WHITE CHOCOLATE OATMEAL COOKIES

My sons and grandsons manage our ranch...and they always seem to have one hand in the cookie jar-especially when I bake these crunchy morsels! Away from the kitchen, I enjoy my large garden and our fast-growing family.

Number Of Ingredients 13

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
3 teaspoons vanilla extract
1 teaspoon coconut extract
1-1/2 cups quick-cooking oats
1-1/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup sweetened shredded coconut, toasted
6 ounces white baking chocolate, coarsely chopped
Additional sugar

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Add extracts. Combine the oats, flour, salt and baking soda; gradually add to creamed mixture until blended. Stir in the coconut and chocolate., Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Flatten with a glass dipped in sugar. Bake at 350° for 8-9 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

3 pounds confectioners' sugar
1 can (14 ounces) sweetened condensed milk
1/2 cup butter, melted
3 teaspoons peppermint extract
3 pounds milk chocolate candy coating, coarsely chopped

Steps:

  • In a large bowl, beat confectioners' sugar, milk, butter and extract until smooth. Shape into 1/2-in. balls and flatten into patties. Freeze 30 minutes. , In a microwave, melt half of candy coating at a time; dip patties into chocolate. Let excess drip off. Place on waxed paper-lined baking sheets until set. Store in airtight containers.

1 package (3.4 ounces) instant vanilla pudding mix
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped nuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the oats, flour, dry pudding mix, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chocolate chips and nuts. , Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks.

1 cup plus 2 tablespoons butter, softened, divided
2 cups packed brown sugar
2 large eggs, room temperature
4 teaspoons vanilla extract, divided
3 cups old-fashioned oats
2-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt, divided
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1 cup chopped pecans

Steps:

  • In a large bowl, cream 1 cup butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and 2 teaspoons vanilla. Combine the oats, flour, baking soda and 1/2 teaspoon salt; gradually add to creamed mixture and mix well. Set aside., In a large heavy saucepan over low heat, combine the condensed milk, chocolate chips and remaining butter and salt. Cook and stir until smooth. Add the nuts and remaining vanilla. Press 4 cups oat mixture into an ungreased 13x9-in. baking pan; spread with chocolate mixture. Sprinkle with remaining oat mixture., Bake at 350° for 30-35 minutes. Cool completely on a wire rack. Cut into bars.

2 cups all-purpose flour
1/2 cup whole wheat pastry flour
1/2 cup baking cocoa
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup cold butter, cubed
3/4 cup vanilla yogurt
1/2 cup buttermilk
1 large egg, room temperature
1 teaspoon peppermint extract
1 cup 60% cacao bittersweet chocolate baking chips
1 tablespoon coarse sugar
2 ounces bittersweet chocolate, melted
1/4 cup crushed peppermint candies

Steps:

  • In a large bowl, combine the first six ingredients. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the yogurt, buttermilk, egg and extract; add to crumb mixture just until moistened. Stir in chocolate chips. , Turn onto a floured surface; knead 10 times. Divide dough in half; transfer each portion to a greased baking sheet. Pat into a 6-in. circle. Cut into six wedges, but do not separate. Sprinkle with coarse sugar. , Bake at 400° for 18-20 minutes or until puffed and tops are cracked. Remove to wire racks; cool slightly. In a separate bowl, whisk flour, cocoa, salt and baking soda; gradually beat into creamed mixture.
