Steps:

  • In a large pot, add the cleaned stock fish, the fresh fish and the prawn/shrimp heads(the head has lots of delicious flavors).Add some minced onions, cameroun pepper , some seasoning and salt to taste.Add a little water and let it boil for about 5 minutes. Take out the steamed fresh fish and set aside- then add more water into the pot , cover and boil until the stock fish is tender. Now, you can take out the prawn heads; add the cleaned dried fish, add the blended pepper mix, palm oil, iru, crayfish , taste for seasoning and salt and add if needed.Mix well, cover the pot and let it boil for about 10 minutes. Add the blended/grated okro, stir until the okra is well combined; then add the chopped okra , mix well and add the fresh cleaned prawns and green vegetables. Finally, add the steamed fish and simmer for 5 minutes and you have a delicious sea food okra soup , ready to enjoy as it is , or serve as an accompaniment to any swallow of choice or eko.

Okra soup is a traditional tomato-based soup that originated in West Africa. While you can add any protein to this dish, I like using shrimp when it's in season in the Lowcountry because it pairs really well with the okra.

2 cups medium shrimp, peeled and deveined, shrimp reserved for the okra soup, shells cleaned in cold water and reserved for the shrimp broth
1 cup large-chopped carrot
1 cup large-chopped celery
1 cup large-chopped onion
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1 bay leaf
2 tablespoons olive oil
2 garlic cloves, minced
1 large onion, chopped
1 medium green bell pepper, chopped
2 tablespoons unsalted butter
2 cups fresh or thawed frozen corn
2 cups thawed frozen lima beans
1 cup diced fresh Roma tomatoes
One 28-ounce can diced tomatoes
Kosher salt and freshly ground black pepper
2 1/2 cups sliced fresh or thawed frozen okra
1 teaspoon ground ginger
Juice of 1/2 lemon
Steamed rice, for serving, optional

Steps:

  • For the shrimp broth: Put the shrimp shells, carrots, celery, onions, butter, salt, bay leaf and 10 cups water in a large pot. Bring to a boil for 5 minutes. Reduce the heat and simmer, covered, for about 45 minutes, making sure to skim off and discard any impurities that rise to the top. Strain the liquid, reserving 3 cups of the broth for the okra soup. Reserve the additional broth for another use.
  • For the okra soup: Heat a large gumbo pot or Dutch oven over medium-high heat, add the olive oil, garlic, onions, green peppers and 1 tablespoon of the butter and saute until the vegetables soften. Next, add the corn, lima beans and Roma tomatoes and mix together. Add the canned diced tomatoes and reserved 3 cups shrimp broth, stir, cover, bring to a simmer and cook for about 20 minutes.
  • While the soup is simmering, melt the remaining tablespoon of butter in a medium skillet, add the reserved shrimp and season with salt and pepper. Cook until the shrimp begin to turn pink. Add the okra, ground ginger and lemon juice, stir to mix and then cook until the okra and shrimp are cooked through.
  • Once the soup has simmered for 20 minutes, add the shrimp and okra mixture to the soup. Cover and cook for an additional 10 minutes. Stir the soup, then serve over rice (or enjoy it without rice).

I've had this recipe copied in my home recipe file for so long I have no idea now where I even got it from, but it's one of my favorite gumbos. When fresh okra is in season, definitely give this a try.

1 quart okra, cut into 1/2 in. pieces
2 garlic cloves, chopped
2 tablespoons oil
1/4 cup parsley, chopped
2 quarts water
1 (16 ounce) can stewed tomatoes
2 -3 lbs shrimp
2 bay leaves
2/3 cup oil
2 tablespoons Worcestershire sauce
1/2 cup flour
2 small boiled crabs
2 medium onions, chopped
salt
1 bell pepper, chopped
1 1/2 teaspoons black pepper
2 celery ribs, chopped
1/2 teaspoon cayenne pepper

Steps:

  • Peel and devein shrimp. Set aside in refrigerator. Boil shrimp shells in 2 qt: several hours to make a stock. Set aside.
  • In a heavy skillet, heat 2 tbs oil and saute the okra about 1/2 hour. Set aside.
  • In a large (6-8 qt.) heavy Dutch Oven make a dark brown roux with the oil and flour.
  • Add onions, bell pepper, celery, garlic and parsley and saute until tender.
  • Add tomatoes and cook 15 minutes.
  • Add sauteed okra, shrimp stock, crabs (broken into quart leaves, Worcestershire sauce, black pepper and cayenne. Bring to a slow boil and simmer for 2 hours, stirring occasionally. Add salt to taste.
  • Add the peeled shrimp and continue cooking until the shrimp are done.
  • Serve over steamed rice. This dish is best if cooked a day in advance and left overnight.

