5 tbsp butter
4 tbsp flour
1 cup chopped sweet onion
1 cup chopped red bell pepper
1 cup chopped yellow bell pepper
2 celery stalks chopped
1 1/2 cups sliced smoked andouille sausage approximately 3 links
2 garlic cloves minced
1 tsp ground mustard
1 tsp cayenne pepper
1 1/2 tsp paprika
1 tsp garlic powder or granulated garlic
1 tsp creole seasoning
1 tsp file powder
32 ounces chicken stock
1 pound peeled and deveined shrimp
1 cup jumbo lump crabmeat
6 ounces oysters and juices
1 bay leaf
1 tsp kosher salt
1 tsp freshly ground black pepper
2 cups cooked white rice

Steps:

  • Melt the butter in a large dutch oven or stock pot over medium/high heat.
  • Whisk in the flour and continue whisking until the mixture starts to turn golden brown and smell nutty, approximately 3-4 minutes. (Do not stop whisking or the roux will burn.)
  • Stir in the onion, bell pepper and celery. Continue cooking for 2-3 minutes, stirring constantly, until the vegetables begin to soften.
  • Add the sausage to the pot and stir to combine. Cook for 1 minute longer.
  • Stir in the garlic, mustard, cayenne, garlic powder, creole seasoning and file powder. Cook for 1 minute longer, stirring constantly and scraping up any brown bit on the bottom of the pan.
  • Slowly add the chicken stock to the pot stirring to combine. Bring the soup to a boil.
  • Turn the heat to low. Stir in the shrimp and oysters with oyster liquor (juices). Add the bay leaf, salt and pepper to the soup and stir to combine.
  • Simmer for 10 minutes or until the soup begins to thicken. Stir in the crabmeat.
  • Serve the seafood gumbo over rice, if desired. Sprinkle with chopped green onions and parsley for an extra pop of color.

1 cup canola oil
4 cups chopped onion
2 cups chopped celery
2 cups chopped green pepper
1 cup sliced green onions

2 tablespoons paprika

2 teaspoons oregano
1 teaspoon ground black pepper
6 cups small shrimp, rinsed and drained, or seafood of your choice
1 cup minced fresh parsley
2 tablespoons Cajun seasoning

Steps:

  • In a heavy Dutch oven, combine flour and oil until smooth. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir about 10 minutes more or until mixture is reddish brown. , Add the onion, celery, green pepper and green onions; cook and stir for 5 minutes. Add the chicken broth, water, okra, paprika, salt, oregano and pepper. Bring to boil; reduce heat and simmer, covered, for 10 minutes. , Add shrimp and parsley. Simmer, uncovered, about 5 minutes more or until seafood is done. Remove from heat; stir in Cajun seasoning.

1 pound shrimp, peeled and deveined
5 quarts water
4 carrots, sliced
4 onions, quartered
½ bunch celery, sliced
2 bay leaves
3 cloves garlic, sliced
2 sprigs fresh parsley
5 whole cloves
1 teaspoon ground black pepper
1 tablespoon dried basil
2 teaspoons dried thyme
½ teaspoon ground cayenne pepper
½ tablespoon ground white pepper
½ teaspoon ground black pepper
1 ½ teaspoons paprika
½ teaspoon dried thyme
½ teaspoon dried oregano
16 ounces crabmeat
1 bay leaf, crushed
1 teaspoon salt
¾ cup corn oil
2 cups diced onion
2 cups diced celery
2 cups chopped green bell pepper
1 teaspoon minced garlic
3 tablespoons file powder
2 teaspoons hot pepper sauce
1 ½ cups tomato sauce
1 pint shucked oysters

