SEAFOOD CAKES WITH HERB SAUCE

SEAFOOD CAKES

Seafood Cakes image

Do you LOVE crab cakes but HATE the price ?? At around $10 for frozen seafood plus a few bits & pieces, you can serve up 6 fat cakes that are better than a lot of cakes that I have paid big bucks for in restaurants. A healthy one & a half pound combination of fish, shrimp & crab that you will taste all the way through these gems.

Provided by Captain_67

Categories     < 4 Hours

Time 1h30m

Yield 6 cakes, 3-6 serving(s)

Number Of Ingredients 15

1 lb chunky white fish (not flaky)
4 ounces peeled raw shrimp
4 ounces crabmeat (1 Dungeness crab cluster well picked)
1 onion, finely diced
1 garlic clove, finely diced
2 green onions, finely diced
24 Ritz crackers or 24 jatz crackers, crushed into chunks
2 tablespoons mayonnaise
1 egg
1 teaspoon dried parsley
1/2 teaspoon dill
1/4 teaspoon salt
1/4 teaspoon pepper
5 tablespoons olive oil
2 tablespoons unsalted butter

Steps:

  • Make the crab cakes in advance so they have time to firm up in the refrigerator before you cook them.
  • Saute onion & garlic then remove to cool.
  • If fish was frozen, squeeze "gently" to remove excess water.
  • If crab is cooked, rinse gently under cold water to remove excess salt then drain & dry.
  • Dice fish & shrimp into peanut size chunks.
  • Combine all ingredients & mix gently just until well blended.
  • Shape the mixture into 6 fat crab cakes & shape into discs.
  • Put them on a plate and stick them in the refrigerator, uncovered to chill & dry for 30 to 60 minutes.
  • To serve, heat 3 tablespoons each of butter & olive oil in a pan over medium heat.
  • Put the crab cakes with the top (dry) side down and cook for about 15 minutes, gently flip over & cook for another 15 minutes so each side is nice and crisp. Internal temp should hit 145F (62C).

CRAB CAKES

Crab Cakes image

The key to an authentic crab cake recipe is the ratio of crabmeat to filling. It should be packed with crab and spices but not weighed down by breadcrumbs.

Categories     appetizers     fish     fried     seafood

Time 50m

Yield 3-4 servings

Number Of Ingredients 19

1 egg
1/4 c. mayonnaise
1 tsp. dijon mustard
1 tsp. finely grated lemon zest
2 tbsp. chopped parsley
1 1/2 tsp. Old Bay seasoning
1 lb. fresh lump crab meat
1/2 c. panko breadcrumbs
2 tbsp. melted butter, plus more for greasing
Lemon wedges and spicy remoulade, for serving
1 c. mayonnaise
2 tbsp. hot sauce
2 tbsp. chopped parsley
1 tbsp. capers, drained and chopped
1 clove garlic, chopped
1/4 tsp. paprika
Juice of 1 lemon
1/2 tsp. kosher salt
1/4 tsp. ground black pepper

Steps:

  • For the crab cakes: In a medium bowl, beat the egg. Stir in the mayonnaise, dijon mustard, lemon zest, parsley and Old Bay seasoning and mix well to combine. Add the crab meat and panko and mix gently but thoroughly to combine. Form 8 crab cakes by pressing them into shape with 1/3-cup measuring cup. Place on a greased sheet tray and refrigerate for 30 minutes.
  • For the spicy remoulade: In a small bowl, whisk to combine the mayonnaise, hot sauce, parsley, capers, garlic, paprika, lemon juice, salt and pepper. Refrigerate until ready to use.
  • Place an oven rack 8 inches from the broiler element. Heat the broiler over high heat. Brush the tops of the crab cakes with melted butter. Broil until golden on top and heated through, 4 to 5 minutes. Serve immediately with lemon wedges and spicy remoulade.

CRISPY THAI CRAB CAKES

Crispy Thai Crab Cakes image

Impress yourself and your guests with these crispy Thai crab cakes with quick sriracha mayo and homemade sweet chili sauce. The addition of small amount of shrimp will enhance the texture of these crab cakes. The crispness is irresistible.

Provided by Holly Ford

Categories     Appetizer     Main Course

Time 30m

Number Of Ingredients 26

2 (6 oz can) lump crab meat (drained well)
5 medium shrimp (peeled and chopped finely)
2 green onion (chopped finely)
4 tbsp cilantro (chopped finely)
1 red chili (chopped finely)
1 tsp ginger paste
2 tsp fish sauce
1 tbsp lime juice
salt & pepper (to taste)
1 egg
1/2 cup panko breadcrumb
4 tbsp oil
1/2 cup flour
2 eggs
2/3 cup panko breadcrumb
1/2 cup mayonnaise
1 1/2 tbsp sriracha sauce
2 tsp lime juice
salt and pepper (to taste)
1/2 cup rice vinegar
6 tbsp water
1/2 cup sugar
3 cloves garlic (minced)
1/2 tsp red chili flakes
1/2 tsp salt
1 tbsp cornstarch + 2 tbsp water

Steps:

  • In a mixing bowl, combine crab meat, shrimp, green onion, cilantro, red chili, ginger puree, one egg, and 1/2 cup panko crumbs. Season with fish sauce, lime juice, salt and pepper.
  • Mix the ingredients gently, and press them to make 2 1/4-inch in diameter and 3/4 inch thick patties. (You will get about 8 patties)
  • Beat 2 remaining eggs in a shallow bowl. Prepare flour and the remaining panko crumbs in separate bowls. Coat the patties in the order of flour, egg, and then panko crumbs.
  • Heat a generous amount of oil in a pan over medium heat. Add patties and pan-fry them until they are golden and crisp, about 3-4 minutes. Flip to the other side and fry for another 3 minutes. Adjust the heat level if the surface browns too quickly.
  • Keep the first batch on a wired rack to prevent them from getting soggy on the bottom.
  • To make the sriracha mayo, combine all the ingredients in a small mixing bowl and mix well.
  • To make the sweet chili sauce, mix rice vinegar, water, sugar, garlic, red chili flakes, and salt in a saucepan and bring to boil. Mix the cornstarch and 2 tbsp water in a small mixing bowl and add to the sauce mixture. Continue to boil until the sauce thickens. Remove the pan from heat and let it cool down.
  • Sriracha mayo and sweet chili sauce can be stored in the refrigerator up to 1 month.

  • Heat a large heavy skillet, such as cast iron, over medium-high heat. Add 1/4 cup oil to the skillet. (I recommend 12 inch - anything smaller than that and you may need to cook two batches.)
  • Use a large ice cream scoop / disher scoop to get a portion of the crab cake mix from the bowl (or smaller, cookie scoop to make mini crab cakes). Place directly into the hot oil in the skillet and use the back of a fish spatula to press down on the top. (Alternatively, you can divide into four-six equal portions and form patties with your hands.)
  • Cook the patties for 3-4 minutes, flip carefully, and cook for another 3-4 minutes (more or less time depending on how big the patties are or how hot your burners are) over medium-high heat, until the outside is golden brown and crispy.
