Grilled Sea Bass with Chili-Lime Dressing image

While this recipe for grilled sea bass with an Asian chile-lime dressing is super-fast and easy, it doesn't taste or look super-fast and easy. Your guests will be impressed, and it will be our little secret. I served mine with some caramelized parsnips.

1 clove garlic, finely minced, or more to taste
1 lime, zested
2 tablespoons seasoned rice vinegar
2 tablespoons Asian fish sauce
2 tablespoons lime juice
1 tablespoon Asian chile pepper sauce (such as sambal oelek)
1 teaspoon Asian (toasted) sesame oil
4 (4 ounce) fillets sea bass
2 teaspoons vegetable oil, or as needed
salt to taste
1 tablespoon coarsely chopped cilantro leaves, or to taste

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Whisk garlic, lime zest, rice vinegar, fish sauce, lime juice, chile pepper sauce, and sesame oil in a glass bowl.
  • Brush both sides of sea bass fillets with vegetable oil and sprinkle lightly with salt.
  • Cook on the preheated grill until fish is opaque, shows good grill marks, and springs back when pressed lightly, 3 to 4 minutes per side. Transfer fillets to a serving platter.
  • Whisk dressing again; taste and and adjust seasoning. Drizzle dressing over warm fish. Sprinkle fillets with cilantro leaves.

This is my favorite fish recipe. The combination of ginger and the cilantro is to die for. Just add some white rice and a rum punch and you'll think you're on a Caribbean vacation! Although the recipe says Sea Bass, you can use any mild flavored fish and have excellent results. I've tried this with grouper, snapper, mahi-mahi and cod. The recipe calls for 4 hours or marinating time, but I often only have about an hour - and it tastes great just the same! The recipe is from La Jolla Cooks, a fundraising cookbook for La Jolla Country Day School

1/3 cup olive oil
1 tablespoon fresh lemon or 1 tablespoon lime juice
1 teaspoon ginger, finely grated
1/2 cup cilantro, coarsely chopped
1 teaspoon lemons or 1 teaspoon lime zest
1 teaspoon salt
1/2 teaspoon pepper
2 lbs sea bass fillets or 2 lbs grouper fillets

Steps:

  • Mix all ingredients together in a shallow non-reactive container.
  • Marinate fish in mixture for 4 hours, spooning some of the mixture over the fish.
  • Grill fillets on the grill or on a hot griddle.
  • Baste with marinade on both sides until fish is cooked. (Don't use marinade on COOKED fish).

2 sea bass fillets
2 tablespoons olive oil
2 tablespoons butter
salt and pepper
1/3 cup flour
1/4 cup butter
1/2 lemon, juice of
3 tablespoons chopped cilantro

Steps:

  • Rinse and dry the fillets. Sprinkle with salt and pepper, then dredge both sides in flour.
  • In a skillet over medium heat, heat the olive oil and butter together. Fry the fillets until golden and cooked through, about 3-4 minutes per side, depending on how thick your fillets are. Remove to a plate and tent with foil to keep warm.
  • In skillet over medium heat, swirl ¼ cup butter to melt. Add lemon juice and swirl to incorporate.
  • Add cilantro. Remove immediately from heat and pour over fish. Serve with lemon wedges (optional).

1 cup coarsely chopped fresh cilantro
1/2 cup whipping cream
1 tablespoon chopped peeled fresh ginger
1 tablespoon chopped seeded jalapeño chili
1/2 cup plain yogurt

Steps:

  • Preheat oven to 350°F. Arrange fish in 13 x 9 x 2-inch glass baking dish; sprinkle with salt and pepper. Puree cilantro, cream, ginger and chili in blender. Add yogurt and just blend in. Season sauce with salt and pepper; spoon over fish.
  • Bake fish until just opaque in center, about 25 minutes.

1 (1-pound) whole sea bass, scaled, gutted, and scored with a sharp knife down to the bone
Salt and freshly ground black pepper
2 or 3 scallions, cut diagonally into rings to yield 1/4 cup
1 tablespoon finely julienned ginger
1/4 cup soy sauce
2 tablespoons peanut oil
Dash sesame oil
Pinch sugar

Steps:

  • Put the fish in a shallow heatproof dish, such as a large baking pan. Season lightly with salt and pepper, inside and out. Disperse the scallions and ginger on top, underneath, and inside the fish. Combine the soy sauce, peanut oil, sesame oil, and sugar in a bowl. Pour the mixture over the fish.
  • Set a roasting rack in a large roasting pan. Fill the pan with water that comes up below the rack. Set the pan over 2 burners and bring the water to a boil. Set the baking dish with the fish on the rack, reduce the heat to a simmer, and cover the roasting pan tightly with foil. Steam the fish until a small knife or skewer can be easily inserted into the thickest part and the fillet comes off the bone fairly easily, 6 to 7 minutes.