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Shell and devein the shrimp, reserve the shells. Place the shrimp in a covered bowl and refrigerate. Place the shells on a cookie sheet, and bake until the shells are dried and starting to brown on the edges. Turn off the oven.
  • Make the stock: In a 8 quart pot, put 5 quarts of water, 4 carrots, 4 onions, and celery. Add 2 bay leaves, sliced garlic, parsley, cloves, 1 teaspoons black pepper, 1 tablespoon dried basil and 2 teaspoons dried thyme. Add the shrimp shells. Bring the stock slowly to boil. Reduce heat to a gentle simmer and cook 5 to 7 hours, replacing water as needed, 2 or 3 times, by pouring more water down side of pot.
  • Remove stock from heat and strain. Press all liquid from the shells and vegetables, then discard them. Return liquid to heat and reduce stock to 2 to 3 quarts, or to your desired quantity (you will need 7 cups of this stock for this recipe). If clarity is desired, strain the stock through a cloth.
  • In a small bowl, combine the ground red, white, and black peppers, paprika, thyme, oregano, bay leaf and salt and set aside.
  • In a heavy pot, 5-quart or larger, heat oil over medium heat, warming the pot first. Add onions, celery and green pepper. Turn heat to high. Stirring frequently, add garlic, file, hot pepper sauce, and the pepper-herb mixture. Cook for 5 minutes, stirring constantly. Add tomato sauce and stir as it reduces over high heat. Add 7 cups of the stock and bring to a boil. Reduce heat and simmer for 1 hour, stirring occasionally.
  • When ready to serve, add shrimp, oysters, and crabmeat. Cover and wait 5 minutes. Turn off heat and let stand for 10 minutes.

¼ cup canola oil
8 oz smoked sausages
¼ cup unsalted butter
½ cup flour
1 piece medium onion (, diced)
2 teaspoons garlic (, minced)
1 piece medium green bell pepper (, diced)
1 cup celery (, chopped)
1 pound crab legs
1 tablespoon Creole seasoning
1 tablespoon chicken bullion powder or cubes
½ tablespoon smoked paprika
1 tablespoon thyme
2 pieces bay leaves
6 cups shrimp or chicken stock (, substitute with water)
1 pound cooked shrimp (, peeled and deveined)
1 tablespoon gumbo file
2 pieces green onions (, chopped)
¼ cup parsley
salt (, adjust to taste)
1-2 teaspoons butter or oil
1 pound shrimp with shells
remaining scraps of onion, garlic, and celery
1 bay leaf
1 teaspoon thyme
7 cups of water

Steps:

  • Add 1-2 teaspoons of butter or oil to a saucepan or skillet.
  • Then throw in shrimp shells, the remaining scraps of onion, garlic, celery together with aromatics like bay leaf and thyme.
  • Saute for about 5 -7 minutes, stirring constantly, to prevent any burns. Add about 7 cups of water to it.
  • Bring to a boil, lower heat, and let it simmer for about 10- 20 minutes.
  • Remove from heat and strain using a sieve. Set the shrimp stock aside.
  • Heat oil in a Dutch oven, over medium heat, then add sausages, brown for about 3-5 minutes, remove and set aside.
  • Pour in remaining oil, butter, and flour, cook on medium heat, stirring continuously, for about 10-15 minutes or until it turns a rich deep brown color just like chocolate. Do not walk away from the stove during this process. It might burn.
  • When you have achieved your desired color, add the onion, garlic, green bell pepper, and celery to the pot and cook for about 8- 10 minutes -stirring often.
  • Then return the sausages back to the pot, followed by crab legs, Creole seasoning, chicken bouillon or cubes, paprika, thyme, bay leaves, and let it cook for 5 minutes.
  • Pour in 6 cups of shrimp stock, bring to a boil, and let it simmer for about 20 - 30 minutes. Add the shrimp, and simmer for 5 more minutes.
  • Stir in the gumbo file powder, green onions, and chopped parsley.
  • Adjust the thickness of the soup and flavor with broth or water and salt.

