Grilled Sea Bass with Chili-Lime Dressing image

While this recipe for grilled sea bass with an Asian chile-lime dressing is super-fast and easy, it doesn't taste or look super-fast and easy. Your guests will be impressed, and it will be our little secret. I served mine with some caramelized parsnips.

THAI STEAMED SEA BASS WITH LIME AND GARLIC SAUCE

Thai Steamed Sea Bass With Lime and Garlic Sauce image

This simple steamed sea bass is delicious served with the sweet, sour, spicy and savoury sauce!

Provided by Dan Toombs

Categories     Thai Recipes

Time 22m

Number Of Ingredients 9

2 x 700g (1 ½ lb) sea bass
20 kaffir lime leaves
250ml (1 cup) chicken stock
2 tbsp palm sugar
20 cloves garlic - finely chopped
6 red bird's eye chillies (more or less to taste) finely chopped
150ml (about 8 tbsp) freshly squeezed lime juice
6 tbsp Thai fish sauce
3 tbsp coriander - finely chopped

Steps:

  • Make three or four shallow slits on each side of the sea bass. Place the kaffir lime leave in the cavity and place on a steaming tray. If you have a fish steamer as shown, that is the best option but any steamer that will hold the fish is fine.
  • Place the steamer over high heat and steam the fish for about 12 minutes or until cooked through.
  • While the fish is cooking, heat the chicken stock in a sauce pan over medium high heat and bring to a rolling simmer. Add the palm sugar and stir it into the stock until it dissolves. Turn off the heat and then add the chopped garlic. The sharp flavour of the garlic will mellow in the hot stock and become softer.
  • Stir in the chopped chilies followed by the fish sauce and lime juice and coriander and give it a good stir. Set aside
  • Check the fish to see if it is cooked through. When checking sea bass for doneness, the meat should easily come off the bone. If it is sticking, steam it for about another minute or so.
  • Place the cooked fish on a heated platter and spoon some of the solid ingredients of the sauce, like the garlic, chillies and coriander over it. Then pour the remaining sauce over the fish. It is not necessary that the sauce be piping hot. This is more of a salsa than a sauce but I do lime mine to be warm.
  • Serve immediately and enjoy.

12 MINUTE STICKY ASIAN SEA BASS

12 minute Sticky Asian Sea Bass image

12 minute sticky Asian Sea Bass - Soft, flaky sea bass with a sweet and spicy flavour kick.

Provided by Nicky Corbishley

Categories     Dinner

Time 12m

Number Of Ingredients 14

2 tbsp sesame oil
1 red chilli (finely chopped)
4 tbsp honey
2 tbsp dark soy sauce (replace with tamari for gluten free)
1/2 tsp ground ginger
2 cloves of garlic (peeled and minced)
1 tbsp fresh lime juice ((the juice from half a small lime))
4 Sea Bass fillets (- skin on)
1/2 tsp cornflour/cornstarch
2 tbsp light brown sugar
1 Handful of fresh coriander (cilantro) (torn)
1 bunch of spring onions (scallions) (sliced into thin strips)
1 red chilli (sliced thinly)
Slices of lime

Steps:

  • Preheat the oven to 200c/400f
  • Mix the oil, chilli, honey, soy sauce, ginger, garlic and lime in a small bowl.
  • Place the sea bass fillets, skin-side down, on a baking tray. Sprinkle on the cornflour and rub it into the fish gently.
  • Spoon on the honey-soy sauce mix (it will pour off a little, but that's fine). Sprinkle on the sugar and place in the oven to cook for 8 minutes. Half-way through cooking, open the oven and baste the fish with the sauce in the tray (it will be stickier now it's been in the oven).
  • Once the fish is cooked, take out of the oven and baste again with sauce, then sprinkle the top with coriander (cilantro), spring onion (scallion) strips and slices of chilli.
  • Serve with lime slices and some boiled rice or salad.

THAI SEA BASS IN SPICY SAUCE

Thai Sea Bass in Spicy Sauce image

If you're in a mood for Asian flavors, this Thai sea bass may just do the trick. It's a 35-minute job where you grill (we used a grill pan, by the way) the fish, then bake it in a hot aromatic sauce. The latter one is as rich as the Asian cuisine: coconut milk, star anise, ginger, and cinnamon, to name just a few.

Provided by Andrei Gusty

Categories     Asian, Fish & seafood, hot & spicy, Main course, nut-free

Time 35m

Yield 2

Number Of Ingredients 13

1 cinnamon stick, crumbled
1 star anise
1 tablespoon peppercorns
1 red onion, chopped
1 tablespoon ginger, chopped
4 garlic cloves
2 chili peppers, sliced
2 tablespoons lime juice
lime zest
2 tablespoons fish sauce
0.5 cup fresh coriander, chopped
1 cup of coconut milk
12 ounces of sea bass, gutted

Steps:

  • Add the cinnamon, star anise, and peppercorns to a grinding mortar and crush them.
  • Transfer the mixture to the blender. Add the red onion, ginger, garlic cloves, and chili peppers. Blend.
  • Transfer to a bowl and season with lime zest. Add the lime juice, fish sauce, coriander, and coconut milk. Mix.
  • Heat the grill pan over medium-high heat and add the fish. Cook for 4 minutes on both sides, or until grill marks appear.
  • Season with salt and transfer the fish to a baking dish.
  • Pour the spicy sauce on top, then bake for 20 minutes at 350⁰F/175⁰C.