2 tablespoons extra virgin olive oil
1 ½ cups thinly sliced white onions
2 tablespoons minced garlic
4 cups seeded, chopped plum tomatoes
1 ½ cups dry white wine
⅔ cup sliced stuffed green olives
¼ cup drained capers
⅛ teaspoon red pepper flakes
4 (6 ounce) fillets sea bass
2 tablespoons butter
¼ cup chopped fresh cilantro

Steps:

  • Heat oil in a large skillet over medium heat. Saute onions until soft. Stir in garlic, and saute about 1 minute. Add tomatoes, and cook until they begin to soften. Stir in wine, olives, capers, and red pepper flakes. Heat to a simmer.
  • Place sea bass into sauce. Cover, and gently simmer for 10 to 12 minutes, or until fish flakes easily with a fork. Transfer fish to a serving plate, and keep warm.
  • Increase the heat, and add butter to sauce. Simmer until the sauce thickens. Stir in cilantro. Serve sauce over fish.

For the Moho Sauce:
4 large cloves of garlic, peeled and thinly sliced lengthwise
1/4 cup thinly slivered onion
1/2 teaspoon ground cumin
Salt and freshly ground black pepper, to taste
3 tablespoons extra-virgin olive oil
6 tablespoons fresh lime juice
1/2 teaspoon white-wine vinegar
2 fillets of Chilean sea bass (about 1 pound each)
4 tablespoons fresh lime juice
5 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper, to taste
2 large cloves of garlic, peeled and pressed
1 ripe avocado, for serving
3/4 cup coarsely chopped fresh cilantro leaves, for serving

Steps:

  • 1. Prepare the Moho Sauce: Mix the garlic and onion in a small bowl with the cumin, salt, and pepper. Place the oil in a small, heavy saucepan over low heat. Add the onion mixture and cook, stirring, for 10 minutes or until translucent. Add the lime juice and vinegar, then simmer over medium-low heat for 5 minutes. (Makes 2/3 cup.)
  • 2. Halve the sea bass fillets crosswise (into 8-ounce pieces).
  • 3. In a shallow bowl, whisk the lime juice with 3 tablespoons of the olive oil, salt, pepper, and garlic. Add the fish and coat well. Marinate for 15 minutes. Remove and pat dry.
  • 4. Preheat the oven to 450°F.
  • 5. With a very sharp knife, score the skin side of the fish twice diagonally to prevent curling.
  • 6. Place the remaining 2 tablespoons of olive oil in a nonstick skillet. Sear the fish, skin-side down, over medium heat, holding the fillets down with a spatula until the skin is crispy and golden brown.
  • 7. Remove fish to an ovenproof dish or skillet and bake in the oven for 8 to 10 minutes, or until cooked through.
  • 8. Meanwhile, set the Moho Sauce over very low heat and gently heat through.
  • 9. Peel and slice the avocado in half lengthwise, remove the pit and slice each half into thin slices lengthwise.
  • 10. To serve, place a fish fillet in the center of each of 4 dinner plates. Spoon 1 to 2 tablespoons of Moho Sauce atop each fillet. Fan 3 or 4 slices of avocado atop each serving and sprinkle with chopped cilantro. Place a bowl of the extra cilantro and a bowl of Moho Sauce on the table.

4 sea bass fillets (4-5 oz. each)

1 red onion, cut in half
1 lime, cut in half
2 oranges, peeled
1 ripe avocado, peeled and cubed
1 cup finely diced jicama
4 tablespoons chopped fresh cilantro
1 tablespoon minced fresh jalapeno chile

Steps:

  • Heat oven to 400 degrees F.
  • Sprinkle fish with teaspoon salt and pepper.
  • Place fish in glass baking dish.
  • Cut one half onion into thin slices.
  • Cut 4 thin slices from half of lime.
  • Arrange lime and onion slices on each fillet.
  • Bake fillets 12 to 15 minutes, or until just cooked.
  • Meanwhile, peel and remove white pith from oranges; cut into segments, then cut each segment in half.
  • Transfer orange pieces to small bowl.
  • Mince remaining onion half and squeeze 1 tablespoon lime juice from remaining lime half; add to orange pieces with avocado, jicama, cilantro, jalapeño, and remaining 1/8 teaspoon salt.
  • You can make this sauce earlier in the day and keep it refrigerated until dinner.
  • Serve with baked fish.
