small bowl.
  • Cook and assemble the burgers:
  • Mix breadcrumbs, pepper, and 1/2 cup red pepper mayo in a large bowl. Gently fold in flaked salmon. Divide mixture into 4 patties about 1/2" thick and 4" wide.
  • Heat 1 Tbsp. oil in a large nonstick or cast-iron skillet over medium-high until shimmering. Working in batches, cook buns, cut side down, until golden brown and toasted, about 2 minutes. Divide among plates.
  • Heat remaining 1 Tbsp. oil in same skillet. Cook salmon patties until golden brown and heated through, 2-3 minutes per side. Transfer burgers to bun bottoms. Spread about 2 tsp. red pepper mayo over burgers. Arrange bell pepper strips over, then top with bun to close.
  • Do Ahead
  • Red pepper mayo can be made 5 days ahead. Store in a resealable container and chill. Burger patties can be formed 1 day ahead. Cover and chill.

Ground beef is seasoned with basil and garlic then topped with Monterey Jack cheese. Roasted red peppers add an element of style to these Bay Area inspired burgers.

1 ¼ pounds lean ground beef
2 cloves garlic, minced
2 tablespoons extra virgin olive oil
¾ teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried basil
4 slices Monterey Jack cheese
4 roll (blank)s hamburger buns, split
2 tablespoons Dijon mustard
1 (6 ounce) jar roasted red peppers, drained and halved

Steps:

  • In a large bowl, combine the ground beef, garlic, olive oil, salt, pepper and basil. Lightly mix using your hands. Divide into 4 balls and lightly pat to flatten into patties.
  • Heat a skillet over medium-high heat until hot. Add burgers and fry until crusty brown on each side, about 8 minutes. Place slices of cheese on top of each patty during the last minute or so of cooking.
  • Spread 1/2 tablespoon of mustard onto each top bun. Place the patties onto the bottom buns, top with roasted peppers and cap with the top buns. Serve immediately.

This recipe is from the Muscle and Fitness Total Nutrition guide. I'm usually wary of recipes from these kinds of sources, but there are several excellent ones in this one. This is hands down the best turkey burger recipe I have found. The only change I will make next time is to saute the onions first. I am sensitive to them raw. Try this recipe. You'll be glad you did.

1 lb ground turkey
1/4 cup diced onion
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 whole roasted red peppers, halved (from water packed jar)
4 ounces part-skim mozzarella cheese, in 4 slices
4 multigrain hamburger buns
nonstick cooking spray

Steps:

  • If grilling, spray grill rack with cooking spray and fire it up.
  • If pan-frying like me, spray pan, but wait to heat it until almost ready to cook the patties.
  • Mix turkey, onion, vinegar, oregano, salt and black pepper in a bowl until combined; but try not to overwork the turkey, since too much handling will make it tough.
  • Form mixture into four patties.
  • Sear patties one minute per side, then turn down heat, or move to cooler part of grill.
  • Cook 3-5 minutes per side, or until center isn't pink anymore.
  • Top with roasted peppers and cheese, and keep on heat until cheese melts.
  • Transfer to buns, add preferred condiments and enjoy.

This recipe came from my local newspaper. I haven't tried it yet but sounds great. Burgers to be cooked in a skillet or under the broiler or even the barbecue for diehard barbecuers. You can double the recipe and freeze the patties in a freezer bag for up to one month.

1 large egg
2 tablespoons cold water or 2 tablespoons beef broth
1/4 cup dry breadcrumbs
1/2 onion, grated
1 garlic clove, grated
2 teaspoons Dijon mustard or 2 teaspoons prepared mustard
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 lb lean ground beef
canola oil

Steps:

  • Break egg into a large bowl; whisk with water until smooth. Add breadcrumbs, onion, garlic, mustard, salt and pepper. Mix well to blend flavours.
  • Crumble beef over egg mixture, with a wooden spoon, mix beef and egg mixture just until combined.
  • Shape into four to six patties, each about 3/4 inch thick.
  • Set a skillet that will hold burgers comfortably in one layer over medium-high heat. Brush bottom of skillet with oil. Heat until oil is just shimmering. Arrange burgers in skillet. Fry until brown and crisp on bottom, about six minutes per side.
  • Remove burgers to a plate topped with towelling and pat off any visible fat.
