SEAFOOD TOSTADA

1/2 pound octopus legs, cleaned
1 teaspoon kosher salt
3 1/4 cups extra-virgin olive oil
6 sprigs fresh thyme
2 garlic cloves
3 pieces lemon peel
1/2 pound 16/20 shrimp, cleaned and deveined
1/4 pound cleaned calamari tubes and tentacles, cut 1-inch-thick
1 cup distilled white vinegar
6 peppercorns
1 bay leaf
1 Fresno chile, sliced thinly
1 jalapeno chile, sliced thinly
1 serrano chile, sliced thinly
2 1/2 cups vegetable oil
Eight 3-inch store-bought heirloom corn tostadas
1 Persian cucumber, sliced thinly
4 radishes, sliced thinly
Juice of 2 limes
1 bunch fresh cilantro, chopped (reserve 6 leaves for garnish)
2 tablespoons extra-virgin olive oil

Steps:

  • For the seafood: Place the octopus in a pressure cooker and cover with water by 4 inches. Add the salt, 1/4 cup olive oil, 3 sprigs thyme and 1 clove garlic. Lock the lid according to the manufacturer's instructions and pressure cook for 40 minutes. Follow the manufacturer's instructions for releasing the pressure. Drain, let cool and slice 1-inch thick.
  • Meanwhile, place the remaining 3 cups extra-virgin olive oil in 8-quart saucepot with the lemon peels, remaining 3 sprigs thyme and 1 garlic clove. Heat to 190 degrees F. Poach the shrimp in the oil until cooked through, about 3 minutes, then remove with a slotted spoon to a bowl. Poach the calamari in the oil until cooked through, about 3 minutes. Remove with a slotted spoon to another bowl and allow the shrimp and calamari to cool in the fridge.
  • For the pickled chiles: Bring the vinegar to a boil in a saucepot with the peppercorns and bay leaf. Turn off the heat and let cool. Pour over the chiles in a bowl and allow to pickle for 20 minutes.
  • For the tostadas: Clip a deep-frying thermometer to a large, heavy-bottomed skillet. Heat the vegetable oil to 375 degrees F. Fry tostadas until golden, 1 to 2 minutes each. Remove with a slotted spoon and drain on paper towels to cool.
  • For plating: Add all the chilled seafood, chiles, cucumber, radish, lime juice and chopped cilantro in a large bowl and mix together. Place a large scoop of seafood on a tostada, then garnish with cilantro leaves and drizzle with the oil. Repeat with remaining ingredients to make 7 more tostadas.

2 tablespoons lime juice

SAUCE:
1 cup sour cream

1 teaspoon grated lime zest

ASSEMBLY:
10 tostada shells

Steps:

  • Place first 11 ingredients in a large bowl; toss to combine. Gently stir in avocado; let stand 15 minutes., In a small bowl, mix sauce ingredients. To serve, spread tostada shells with sauce. Top with shrimp mixture.

1 medium ripe avocado, peeled and chopped, divided
1 tablespoon water
3 teaspoons lime juice, divided
2 teaspoons blackened seasoning, divided
1 teaspoon ground cumin
1 can (15 ounces) black beans, rinsed and drained
1 small navel orange, peeled and chopped
1/4 cup chopped red onion
1 jalapeno pepper, seeded and chopped
1 tablespoon minced fresh cilantro
6 tostada shells
1 cup shredded reduced-fat Mexican cheese blend
1 tablespoon canola oil
1 pound uncooked large shrimp, peeled and deveined

Steps:

  • Preheat oven to 350°. In a small bowl, combine 2 tablespoons avocado, water, 1 teaspoon lime juice, 1 teaspoon blackened seasoning and cumin. Set aside 1/4 cup beans; add remaining beans to avocado mixture and mash with a fork. Stir in reserved whole beans. Set aside., For salsa, in a small bowl, combine orange, onion, jalapeno, cilantro, and the remaining avocado and 2 teaspoons lime juice. Cover and refrigerate until serving., Place tostada shells on ungreased baking sheets; spread with bean mixture. Sprinkle with cheese. Bake until bean mixture is heated through and cheese is melted, 4-6 minutes., Meanwhile, in a large nonstick skillet, heat oil over medium-high heat. Add shrimp and remaining 1 teaspoon blackened seasoning. Cook and stir until shrimp turn pink, 4-6 minutes. Arrange over tostada shells; serve with salsa.

