ASIAN SHRIMP AND VEGETABLE MEDLEY STIR-FRY



Asian shrimp and vegetable medley stir-fry image

A savory and sweet Asian stir-fry which is easy and delicious. Serve it with hot rice.

1 lb (shrimp)
1 red onion
1 cup snow peas
1 red bell pepper
1 1/2 cups mung bean sprouts
2 tablespoons finely chopped garlic
1 teaspoon oyster sauce
2 teaspoons soy sauce
1 1/2 teaspoons fish sauce
olive oil
salt and pepper
scallion ((roughly chopped, for garnishing))
cilantro ((roughly chopped, for garnishing))
cooked rice

Steps:

  • Peel and devein the shrimps. Mixed with 1/8 teaspoon of salt and black pepper.
  • Cut onion into thin wedges. Slice snow peas into 0.5'' thick strips (you can skip this if your snow peas are small enough). Cut red bell pepper into 1'' x 1'' pieces.
  • Put a pan/skillet over medium - medium high heat. When it's hot, add some oil and red onion. Sauté onion until fragrant, about 2 minutes.
  • Add red bell pepper and snow peas to the pan, stir-fry for about 2 minutes.
  • Add mung bean sprouts, 1/8 teaspoon of salt, black pepper and stir-fry for about 1 minute or just until all veggies are 80-90% cooked. Transfer to a plate.
  • Make sure the pan is hot, add some oil and shrimps. Brown the shrimps for 1-2 minutes.
  • Add garlic and add all veggies back to the pan. Add oyster sauce, soy sauce and fish sauce and stir to coat everything well in sauces. Stir fry until all ingredients are cooked through.
  • Garnish with scallion and cilantro. Serve hot with rice.

1/4 cup water
1 teaspoon salt
1/4 teaspoon garlic powder

1 teaspoon plus 1 tablespoon olive oil, divided
2 cups fresh broccoli florets
2 medium carrots thinly sliced
1 large onion, sliced and quartered
1 cup sliced celery
2 medium zucchini, halved lengthwise and thinly sliced
1 medium sweet red pepper, thinly sliced
1 cup sliced fresh mushrooms
2 cups thinly sliced cabbage

Steps:

  • In a small saucepan, heat bouillon and water for 1 minute; stir well. Stir in the salt, garlic powder, pepper and 1 teaspoon oil., In a large nonstick skillet or wok, stir-fry the broccoli, carrots, onion and celery in remaining oil for 2-3 minutes. Add the bouillon mixture; cook and stir for 3 minutes. Add zucchini and red pepper; stir-fry for 3 minutes. Add mushrooms and cabbage; stir-fry 1-2 minutes longer or until crisp-tender.

1 stick butter or margarine
1 10oz. can baby corn nuggets with juice
1 cup mushroom slices or 2 cups whole shitake
1 small can (approx 5 oz.) sliced black olives drained
1 10oz. can bean sprouts
4 cloves of garlic, sliced (less or more to taste; minced is fine if you don't like the slices)
1 cup water
1 ½ tsp. parsley flakes or Italian seasoning
1 tsp. marjoram
2 tsp. paprika
1/2 cup dry white wine
flour, as needed for thickening
2 lbs sea scallops
1 lb large shrimp (approx 24) peeled & de-veined
Grated cheese (optional)
Rice or Pasta (brown rice works very well for this)

Steps:

  • In a large skillet combined first 10 ingredients. Cook on medium heat for 15 minutes or until vegetables are tender. Add wine, cook for 2 minutes. Add thickener one teaspoon at a time and let cook for 1-2 minutes before adding more. Continue until creamy consistency is achieved. Reduce temperature to medium-low. Add scallops and cook covered for 5 minutes. Add shrimp and cook covered for 3 minutes or unit done. Serve over rice or pasta, sprinkle with cheese if desired.

2 tablespoons olive oil, divided
1 large yam, peeled and cut into 1 inch pieces
1 large parsnip, peeled and cut into 1 inch pieces
1 cup baby carrots
1 zucchini, cut into 1 inch slices
1 bunch fresh asparagus, trimmed and cut into 1 inch pieces
½ cup roasted red peppers, cut into 1-inch pieces
2 cloves garlic, minced
¼ cup chopped fresh basil
½ teaspoon kosher salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease 2 baking sheets with 1 tablespoon olive oil.
  • Place the yams, parsnips, and carrots onto the baking sheets. Bake in the preheated oven for 30 minutes, then add the zucchini and asparagus, and drizzle with the remaining 1 tablespoon of olive oil. Continue baking until all of the vegetables are tender, about 30 minutes more. Once tender, remove from the oven, and allow to cool for 30 minutes on the baking sheet.
  • Toss the roasted peppers together with the garlic, basil, salt, and pepper in a large bowl until combined. Add the roasted vegetables, and toss to mix. Serve at room temperature or cold.

¼ cup olive oil
2 large sweet potatoes, sliced
4 red potatoes, cubed
1 large onion, sliced into rings
1 teaspoon minced garlic
2 green bell peppers, sliced
2 red bell peppers, sliced
2 carrots, shredded
¼ cup Italian-style seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the bottom of a 9x13 inch baking dish with oil. Spread sweet potatoes on the bottom, then top with red potatoes, onion, garlic, green bell peppers, red bell peppers and carrots. Sprinkle seasoning generously over all and cover dish with aluminum foil.
  • Bake at 350 degrees F 1 1/2 hours or until potatoes are cooked through and tender; remove foil cover and stir.
  • Change oven temperature to 425 degrees F (220 degrees C) and bake mixture in oven for another 1/2 hour, or until browned on top.

1 tsp wholegrain mustard
½ tsp honey
1 tbsp cider vinegar
2 leeks , trimmed and sliced into chunky rings
400g green bean , trimmed
140g thin-stemmed broccoli , cut into smaller pieces
200g fresh or frozen pea

Steps:

  • Bring a large pan of water to the boil. Whisk the oil with the mustard, honey and vinegar in a large bowl and season.
  • Put the leeks in the water, bring back to the boil, then simmer gently for 1 min. Add the beans and cook for 2 mins, then add the broccoli and simmer everything for 4 mins. Finally, add the peas, bring back to the boil and simmer for 1 min more. Drain really well, then tip into the large bowl and toss through the dressing. Serve straight away.

  • For the taro basket, spread the julienned taro in a criss-cross pattern over a large steel mesh strainer, letting some of the taro hang over the edges. The taro will be slightly wet and starchy after it is julienned, which is exactly what you want for maximum adhesion. Take another steel mesh strainer of the same size and place it over the top so the taro strands are sandwiched between the two strainers.
  • In a wok or pot, heat 6 cups of oil to 325 degrees F (use a thermometer to check the temperature), and place the “nest,” still sandwiched between the two strainers, in the oil. Fry until golden brown, tilting the basket in different angles so the entire taro basket is fried evenly. Using a wok for frying is ideal, as you will have more room without having to use excessive amounts of oil, but a deep pot large enough for the basket will work also. Be sure to place the taro basket in the pot slowly and use the utmost caution! Cut the mantle so you have flat pieces, and remove the inside skeleton. Cut the flat pieces into 2 by 3 inch rectangles, and score them diagonally in a criss-cross pattern, making sure not to cut the squid all the way through.