1 tablespoon finely chopped garlic
2 quarts shrimp, crab or chicken stock

Dash hot sauce

1 cup diced celery
1 cup diced green bell pepper
3/4 teaspoon freshly ground black pepper
2 pounds medium shrimp, peeled and deveined
1 teaspoon Essence, recipe follows
1/2 pound lump crabmeat, picked over for shells and cartilage
1/3 cup green onion tops, chopped
1/2 cup coarsely chopped parsley leaves
2 tablespoons chopped fresh thyme leaves
1 tablespoon chopped fresh basil leaves
1/2 cup file powder, or to taste
Steamed White Rice, for serving
3 cups vegetable oil
5 cups all-purpose flour
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Heat the roux in a medium-sized heavy stockpot over medium-high heat. When hot, add the onions, celery and bell pepper. Stir mixture until onions begin to brown, about 5 minutes. Add the garlic and continue to cook for 1 minute. Slowly pour in stock, whisking constantly to prevent lumps from forming. Add the browned sausage, bay leaves, Worcestershire, hot sauce, cayenne, salt, and pepper.
  • Bring gumbo to a boil, reduce heat to medium and simmer until gumbo is slightly reduced, about 50 minutes. (Gumbo should cook long enough for the roux flavor to mellow and for any floury taste to dissipate.)
  • Season the shrimp with the Essence in a small bowl. Stir in the seasoned shrimp, crabmeat, green onions, parsley, thyme and basil. Cook until shrimp are cooked through, about 5 minutes. Taste and adjust seasonings, if necessary. Sprinkle in file powder and cook, stirring, 2 minutes more, or pass file at the table for guests to thicken as desired. Remove bay leaves before serving.
  • Serve in warmed soup bowls over steamed white rice.
  • Place a heavy, iron Dutch oven, (or iron skillet with deep sides) over medium heat and heat the oil until just smoking. Whisk in flour, a little at a time and cook, whisking constantly, until roux becomes smooth and thick. Continue to cook, constantly stirring with a wooden spoon and reaching all over bottom of pan, until roux darkens to desired color. Be careful not to produce specs of black. The roux must remain an even color throughout process. If specs appear you must start over.
  • For a Light Brown Roux, cook the mixture, over medium heat for 1 1/2 hours, or until the color of peanut butter. Remove about 1 cup of the light colored roux, cool completely, and set aside for the Delmonico's Seafood Okra Gumbo.
  • For a Medium Brown Roux, cook the mixture, over medium heat for an additional 30 minutes, or until the color of a copper penny when ready. Remove about 13/4 cups of the medium colored roux, cool completely, and set aside for Emeril's Country File Gumbo.
  • For a Dark Brown Roux, cook the mixture an additional 35 to 45 minutes. The color should resemble dark chocolate when ready. Remove all of the remaining dark roux from the pan and cool completely. Set aside for the Chicken and Sausage Gumbo. (See Cook's Note)
  • Combine all ingredients thoroughly.

1 lb smoked sausage sliced 1/4 inch thick
2 cups chopped onion
2/3 cup chopped green pepper
1/2 cup thinly sliced scallions (tops)
2 tbsp minced parsley
1 tbsp finely minced garlic
1 3 lb fryer cut up
2 lbs whole shrimp,deveined and tails removed.
roux: 2/3 cup vegetable oil and 2/3 cup flour
seasonings/liquid:
2 quart cold water
3 1/2 tsp salt
1 1/4 tsp black pepper
1/2 tsp cayenne
1 tsp dried thyme
2 whole bays leaves (crushed)
2 1/2 to 3 tbsp file powder (see above)

Steps:

  • Heat the oil over high heat. Add chicken and brown evenly. Remove and place in warm oven to keep warm. Make the roux by adding the flour to the oil in the pot, stirring constantly until dark brown (milk chocolate) over low heat. When the roux reaches the right color, quickly add the sausage, onion, green pepper, shallots parsley and garlic. Continue cooking over low heat for 10 minutes more, stirring constantly. Add 1/4 cup water, the browned chicken, and all of the seasonings except the file powder and mix gently but thoroughly. Keeping the heat at low, gradually add the rest of the water and bring the gumbo to a boil, stirring gently. When it boils, reduce the heat to low and simmer for about 45 minutes or until the chicken is quite tender. Remove the chicken and some of the sausage slices with a slotted spoon to a deep bowl and reserve for a different meal. Add the shrimp and cook about 8 minutes. Remove the pot and let the simmer die down. Add the file powder and stir. Let the gumbo stand in the pot for about 5 minutes after adding the file, then serve over boiled rice.