2 dried ancho chiles, stemmed and seeded
3 1/2 tablespoons fresh lime juice (from about 3 limes), plus wedges for serving
3 tablespoons vegetable oil, plus more for frying
1 large clove garlic, chopped
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 teaspoon cayenne pepper
Kosher salt
1 1/2 pounds medium shrimp, peeled and deveined
12 corn tortillas
3 avocados
3 scallions, thinly sliced (white and green parts separated)
2 tablespoons chopped fresh cilantro
Sour cream and diced tomato, for topping

Steps:

  • Toast the chiles in a dry skillet over medium heat, turning often, until they soften slightly, about 1 minute. Transfer to a small bowl and cover with hot water; let sit 15 minutes.
  • Transfer the chiles and 3 tablespoons of the soaking water to a blender. Add 1 1/2 tablespoons of the lime juice, 1 tablespoon of the vegetable oil, the garlic, oregano, cumin and 1/4 teaspoon each of the cayenne and salt; puree until almost smooth. Toss with the shrimp in a large bowl; refrigerate 15 to 30 minutes.
  • Meanwhile, heat about 1/4 inch vegetable oil in a medium skillet over medium-high heat. One at a time, fry the tortillas, flipping once, until golden brown and crisp, about 1 minute. Remove to paper towels to drain.
  • Halve and pit the avocados; scoop the flesh into a bowl and mash. Mix in the scallion whites, 1 1/2 tablespoons of the lime juice, the remaining 1/4 teaspoon cayenne pepper, the cilantro and 1/2 teaspoon salt.
  • Heat the remaining 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook, stirring occasionally, until just opaque, about 4 minutes. Season with salt and drizzle with the remaining 1/2 tablespoon lime juice.
  • Spread the mashed avocado mixture on the tostadas. Top with the shrimp, some sour cream and diced tomato, and the scallion greens. Serve with lime wedges.

This is a really different but delicious appetizer. It has lots of ingredients I love...avocados, black beans, crabmeat, shrimp, and fresh tuna! If you want to serve it as a main course, you could leave the tortillas whole. This recipe is from Chef Irv Miller at Jackson's in Pensacola.

6 corn tortillas or 6 flour tortillas, your preference, 6 inches each
3 tablespoons olive oil
12 ounces fresh tuna, small diced
3 tablespoons fresh lime juice
12 gulf shrimp, peeled and deveined, size should be 21-25 count
1 bunch fresh scallions
4 ounces lump crabmeat, cleaned of cartilage
1 (15 ounce) can black beans, drained and rinsed
1 ripe Hass avocado, pitted and small diced
1 teaspoon southwest seasoning
2 teaspoons red onions, chopped fine
salt and pepper
3 tablespoons cilantro, chopped fine

Steps:

  • In a chilled mixing bowl, combine cut tuna, avocado, onion, cilantro, lime juice, salt and pepper. Let chill at least one hour, or until the tuna is opaque. It can chill for up to 8 hours if you'd like to do this ahead of time. (The lime juice will cook the tuna).
  • Cut 2 3" rounds from each tortilla. Pan fry the tortillas in olive oil until crispy, drain on a paper towel and then season with Southwest seasoning. You will have to add the olive oil as you go, don't add it all at once!
  • Saute the shrimp in 2 tsp olive oil, and then gently heat the crabmeat in the same pan.
  • Place each seasoned tostada on a salad plate and top with a dollop of the tuna mixture, then a smaller dollop (2 shrimp and some crabmeat) of the warm mixture on top of the tuna mix.
  • Garnish with cumin seasoned sour cream and a little honey.
  • Please note: prep time does not include marinating time for the tuna.

1 can (4 ounces) medium shrimp, rinsed and drained
4 large ripe avocados, halved and pitted
1 to 2 tablespoons lemon juice
1/4 cup crushed potato chips, optional

Steps:

  • In a large bowl, combine the mayonnaise, celery, onions, salt if desired and pepper. Add crab and shrimp; mix well. Peel avocados if desired. Sprinkle avocados with lemon juice; fill with seafood mixture. Sprinkle with potato chips if desired. , Place in an ungreased 13-in. x 9-in. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until bubbly.