1/2 cup Italian plum tomatoes, peeled, seeded and chopped
2 tablespoons olive oil
1/2 cup chopped onions
2 tablespoons finely chopped fresh garlic
1 tablespoon finely chopped fresh shallots
1/4 cup chopped celery
1/4 cup chopped green bell peppers
2 quarts fish stock
1 cup diced firm-fleshed fish, such as grouper, tile, monk or sea bass (about 1/2 pound)
1/4 cup chopped red bell peppers
1 tablespoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
Black pepper
6 bay leaves
1 tablespoon minced fresh basil leaves
1 teaspoon minced fresh oregano leaves
1 teaspoon stemmed fresh thyme
1 cup fresh shrimp, peeled and deveined, (about 1/2 pound)
1 cup sliced fresh okra, (about 8 large)
2 teaspoons Creole Seasoning, recipe follows
1 cup shucked fresh oysters, in their liquor
1 cup fresh lump crabmeat, picked over for shells and cartilage
1 teaspoon file powder (ground sassafras), (available in specialty food stores)
4 cups cooked white rice
Chopped green onions, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Heat oil in a large pot over high heat, add onions, celery and bell peppers, and saute 1 minute. Season with salt and 4 turns of pepper and saute 1 minute. Add the tomatoes, garlic, and shallots, and saute, stirring occasionally, about 4 minutes more.
  • Stir in stock, then add fish, Worcestershire, hot sauce, bay leaves, basil, oregano and thyme, and bring to a boil. Cook over high heat, stirring occasionally, about 8 minutes. Reduce heat to medium.
  • Stir in shrimp, okra and Creole seasoning, and simmer 10 minutes. Fold in oysters and crabmeat and simmer 5 minutes more. Skim the impurities from the top of the gumbo, turn the heat to high and boil vigorously 5 minutes. Slowly sprinkle in the file, stirring to incorporate thoroughly, and cook, stirring, 2 minutes more.
  • To serve, ladle gumbo into bowls or soup plates, add rice and sprinkle with green onions.
  • Combine all ingredients thoroughly.

  • Peel and de-vein the shrimp, and set aside, covered, in the refrigerator. Rinse the shrimpshells and heads, place in a non-reactive stock pot along with 2 quarts of water.
  • Meanwhile, wash the crabs well under running water, place in a non-reactive pot with 1 quart of water, bring to a boil and simmer for 20 to 30minutes.
  • Strain, reserving stock and crabs. When the crabs are cool enough to handle, snap both claws off, then break the body in half. Set aside.
  • In a heavy bottomed skillet, heat 2 tablespoons of oil, add the okra, and sauté over medium high heat for about 10 to 15 minutes or until all the“ropiness” is gone.
  • Place the 2/3 cup oil in a large (8-quart) heavy bottomed non-reactive Dutch oven-type pot. Add the flour and, over medium-high heat, make a darkbrown roux.
  • As soon as the proper color is achieved, add the onions, bell pepper, celery, and garlic.
  • Sauté, stirring occasionally, until tender. During this process, allow the vegetables to stick to the bottom of the pan a bit, then scrape the bottom witha metal spoon or spatula.
  • When the seasoning vegetables are tender add the tomatoes, bay leaves, the black, white, and cayenne peppers, and the salt. Cook for about 10minutes, repeating the stick-and-scrape process with the tomatoes.
  • Add the crab stock and half of the shrimp stock to the pot. Stirring constantly, bring the pot to a boil. Lower the heat a bit, partially cover and simmerfor about 1 hour, stirring occasionally.
  • Adjust salt and pepper to taste and adjust the pepper ifdesired. Add the broken crabs and simmer for about 10 minutes. Add the peeled shrimp, return to a boil, and simmer until the shrimp are firm and pink,about 5 minutes.