1/3 cup all-purpose flour
1 large onion, peeled and chopped
1/4 cup chopped scallion
1 -2 clove garlic, peeled and minced
1 stalk celery, chopped
1 (16 ounce) can whole canned tomatoes, in tomato juice
1 tablespoon tomato paste
2 tablespoons chopped parsley
1 teaspoon dried thyme
1 bay leaf
8 allspice berries
4 cloves
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1/4-1/2 teaspoon cayenne pepper
2 tablespoons lemon juice
2 quarts cold water
2 cups white lump crabmeat (several small whole crabs, cleaned, or cracked crab claws)
1 lb uncooked medium shrimp, peeled and deveined
1 1/2-2 tablespoons file powder

Steps:

  • Heat the oil in a large, heavy pan and add the flour.
  • Cook, stirring, to make a medium-brown roux (the color of peanut butter).
  • Add the onion, scallions, garlic and celery and cook until softened.
  • Add the tomatoes with their juice, breaking them down with the side of a spoon, then add the tomato paste, parsley, thyme, bay leaf, allspice, cloves, salt, peppers, cayenne to taste, lemon juice and water.
  • Bring to a boil, stirring well.
  • Add half the crabmeat and the whole crabs or claws.
  • Simmer for 1-1/2 to 2 hours, stirring occasionally.
  • If you like, you can scoop out allspice, cloves and bay leaf.
  • Add the shrimp and the remaining crab and simmer for a further 15 minutes.
  • Remove the pan from the heat and stir in enough file powder to thicken.
  • Do not boil the gumbo after adding the file powder.
  • Serve hot.
  • NOTE*****Other seafood, such as purged crawfish, lobster and well scrubbed clams may be added to the gumbo, as available.
  • Cooked seafood may be used, too.
  • The finished gumbo will not have the richness of flavor given by crab cooked in it, but will still be delicious.
  • Just heat cooked seafood through in the finished sauce.

  • Heat the seafood broth in a pot. You want it steaming, not simmering. In another large soup pot, heat the oil and bacon fat over medium-high heat. Stir in the flour and make sure there are no lumps. Cook this roux until it is the color of dark chocolate, which will take anywhere from 40 minutes to an hour. You will want to use a wooden spatula or spoon to stir. You will also want to lower the heat as the roux browns, until its at low heat when the roux is ready. Drink beer and listen to Cajun music while doing this. It helps.
  • When the roux is ready, add the chopped onion, pepper and celery to the pot and mix well. Cook this, stirring often, for about 5 minutes.
  • Stir in the garlic powder, paprika, pepper, oregano, cayenne and celery seed. Ladle in some seafood broth and mix well. Turn the heat up to medium-high, and keep stirring in the seafood stock until the gumbo thins out. Typically you will need anywhere from 6 to 9 cups.
  • Add salt to taste and simmer gently for 30 minutes to an hour, stirring from time to time. The roux should not break, but if oil starts pooling on the surface of the gumbo, skim it off.

  • To make roux, whisk together flour and bacon drippings in a dutch oven and cook in 300 degree oven for 90 minutes, whisking every 15 minutes or so. This temperature should be hot enough to develop a rich dark roux without burning it, but if it smells like it's burning, reduce the temperature.
  • While roux is cooking, pulse onion, bell pepper, celery, and garlic in a food processor. You want the cut pieces to be small as if you were dicing them with a knife.
  • Once roux is done, transfer dutch oven to your stove top. Add onion mixture and sausage. Cook over medium low heat. You want to cook the vegetables and sausage while not burning the roux. Stir occasionally. Cook until vegetables are tender, about 15 minutes.

  • Peel, devein and rinse the shrimp. Pat dry and sprinkle with some Creole seasoning and set aside.
